I adore a great chili recipe and so do my little boys. But I have to admit, I am not a fan of chicken but Spicy Lime Chicken Chorizo Chilithis recipe makes such a tasty and tender chicken soup I couldn’t help but fall in love with it.

As I wrote the recipe I thought I should contact LaCroix (which we enjoy all the time) to see if they would be willing to donate a few cases to a winner on my blog and they graciously replied right away!

Spicy Lime Chicken Chorizo Chili

Ingredients
  

  • 1 tablespoon coconut oil
  • 2 lbs smoked chorizo sausage sliced
  • 2 chicken boneless skinless chicken thighs cut into ½ inch pieces
  • 1 cup chopped onion
  • 1 28 oz can whole peeled tomatoes, undrained
  • 3 chipotle chiles in adobo sauce
  • 3 tablespoons minced garlic
  • 2 tablespoons smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano leaves
  • 2 teaspoons Redmond Real salt
  • 1 teaspoon cayenne pepper
  • 2 cups chicken stock boxed will work, homemade preferred
  • 1 can 12 oz can Lacroix lime carbonated beverage
  • 1 oz unsweetened baking chocolate chopped
  • ¼ cup fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions
 

  • Heat a large soup pot over medium high heat. Add the oil, chorizo, diced chicken and onions. Cook until onions are soft and chicken is cooked through, about 5 minutes.
  • Meanwhile, place the tomatoes with juice and chilis in a food processor. Combine until smooth. Set aside.
  • Add garlic, paprika, cumin, oregano, salt and cayenne to the soup pot and saute for another minute while stirring.
  • Add in the tomato puree, broth, Lacroix, chopped chocolate. Heat until a soft boil then reduce heat to low and cook for 1 hour for flavors to open up. Just before serving, stir in lime juice and cilantro.

    Wow, never thought of using La Croix in a recipe. Its my favorite thing to drink, especially helps when you want the soda feeling. I would love to have a casserole type cookbook, things you can take to gatherings to make sure you have something to eat!

      You can sub hydrolyzed collagen powder for the protein powder–saw that over at the Bulletproof site. Dave Asprey made a Bulletproof version of Maria’s high-protein bread using his protein powder, and some commenters said they use the collagen powder as a replacement because they cannot do dairy. Neither can I, and I was glad for this tip.

    Quick meals would be great, especially some with items most people tend to have in their cupboards. Some low carb recipes call for so many random ingredients that I’ll never have. I tend to just kinda skip over those. Love your stuff and love La Croix water!

      Me too, but this is kinda hard for Maria to pull off with a family of four to feed. Maybe meals for four, but an option for halving? I get tired having to invent ways of using up leftovers.

    Oh wow! This looks amazing. I am ashamed to say I have never considered using LaCroix in recipes like this! I usually mix the passionfruit with lemon juice and liquid stevia and it tastes just like a Fresca to me! This idea is wonderful and opens up an entirely new world for me in the kitchen! Yay!

    one that concentrates on most allergies, so AIP compliant and low carb ( no dairy, nuts, eggs, sugar, night shades etc.) Most AIP recipes have high carb food like sweet potatoes so I find it very difficult to try this approach to treat gut issues.

      And also things that KIDS THEMSELVES can cook–how are we gonna keep them eating keto if they don’t know how to cook for themselves as they grow older? Isn’t that what got us into this fast food mess to begin with…because nobody wants to or knows how to cook for themselves?

      Your next book should be full of recipes the boys made themselves–t show other kids it can be done, and this is how. There aren’t nearly enough books for the kids and/or BY the kids on how to cook to stay in this particular eating style.

    Hi Maria. I still have trouble with enough time in the day. A cookbook of very simple ideas and recipes would make my life so much easier. On a hard day, not having anything planed, open your book and can whip up something in minutes. That would be awesome 🙂

    a quickie recipe cookbook, since I still have to cook the regular way for my husband and it is hard for me to make all the meals the way maria does. I need quickie meals for me and to know which meals are still keto.

    My sweet tooth screams “more desserts!” What about something themed on more “normal” ingredients. I’m an hour away from the health food store, so staying stocked or finding some ingredients is often difficult.

    What about a book of Campfire/Dutch oven/Backpacking cooking? Those are hard to find and most campfire/dutchoven/backpacking recipes are really high-carb, hard for those of us who don’t eat that way to come up with alternatives.

    I love your recipes Maria and would love to win this sweepstakes. How about a cookbook dedicated to “grab and go” recipes? One of the most challenging thing I find about keto is with a busy and active life, it’s tempting to settle for packaged “low carb” foods because it’s quick. Those bars are usually riddled with artificial sweeteners and shelf stabilizers so they aren’t keto/clean. It’s hard to find recipes that I can create on the weekend and then have handy throughout the week to eat on the run.

    A slow cooker and one skillet meal that helps when you come in exhausted and end up fixing something really easy that is not totally keto,recipe book . More of easy things that are a meal without falling out of keto.

    Being from Kansas City, I LOVE BBQ! But those sweet smokey sauces we love are full of sugar, and therefore a no no. 🙁
    Or Keto Thai food would be wonderful! Traditionally also lots of sugar

    I read thru the comments and see no one has asked this question or indicated that they have made this chili. I am questioning the amounts of the minced garlic, smoked paprika, ground cumin and dried oregano leaves. They all say TABLESPOONS. Should it be tablespoons or teaspoons? I have this on the stove right now and I am suppose to be adding the spices but I am hesitant.

      Tablespoons. But if you like a milder chili start with teaspoons and add more to taste.

    I just made this and it’s going to be my new favorite food. Absolutely delicious, a Ned I forgot the oregano and made about half the amount. Served over cauliflower rice, top with shredded cheddar, a spoon of lactose free sour cream. Man is it good! Just dropped to 48 degrees outside and this is the perfect fall dinner. Delicious!
