Pumpkin Pancakes
Craig absolutely loved these and he isn’t one for pancakes. They are a thinner pancake, but the flavor is outstanding.
Pumpkin Pancakes
Ingredients
- 1/4 cup cottage cheese or ricotta
- 2 large eggs
- 1/4 cup pumpkin puree
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 cup vanilla egg white protein
Instructions
- Preheat skillet. Beat eggs with electric mixer on high for 1 minute to make them light and fluffy.
- In a food processor, blend the cottage cheese until very smooth, then add to the eggs. Add all the other ingredients.
- Pour batter onto skillet, fry until golden brown.
- OPTIONAL: Serve with “Healthified” Pecan Butter (recipe can be found in my cookbook: The Art of Healthy Eating: Kids).

RICE CEREAL AND ACID REFLUX
Sadly, parents often think that rice cereal is the first food to introduce to a baby. Dr. David Ludwig of Children’s Hospital Boston, a specialist in pediatric nutrition, says some studies suggest rice and other highly processed grain cereals actually could be among the worst foods for infants. Babies don’t even produce the enzyme amylase, which is the essential enzyme for breaking down starch. The baby’s small intestine basically only produces one enzyme for starch, lactase; which is for the digestion of lactose. Feeding grains too early will cause food allergies later on in life because the protein in the grains sits in the stomach too long. This will cause the baby to have acid reflux.

There are also some vitamins and minerals sprinkled in that babies could easily get in other ways. SO, parents desperately go to the doctor for help; most likely putting the baby on acid blockers. This is the WORST thing to do because the stomach is a very acid environment with a pH at 2 or less. Stomach acid also helps breakdown protein. When you don’t have stomach acid to breakdown food, undigested proteins sit like a rock in the intestines. There has recently been a 16X increase in the use of acid reflux medicine in infants. Even though a study showed that there was no difference in infants from a placebo! When families eliminate common allergens such as dairy, soy, and wheat from the baby’s and breastfeeding mother’s diet, by day 3 or 4 the infants no longer suffer from acid reflux. This means a total elimination! Not just the 80/20 rule. It takes a lot of commitment from the family, but it is well worth the effort.

Yes! Tofu would probably work but it might make them a little watery…

Hi these look great, can’t wait to try them. Is aluminum free baking powder absolutely necessary and if so is it easy to find? I live in a rural area and sometimes it is difficult to get some of the ingredients.
It is important to not have the aluminum and it is typically easy to find at the grocery store. 🙂
Can you make these without an electric mixer? I swear I need lots of ingredients and lots of tools to cook like you lol but so good at worth it though 🙂

The best option would be to take a can of coconut milk and put in fridge. It will separate and you can use the cream off the top. 🙂

I have made these twice, and they are great; however, I have needed to add atleast 1/2 c. of unsweetened almond milk to thin it out enough. I”m using the coconut flour instaed of the protein powder. Would that make it thicker? Maybe I’m beating the eggs too long?? Ideas?
Yes, coconut flour sucks up a lot of moisture so you would have to add more moisture to make it work out. Thanks. 🙂

Maria, Mine fell apart. I followed the recipe and when I tried to flip they broke up , I tried recipe with cottage cheese and ricotta and whey protein powder and coconut flour.
Sounds like maybe the batter was too runny? Try less liquid or more flour next time. 🙂

I have a 4 1/2 month old big baby boy, he is already 16 lbs and ready for some food. I am also nursing him. I didn’t want to start with rice cereal from what all I have learned from you, but what are your thoughts on Earth’s Best Organic Whole Grain Oatmeal Cereal? Do I need to skip the grains all together? He loves carrots and green beans so far and Im slowly adding other veggies as well. I just bought all the ingredients so I can get on board and so far I have made 2 of your recipes and I loved both of them, Im already feeling better since cutting out breads, potatoes, rice and pasta. I don’t think there is any nutritional need for grains. I start solid food with egg yolks, avocado, etc. A baby needs fats to fuel their brain development. I talk about this in detail in my Kids cookbook. 😉

This looks amazing! Do you have any suggestions for someone who doesn’t digest dairy well (not lactose intolerance, but similar – triggers IBS symptoms) – suggestions to help reverse the intolerance or substitutions for this recipe?

Hi Maria! I have watched a lot of lectures and interviews on YouTube of Dr. Lustig and have loved them! His endocrinology background gives him awesome insight into nutrition. Do you know of any print sources (books, research articles, etc.) he has published? I love to root around in the actual research underlying these nutritional principles…it’s fascinating to me.
Also, I have been curious as to your background in nutrition. Did you go to school for it? You are obviously educated whether it was through an institution or not 🙂
