Cadbury Creme Eggs


Lately I have been seeing a lot of advertisements for metabolic testing. The price ranges from $80-$200 on average. This test determines your oxidation rate of calories. On a specific website, it states: “It determines if there is an increased or decreased metabolism, and if your body primarily uses fats or carbohydrates for energy. This information can be used to determine the amount of calories you need to eat each day to maintain or lose weight. The results may also indicate that you have a medical condition affecting your metabolism. Diabetes, under or over active thyroid, COPD, heart disease, mitochondrial disorders, and obesity are some common conditions that may alter your metabolism.” 

True, all of those disorders can change how you oxidize calories, BUT with a ketogenic diet and in some cases supplements (such as CoQ10 to increase mitochondria) you can burn FAT at a faster rate. The test outcomes also change daily depending on a variety of things going on in your body. If you ate or worked out within a few hours of taking the test, the measurement will be off. As I discussed this with someone at the gym, and how this number changes daily and with our menstrual cycle, she told me her story about Metabolic Testing:

“Before I met Maria, I used to work out all the time like crazy. I prided myself of being in great shape. I had an instructor at the gym talk me into doing the metabolic assessment to help me know where I’m at with my health fitness and what to incorporate from there. I took the test with outstanding results. She and I were shocked and overly pleased with how awesome my results were. But to my dismay, as I was chatting with Maria, and letting her know what I had done, she explained to me that the testing shows different results at different times of the month for women.

I had been menstruating at the time and therefore, my results were much different than they would have been a week later. I did end up taking the metabolic testing again later, and sure enough my results came out differently. The point I want to make is that I felt as though the testing didn’t do much for me. I already had knowledge of how and when to work out and I started questioning the results and whether or not they really were important. But also, I was beginning to see that the results would probably be different each time I did it, therefore, not accurate.

NOTE: If you want a cute yellow yolk center around the white. I added a little bit of my lemon curd filling (click HERE to find). Or use natural yellow food coloring (click HERE to find) to 1/4 of the filling and use in the very center of the white filling when making the eggs.

Cadbury Creme Eggs

Servings 12


  • 2 oz cocoa butter
  • 1/3 cup Natural Sweetener
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/8 tsp Redmond Real salt
  • Add 1/4 oz unsweetened baking chocolate
  • Add 1/2 to 1 oz unsweetened baking chocolate depending on how dark you like it
  • 1/2 cup Natural Sweetener or erythritol and 1 tsp stevia glycerite
  • 1/4 cup coconut milk
  • 2 large eggs
  • 4 TBS butter or coconut oil
  • 1 tsp vanilla extract


  • Place cocoa butter in a double boiler and heat on medium high until fully melted (or <g class="gr_ gr_145 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling ins-del multiReplace" id="145" data-gr-id="145">microwave safe</g> bowl and heat on high for one minute, check and heat for 30 seconds until melted). Melting cocoa butter takes longer than traditional fats.
  • Stir in natural sweetener.
  • Stir in extracts and salt (and baking chocolate if making milk or dark chocolate).
  • Place into truffle mold and cool in <g class="gr_ gr_150 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins replaceWithoutSep" id="150" data-gr-id="150">refrigerator</g> until white chocolate is solid, about an hour. Or the speedy method; you can place the molds in a freezer <g class="gr_ gr_151 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar multiReplace" id="151" data-gr-id="151">till</g> they are set up, which will only take a couple of minutes versus <g class="gr_ gr_140 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling ins-del" id="140" data-gr-id="140">and</g> hour.
  • FILLING: Combine natural sweetener, coconut milk <g class="gr_ gr_171 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-ins replaceWithoutSep" id="171" data-gr-id="171">and</g> 2 eggs in heavy medium saucepan and whisk to blend; add coconut oil or butter. Whisk constantly over medium heat until mixture thickens and coats back of <g class="gr_ gr_168 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins doubleReplace replaceWithoutSep" id="168" data-gr-id="168">spoon</g> thickly (do not boil), about 12 minutes. Pour mixture through <g class="gr_ gr_169 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins doubleReplace replaceWithoutSep" id="169" data-gr-id="169">strainer</g> into medium bowl. Stir in the extract. Place bowl in larger bowl filled with ice water and whisk occasionally until filling is cooled <g class="gr_ gr_170 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-del replaceWithoutSep" id="170" data-gr-id="170">completely,</g> about 15 minutes. Can be made 1 day ahead.
  • TO MAKE TRUFFLE: Remove the mold from the fridge or freezer and fill with filling.
  • Then top off the filling with a layer of the cocoa butter mix so that the filling is inside and surrounded by the "white chocolate". Place back into fridge/freezer to set.


Traditional Truffle = 150 calories, 10g fat, 2g protein, 24g carbs
"Healthified" Truffle = 102 calories, 10.6g fat, 1.2g protein, 0.4g carb
(90% fat, 8% protein, 2% carbs)

    Maria, do you think this could be done with just using stevia glyceite? I recently found I have a strange reaction to erythrotol. Gives me head aches and body ache, I stopped using swerve and it all went away.

    Is there a taste difference between Swerve and Erythritol? Or maybe a price difference or a difference in the way they “cook”? I was just hoping to find the most economical and taste “friendly” without all of the trial and error. Thanks!

      Swerve combines 2 sweeteners so it is a bit more balanced flavor than just erythritol. But erythritol is a good option too (especially if you mix with a little stevia glycerite). 🙂

    I’m definitely making these for Easter! I used to eat a lot of artificial sweeteners, but a month ago I quit cold turkey and now sweeten everything (my water and tea) with Stevia Glycerite. And now I actually PREFER the stevia. But I do eat/drink a lot of it, probably a TBSP or maybe 2 every day. Is this okay, Maria?

    I”d like to make these, but I’m confused. Sorry. Do you fill the mold with the white chocolate or just put a layer of the white chocolate in the mold and then fill with the filling? Does the unsweetened baking chocolate get added to the white chocolate mixture? Is it then just drizzled on the eggs, or does it cover the eggs, or??

    Maria today is the 7th day since I started trying to eat as close as possible to your way. I am reading your books an all the comments on the blog and the forum. Thank you for all you have done. While I am not feeling perfect I am better I just have had one thing to pop up a fever blister and that thing has literally made me sick. I guess Atkins Flu. This week I have made oppsy bread and popovers so good. This is off topic I just wanted to let you know that someone in south, south Mississippi is following you. You have done a great thing for people. I have lost 9lbs in 7days. Woo Hoo!!!

    Hey, Maria! Here’s a tip for Anne, about the cookbook. I took all of them to Office Depot and had them put a spiral binding on them. It worked great! Now they lay flat and everything! : ) And, they added a black plastic piece to the back and a clear one on the front. Love it!

    I just happened to see a post on Facebook about these cadbury creme eggs (one of my Fav candies)… so naturally I clicked on the link and it brought me here. I have browsed your blog/site and read the excerpt on Amazon from your Keto-Adapted book. I really want to change our life style! We have been trying to eat “healthy” as our budget (and small town with not a lot of organic options) allow… but we definitely aren’t doing it right. Here are my questions… my 3 yr old daughter is allergic to eggs and peanuts (severely). We are waiting for results on allergies to other nuts. I am not sure how to adjust when we have those restrictions? (My husband and I DO eat eggs… but we keep ALL nuts out of our home for safety reasons). We also have a 1 yr old and another on the way (just found out). Is it realistic for us to try to make these changes for our family? I truly want to do what’s best but not sure if/how to start!

    Just curious- what are your thoughts on doing a Fat Fast? I have a friend’s wedding in a week and am (of course) trying to look my best. : ) But, having a past of eating too few calories for extended periods of time, the 1000 cals/day makes me a little hesitant.

    Any help you could provide would be greatly appreciated. Have a great day!

      I eat 80% fat, 15% protein and 5% carbs all the time. It has wonderful short term and long term health benefits. 🙂

    The breakdown of your diet is a real help. I’m a true believer of a sugar/grain free lifestyle. It has helped me tremendously. Honestly, the candy eggs don’t eggsite me. I’d rather have savory eggs. Never thought I’d say

    Hi Maria, I tried to make the white chocolate bunnies 2 times and both times the melted chocolate curdled into oil and like a thicker curd. I used regular pure vanilla extract. What went wrong?

    Is the link for the cocoa butter the one you actually use when making this recipe? The reviews on Amazon say scary things like shards of glass being found in the product. I’m scared to order it!

    I’ve been looking for natural food dyes, but read a review on amazon (more than one actually) that said the india tree “blue” is useless and black, and that they can’t produce a green by mixing with the blue.

    have you had this problem? I can’t seem to find any alternative brands of natural food colorings ):

    Also, I have some “cake pop” molds like the ones in your store – how did you “fill” your eggs? Do you just put a thin layer of the chocolate coating into the mold first, then pour in a little filling? mine have two molds, one top, one bottom, so the only way I can think of to create a “center” would be to thinly coat each, put some filling on top, and stick them together…? It doesn’t make a lot of sense in my head

    I think it would be great (and fast and easy considering the steps!) to make a truffle video for you vimeo since candymaking is something a lot of people have never done 🙂

    Has anyone successfully made these? You have to get the liquid so hot to melt the sweetener that it’s melts your plastic moulds then turns to a sugary rock rather than a creamy chocolate!
