EXCITING!!! I have stuck with my walking regiment. It is a great commitment to myself and my health, and i’m so grateful for the push to do it. I still have another 35 lbs or so to lose, but I’m so happy that i no longer feel “lost” or frustrated. I attempted to go back on dairy again, by adding in some cheese and sour cream one week, and I’ve determined that it’s just not in the cards for the time being. I experienced rapid weight gain and had some bad digestive issues.

What’s In My Fridge

I love listening to podcasts on my long bike rides. One of my favorite is the Splendid Table on National Public Radio. In one segment, the host, Lynn, does “Stump the Cook” where a listener calls in and lists 5 ingredients that they actually have in their fridge. Then Lynn has to create something the listener would actually eat. If I called in, I would list these 5 things that are ALWAYS in my fridge:

1. Raw Beef heart (that is what my dog Ohana eats)… no photo needed… kind of gross looking!
2. 11 dozen eggs (a dozen hard boiled)
3. Organic Butter, Leaf Lard, Beef Tallow and Duck Fat
4. Protein Bread
5. Supplements: Probiotics

6. Herbs and vanilla beans

I’m not sure if I would enjoy anything made with these all mixed together!

On a side note, did you know that a healthy body has 2 POUNDS of good gut bacteria in the large intestine where the typical American has none! In the Splendid Table, Lynn also interviews famous chef’s and asks them what their top 3 recipes are that everyone should know. These are usually easy, no-fail recipes that any home cook should be able to do. If she would interview me, my Lemony Braised Chicken would certainly be on the list. This is an awesome no-fail recipe that everyone needs in their cooking repertoire. A great thing about this recipe (besides the taste) is that you can half, double or triple all of the ingredients based on your number of dinner guests. This dish is very forgiving, feel free to adjust the ingredients to your liking. I made it with fresh basil instead of parsley the second time around and it was amazing too.

EASY Lemon Chicken

Ingredients
  

  • 4 TBS coconut oil divided
  • 1 cup onion minced
  • 3 garlic cloves peeled
  • 4 chicken legs drumsticks and thighs separated (about 2 pounds)
  • 1-2 tsp Redmond Real salt
  • 1/2 cup flat-leaf parsley plus more for garnish
  • 1/3 cup capers drained
  • 2 cups organic chicken broth
  • 1/3 cups coconut or white wine vinegar *see below
  • 1 lemon cut into thin strips
  • Freshly ground black pepper

Instructions
 

  • Heat 2 TBS oil in a large heavy skillet over medium heat. Add onion and garlic; cook, stirring often, until softened, about 8 minutes. Transfer onion to a bowl; wipe skillet clean.
  • Add 2 TBS oil to skillet and increase heat to medium-high. Season chicken with salt. Add chicken to skillet and cook, turning once, until golden brown on both sides, 10–12 minutes. Transfer chicken to a plate.
  • Add reserved onion, 1/2 cup parsley, and capers to skillet; cook for 1 minute. Stir in broth and vinegar. Add chicken with any juices and the lemon slices. Reduce heat to medium-low; cover and simmer until meat is tender and falling off the bone, about 1 1/4 hours.
  • Transfer chicken to a large platter. Season sauce in skillet with salt and pepper. Spoon over chicken; garnish with parsley. Makes 8 servings.

    I hope some of that hard-boiled egg and cod liver oil is being combined with the raw b4eef heart so your DOG can have a healthy mind and body! If not, here’s how to start: 1 beef heart (raw), 2 HB eggs, and 1t. cod liver oil–mix all this in a food processor until a red mush, then feed about 1-2 cups (depending on dog size) daily. This can be nuked to heat up.

    A trick I learned from a TV cooking show: put the lemon slices or wedges UNDER THE SKIN as opposed to on top of the chicken–you get more lemon flavor that way.

    Maria, I just ordered your book ” Secrets To A Healthy Metabolism” I am going through it and agree with

    your information. Being a Nurse for a Gastroenterologist I see first hand the signs and symptoms you describe. My question is which one of your books would you recommend for me next? I do need to lose
    some weight, I just don”t want to end up like my patients feeling lousy and popping tons of pills. Any advise would be greatly appreciated Thank you

    Does the gut vitamin need to be taken on an empty stomach? I take the hemogenics pill metagenics makes and my Dr couldn’t believe how much my iron levels have improved!

    Hey Maria, I made your Cinnabon cake and took it to work with me at Toyota Canada. I’m in finance and everyone in the dept went wild for it. They couldn’t believe it was made with coconut flour and xylitol. Your blog and books make it so easy to eat healthy without being deprived. I tell everyone I can. I have changed. They had a retirement lunch function and I turned down the cake very easily, did the same when offered whoopie pies yesterday. I tell everyone now I’m sugar and grain free and in most cases they want to know more about it. I then give them your website information!

      I think it is OK in moderation. I have yet to get a breakdown of that the types of sweetener are in it (fructose, fructooligosaccharides, etc) so am a little reluctant to use it more as a sweetener. I would want to know how much of the carbs are Oligosaccharides (good) vs. fructose (bad). I do know the glycemic index is less than 1. The way I use it is in recipes where you need that brown sugar or molasses type flavor and texture (BBQ sauce, ginger snap cookies, etc). But I don’t use much (For example: 1 tsp for an entire quart of BBQ sauce plus some Swerve).

    Hey Maria, I just began eating wheat free again and cutting my carbs way back and I noticed when I sweat a lot, like after a workout or working outside, my sweat smells like ammonia. Is that normal? I read that if you have a protein loaded diet you will smell like ammonia. Help!

    Hi Maria, We are well into your book and learning. I picked up some magnesium (I have never ever slept through the night…wake up several times). 3 nights and helping already, thanks! I did a round of HCG before I found your site looking for P3 recipes. I don’t know if you know anything about the diet but it has been the only thing to help me lose after taking prednisone. I took off 18 lbs and plan to follow your way of eating for life. I have a question though, I’m 44 and not menopausal. I have been getting hot flashes since incorporating more of the healthy fats. I’m just wondering if that could be a thermogenic affect of food. They come and go 2-3 hours apart. Thanks!!

      Hmm, haven’t heard that with this diet. If you are early in the higher fat stage, you may still be adapting to become a fat burner. That takes 2-4 weeks. After that, things should improve. 🙂

    Well it sounds scary but it’s not. You take injections of HCG (the hormone that breaks down fat to feed to a fetus during pregnancy when you are too sick to eat) and go on a 500 calorie a day diet. You are never hungry because your body burns 4000 or so cals in fat a day. I lost 18 pounds in less than 30 days. After that you go on ‘P3″ – no sugar or starch. When I was searching for P3 recipes I found your site. I have always done low carb for years but admit I would cheat on the weekends. After finding you my hubby and I have made the commitment to be grain and sugar free. The HCG resets the fat bank or hypothalamus…so maybe that is what’s giving the brief warming periods. But I’m into the 3rd week of P3 and my weight has held. It’s supposed to go no more than 2lbs up or down during this phase. I’m really excited to eat this way forever and we are working on getting all the supplements. Thanks so so much!!! We are paying off vacation in Oct but when we are back I will be purchasing a plan. 🙂
