Keto and CONSTIPATION
A while back, I posted on Facebook about constipation and the dangers of Mirilax. One nurse commented on my post that it kills her when she has to take a patient into the exam room to give them the doctor’s prescription for Mirilax when she knows that nutrition and certain nutrients would help without the detrimental side effects. Man, I would get fired if I were in her shoes… I don’t think I could keep my mouth shut!
Chronic constipation is not only uncomfortable but it is also very unhealthy. Constipation is one of the most frequent gastrointestinal complaints in the US. There are at least 2.5 million doctor visits for constipation in the US each year, and hundreds of millions of dollars are spent for laxatives in just one year![24] If you are someone who thinks that it is OK to not go “number two” every day, think again.
If you don’t eliminate toxins and estrogens daily, they get re-absorbed and locked into cells, causing a toxic body and difficulty in losing weight. Contrary to popular belief, fiber is actually causing more problems with constipation. I know you are reading this and thinking, “What!?” A diet that is low in fiber has been proven not to be the cause of constipation, and the success of a diet high in fiber is modest. There was a study done that proved only 20% of constipated patients benefited from fiber. Further research points out that most patients actually suffer from worse symptoms when increasing their fiber intake. [24] Read more in Keto-Adapted.

Cheese Fondue
Ingredients
- 1 cup organic unsalted butter
- 1 cup organic beef or chicken broth
- 2 oz organic cream cheese
- 1.2 lbs extra sharp cheddar cheese shredded
- 1/2 tsp Redmond Real salt
- DIPPING IDEAS:
- Amazing Bread Pieces
- Protein Bread
- Caramelized organic Cauliflower
- Caramelized organic Brussels Sprouts
- Organic Button Mushrooms lightly sauteed
Instructions
- Place the butter in a large saucepan and heat on high for about 5 minutes. Whisk while heating.
- The butter will start to sizzle and fluff up. Watch for brown flecks (not black!) and remove from heat.
- Slowly add the organic broth, cream cheese and shredded cheese. Add salt to taste.
- Heat lightly just until cheese is pretty much melted.
- Remove from heat and place in a blender to combine until very very smooth.
- Pour into a fondue pot and enjoy!

Traditional Fondue = 353 calories, 24.8g fat, 20.8g protein, 5g carb, 0g fiber
"Healthified" Fondue = 334 calories, 31.7g fat, 12.3g protein, 0.2g carbs, 0g fiber (84% fat, 14.7% protein, 0.3% carbs)

My husband has lost about 18 lbs over past few months and is following your keto adapted diet. He struggled with cravings and now is in control of what he eats (including passing up all the traditional holiday treats with ease). I have also lost a few pounds and feel great. I will definitely be trying this fondue recipe as sounds like a fun and delicious treat for entertaining family or friends!

Beef strips
I haven’t had fondue in years. We use to make a beef fondue that was excellent. A few years ago I had cheese fondue at a restaurant in a swiss area of Wisconsin. I think I would like the cheddar version of Maria’s better than the swiss cheese one they served. Can’t wait to make make Maria’s protein bread to try with her fondue.

I love dipping everything I can find in fondue! Cauliflower, broccoli, other cheese (LOL), meat…
Steak in a hot oil fondue pot, followed by green goddess stuffed mushrooms!
I love dipping salami cubes and lightly steamed broccoli. YUM!
Try salami chips–on a pan with a rack (this can be done in a toaster oven too), spread out slices of salami, pepperoni, or other Italian-type cured meat on the wire rack (whatever the rack will hold). Bake at 350 for 10-12 mins. Remove from oven, and turn each piece over to drain accumulated grease. When cool enough to handle, HANDLE ‘EM, BABY! They’re crisp, crunchy, and perfect for fonduing.

HI maria, I try to keep track of what I eat to keep my fat ratio up for ketosis, but I make almost everything from scratch. And It is incredibly tedious to enter in 20 ingredients for each meal, so I usually end up giving up. Do you have any helpful suggestions on how to make sure you are getting the right fat ration? I find if I don’t keep track I still eat high fat low protein and carbs I do not lose weight because I am eating to many calories.

In the old days, strawberries, pineapple and bananas in chocolate. Would like to try cheesecake bites and balls of peanut butter. Definitely bread in cheese fondue before. Would like to try mini meatballs and steamed cauliflower and broccoli.

Regarding another adventure with Amazing Maria bread: I made a batch of the coconut flour version, measured 2 ice cream scoopers (level), rolled the measured dough into balls, and ran them through my tortilla press in hopes of making pitas. 2 scoops rolled together = 1 dough ball. I baked them at 400 (standard oven) for 30 minutes. ! pan baked for 40 mins. didn’t produce anything but darker circles–no height.
Well, I didn’t get pitas (they didn’t rise in the middle like sandwich buns do), but I got ideas for new uses: hotdog/bratwurst wraps, hotdog/brat crescents (after cutting pressed dough into triangles), and making empanadas out of pressed dough circles filled and folded in half. Then there’s the predictable mini-pizza crusts.
Just when I was giving up hope on ever getting this coconut flour version to ever be anything useful to me except as buns and rolls…
Have I told I love you lately, Maria? 🙂 I’m off to try the almond flour version and pitas–maybe they’ll rise.
Okay–just tried the almond flour versi0n, and that didn’t rise either. Before I made the dough, however, I made 4 hamburger patties, and on a whim, put a patty on a dough circle, covered it with another dough circle, crimped the edges, and got HOMEMADE HOT POCKETS! Yeah, they’re round instead of rectangular, but who cares? Cut one in half, and you’ve got a hand-held meat pie you can dip in the fondue above.
Next, I’m going to try wrapping bratwurst links in dough circles and dough triangles (like crescent roll dough) to make non-pancake pigs-in-blankets that can also be used for fondue dipping, game day snacks, etc.
P.S.–If you ever follow my lead and make your own hotdog/brat crescents, you could dip THESE into the fondue!
Who doesn’t love to dip things. I’d dip my cheese in my cheese fondue and chocolate in my chocolate fondue. No rules. Love it. What a nice set for entertaining the Maria way.
Since I’ve never had fondue I can’t comment on what my favorite thing would be to dip but reading others I’m thinking roasted veggies? I’ve always thought the idea of fondue was cool but we don’t have any places around here that have it and I’ve not wanted to purchase equipment for something I’m not sure I’d love (even though I love kitchen gadgets)! If it was something I won and loved I can tell you that I would so want to try the New Years Eve tradition! Love the thought of that!

craig or Maria I see you now have 30 day keto weight loss pkg and I was Intrested in the 30 day accelerated before. What is the best pkg. what will I not get in the keto pkg verses the accelerated. I’m not sure what pkg is best for me. I have all but 3 of your book I believe. And I have taken metabolism class. I can only do one pkg. I need to mKe sure I make a wise choice for my dollar. We have a long-standing family tradition of chocolate fondue every time we feel like celebrating the little things in life. In the past we made a super simple chocolate fondue by just melting almond bark and loved dipping bananas, apples, berries, pineapple, etc. Can’t wait to try this cheese fondue with some healthified bread and veggies

Pretty much my fingers! LOL! I know, burn ward worthy and not very sanitary! I guess Im a big kid at heart! Outside that, I like zucchini sticks (lowcarb crusted and seasoned), Sweet Onion (raw or baked) and Cabbage chips (heartier than kale) or brussel sprout chips as they have the perfect scoop!
