In-Person client update: “Before I met Maria, I felt lost when it came to food! I had read so many conflicting reports the only foods I felt “safe” eating were fruits and vegetables! Zucchini Blossoms
Ingredients
- Coconut oil for frying
- 4 ounces goat cheese or cream cheese
- 1 teaspoon fresh chopped basil
- 8 zucchini flowers
- 2 eggs whipped
Instructions
- Heat oil in a large deep cast iron pan so it is about 1/2 inch deep to 350 degrees. (I store a large mason jar of coconut oil for frying in my fridge and sift the used oil back into the jar when I am finished frying).
- In a small bowl mix the goat cheese and chopped basil.
- Clean the zucchini blossoms and fill with about 1/2 tablespoon basil goat cheese (or cream cheese). Set aside.
- Separate the eggs and whip the whites until soft peaks form. Slowly add in the yolks.
- Dip the stuffed zucchini blossoms into the whipped egg mixture so it is covered on all sides.
- Carefully place into the hot oil (working in batches if needed). Fry on all sides until golden brown, about 1 minute per side.
- Remove from oil onto a paper towel to drain. Sprinkle with fine grain sea salt.
- Place on a serving platter.

I am not sure if my e-mails are going to your spam….but, I contacted you twice regarding your supplement plan. My question is…how do you determine what supplements I would need if I go with your $99 plan? Do you request blood tests to see where I would be deficient? I am very curious about your supplement plan. I do have jumpy legs. I have been following your site for several months and enjoy your food suggestions and feel very satisfied and have lost my belly bloat and fat and have lost my sugar cravings….yay! I’m sorry but they must have been. I can look at blood tests if you have them but they aren’t required. There is a comprehensive online assessment that you fill out that analyzes all your symptoms. This plus some email questions I use to select the right combination of supplements for your symptoms. Thanks! 🙂
Thanks for you response. Okay, so I am an active healthy person with an ideal weight with my health assesment numbers always on target. I do have jumpy legs and heavy periods, lumpy breasts and probably other things I am not even aware that may be abnormal…lol lol. So, my question is…….do you suggest I get your $25 supplement package for overall health….OR, would it be beneficial to do the $99 package and get an overall assessment of what you think I may need for supplements. I am thinking that it wouldn’t hurt to do overall assessment and if it pinpoints something I am insufficient in, then that would be beneficial? Pleaase advise. Thank you for your time and knowledge.
If you have multiple issues, the health assessment is best. That way I can hand pick the right supplements for your specific conditions. 😉
Maria, we’re getting an electric fryer and I think coconut oil will be too expensive to use, plus has a lower smoke point. Can you recommend another oil we can use?

We get our zucchini flowers from our garden; hubby always plants WAY too many zucchini and yellow squash. He also planted 4 spaghetti squash plants and now they have covered the entire garden, which is at least 25 feet on each side! My family would cook any type of squash blossoms, so maybe the varieties I mentioned here is some sort of help? Its too late for you to plant them this year (unless maybe you live in parts of Texas and other southern states where they have two crops per year). Maybe you could try specialty markets like Whole Foods, Wild Oats, Sprouts, or perhaps farmers markets??
Maria, what is the difference between tallow and lard?
Tallow is from beef. Lard is from pork.
Even if you ask someone at a farmer’s market to pick you some for the next week, I’m sure they would love to do that as if you have zucchini, you probably have too many!
