My son was very picky when we first adopted him and he didn’t like eggs. Craig lost his job so we didn’t have a lot of money to spend on food. What is the cheapest keto food? Eggs! I had to find a way to sneak eggs into his meals! So I invented a Hard Boiled Egg pudding but it was so weird, I kept it a secret for years!
Most people look at my Hard Boiled Egg recipes and say, “no no no” at first but once they see everyone trying it on Facebook and Instagram, they give it a try and are hooked! Even Halle Berry loves my hard boiled egg pudding!

TIP OF THE DAY: I often hear that people do not like the sulphur smell of the eggs when they make my hard boiled pudding. You can use scrambled eggs instead of hard boiled eggs and the peanut butter pudding will be just as delicious! However, you will need less coconut milk since the scrambled eggs won’t be as much of a thickener for the pudding.

Peanut Butter Hard Boiled Egg Pudding
Equipment
Ingredients
- 5 large hard boiled eggs peeled (or scrambled eggs)
- 1 cup coconut milk or heavy cream if not dairy free (only 1/2 cup if using scrambled eggs)
- 2 tablespoons Natural Sweetener or equivalent amount of liquid or powdered sweetener
- 3 scoops Primal Kitchen Peanut Butter Collagen use code MARIA for 20% off
- 1 teaspoons vanilla extract

OPTIONAL GARNISH:

Instructions
- Place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking.
- Place in the fridge in an airtight container for up to 4 days. Garnish with sugar free chocolate shavings if desired.

I tried your other egg-puddings, and I’m sure this one would result in a success, but unfortunately where I live the Primal Kitchen Collagen you ask for in the recipe (as other products of that brand) isn’t avable (I found it only from a US retailer but with huge shipping costs and also the surprise of duties not included so other costs to add after the purchase): could you please be that kind to suggest an alternative for me and those in my situation? I totally understand your willing to promote a good company, and also get some legit earning for affiliation, but being such an international reference for many people I think you’ll be happy to contribute to everyone’s needs and helping the most to enjoy your healthy recipes without the frustration of haven’t access to all the brands you recommend. I have almost of your books and I often make small changes to adapt the recipes to what I can have on hand here, but in cases like this I feel a bit “limited” by the fact that there’s a strong link to something influenced by advertizing that reflects on the request of a specific ingredient. I love the egg pudding recipe, I love chocolate so I add a bit more cacao powder and a touch of caramel extract. I also add a scoop of collagen for extra goodness. The PB collagen is not available in the UK, can you recommend a replacement? Thank you.
You can try some peanut flour or grind peanuts into a flour. Or even a bit of peanut butter with no sugar should work. 🙂

Why did I not think of this myself!! I love peanuts only second to chocolate so this should have been my first experiment! In Finland we don’t get that many good keto products but I will try grounding my own peanuts for this. The egg pudding is to die for so with peanuts gonna be heaven. Thank you again Maria!

In comparing this to the chocolate pudding recipe, I see that this calls for half as many eggs and half as much coconut milk, yet it still bites that it makes 5 1/2 cup servings. Is that right??
That is they way I designed this version, yes. You can eat double servings if you want and just double the nutritional info. This is a more weight loss sized serving. 🙂
A content regarding the egg smell–My first batch was made with boiled eggs that had been refrigerated a couple of days. I didn’t notice the egg smell at all. This time, though, I used eggs straight from the ice bath after boiling. Ugh! Strong egg smell! So maybe try that if the smell bothers you.

I love the chocolate egg white pudding recipe in the Art of Weight Loss cook book. Can the egg white pudding recipe, used on protein sparing days, swap out the cocoa with this peanut butter collagen? Also using Almond milk instead of coconut milk?
That should work. Just adjust almond milk down a bit to keep it thicker like the recipe in that book. 🙂

Also what is PMSF stand for? Also I was wondering how much you’re least expensive package is for learning to heal your body with food? As I have said before I don’t have much in the way $$. But I would like to know the best possible way I can do keto diet with out a lot of saturated fat, good fat, while keeping my cholesterol in check? If that is at all possible, i think that it could be done on Fat loss PMSF plan, macros thing you have for ppl to calculate on your website?

Dang Maria that PBHB egg pudding was good. I couldn’t eat much of it though because it was so filling. I did add some psyllium husk and a gar powder to it to thicken it, but I’m going to wait till tomorrow and see if it tastes even better!🤤😋 Also thank you Maria you are too kind 😘

The recipe states ‘3 scoops of pb collagen’. How much pb flour would be the equivalent?
Sorry, not sure. The scoops are about 2 tablespoons each I believe.
How much peanut butter (in grams) would equal the brand-name ingredient? I use the 100% peanut variety.
