To make this dairy free (which helps with weight loss for many of my clients), make sure to use Jay Robb’s egg white protein powder and instead of stirring in cream cheese add in the reserved yolks.

Ingredients
  • PROTEIN BREAD:
  • 12 eggs, separated
  • 1 cup Jay Robb unflavored egg white (or whey protein)
  • 4 oz cream cheese, softened (OR reserved yolks)
  • FRENCH TOAST:
  • 2 eggs
  • ½ cup unsweetened almond milk (or coconut milk)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • SYRUP:
  • ½ cup butter (or coconut oil)
  • ½ cup Swerve Confectioners
  • ½ cup unsweetened almond milk
Instructions
  1. TO MAKE BREAD:
  2. Preheat the oven to 325 degrees F.
  3. Separate the eggs (save the yolks), and whip the whites for a few minutes until VERY stiff (I use a stand mixer on high for a over 8 minutes).
  4. Gently mix the protein powder into the whites. Then slowly fold the softened cream cheese (or reserved egg yolks) into the whites (making sure the whites don’t fall).
  5. Grease two bread pans with coconut oil spray and place the “dough” in the pans.
  6. Bake for 40-45 minutes or until golden brown.
  7. Let completely cool before cutting or the bread will fall.
  8. Cut into 18 slices.
  9. I keep this bread in the freezer at all times to make sandwiches.
  10. TO MAKE FRENCH TOAST:
  11. Grease a cast iron skillet with coconut oil and heat to medium high.
  12. In a medium bowl, combine 2 eggs, unsweetened almond milk, vanilla and cinnamon.
  13. Dip the slices of protein bread into the egg mixture.
  14. Place the drenched protein bread onto the hot skillet.
  15. Grill until golden brown on both sides.
  16. Remove from skillet and repeat with remaining bread.
  17. TO MAKE SYRUP:
  18. Meanwhile, make the sauce by placing the butter in a saucepan over high heat. Using Swerve: Before you begin, make sure you have everything ready to go – the cream and the butter next to the pan, ready to put in. Work fast or the sweetener will burn. Heat butter on high heat in a heavy-bottomed 2-quart (2 L) or 3-quart (3 L) saucepan. As soon as it comes to a boil, watch for specks of brown (this is brown butter….so good on veggies!). Immediately add the Swerve and the almond milk to the pan. Whisk until sauce is smooth. Let cool in the pan for a couple minutes, and then pour into a glass mason jar and let sit to cool to room temperature. Store in the refrigerator up to 2 weeks.
  19. Place the French Toast on a plate and top with syrup. Enjoy!

White Bread = 70 calories, 1g fat, 2g protein 14g carbs, 0.5g fiber
“Healthified” Bread = 75 calories, 5.7g fat, 6g protein, trace carbs, 0g fiber (69% fat, 31% protein, 0% carbs)

Traditional French Toast = 299 calories, 14g fat, 4.3g protein, 39g carbs, 0.8g fiber
“Healthified” French Toast = 125 calories, 10g fat, 6.4g protein, 0.7g carbs, 0g fiber (72.3% fat, 20.5% protein, 2.2% carbs)

Eating out and making healthy choices for your body can be tough! Ordering an omelet on your Pure Protein and Fat days should be a safe bet, but think again! Clients often complain about acid reflex after a dining out experience; could it be hidden wheat in the OMELETS? YEP!  IHOP adds pancake batter to their omelets. That’s right – they add sugar, carbs and WHEAT to their eggs for the omelet base for “fluffiness”… yuck!

A spinach and mushroom omelet is 24 carbs and 7 grams of sugar! That just isn’t right.

    I’ve gotten healthier with a grain/sugar free lifestyle because I found out a few years ago I’m celiac. Once I cut out gluten products and grain I started feeling better and had a bit more energy. Cut sugar out in 2002 and have never looked back. One of the best things I ever did for myself!!

    I was tested/diagnosed with leaky gut about 18 months ago and immediately began a grain-free diet. While I’m not 100% yet, I’m just about back to “normal” (and by normal I mean no adverse reactions to foods, no painful stomach issues/cramps, and my skin issues have all but cleared up). If only I’d known how powerful a grain-free diet can be to one’s health…I would have gone grain free YEARS ago :)

    I’ve been working up to this lifestyle change for a little over a year & what I can say is that the more I eat the Maria way, the more amazing and in control of my health I feel! Not only that, but I eat with purpose now. I feel so satisfied & the guilt I associated with eating is GONE. It’s really almost too good to be true. Eat this way, be healthy, have energy & feel great about how you look! I was never able to go very long between meals & yesterday while I was out Christmas shopping for almost 7 hours I realized I hadn’t eaten anything since my egg & ham omelet I made for breakfast & I had no urge to stop & grab an unhealthy snack!     Going grain free – now I can see why they call it the happy fat diet. I have never felt so good, full of energy – it’s like I was in a haze of lethargy. No motivation to do anything. Now my husband has to talk me down all kinds of crazy schemes, like no to painting the entire house. :) The scale isn’t moving as fast as I’d like it ot be, but I can’t deny I love how I feel. That’s what counts to me.

    I’ve been following the gluten and sugar-free lifestyle for quite some time. This past Friday I ate pizza crust. BIG mistake! I had no energy yesterday and wanted to sleep all day. My stomach hurts (constipation) and I’m puffy. Detoxed all day yesterday and I’m continuing today. I HATE this feeling! My tinnitus is very loud but not sure what is triggering that. It gets loud when I’m 100% so really stumped on how or if I can eliminate it.

    I just purchased the 30 day plan. I’m still adapting because I’m stocking up on ingredients. Even though I’m not yet 100%, I’ve been losing weight, almost 3 pounds this week. I already notice the difference in my joints. The one question I have is about almond milk. In the past, I discovered it was not my friend. I used it for about 2 weeks and had intestional issues. When I stopped using it, everything was fine again. What can I use as a substitute? Thanks.

    Hi I have been doing this for one week just love this. I bought all the books and ebooks

    I’ve been checking in on your blog for a while and have yet to commit myself to truly embracing the lifestyle. I’ve tried a few of the recipes – I really like the cereal. I am overweight and diabetic and I think once I can fully eliminate the grains and sugars, I’ll feel a lot better.

    I have found it is much easier to maintain my weight (loss) since going grain free. I also find now that when I do eat grains/bread/sugar (like at the holidays) I get that bloaty feeling.

    Low-carb really changed my life. For all the years we were ‘brain-washed’ that low-fat was the way to go without any consideration of sugars/flours, etc., I gained weight consistently no matter how little I consumed .. it was a vicious cycle. I’m very balanced, happy and I sleep so well now. This is life changing :)

    Grain free eating has helped me to keep my blood sugar in a normal range and not have to take medication. I’ve lost 15 lb. since Nov. 1 and my blood pressure is down and I have no acid reflux. It has helped my husband because he no longer has the stomach pain that he’s had most of his life.

    Life is so much better. My cholesterol was never high, but it is back down to 132. My IBS symptoms as gone. I’ve had my thyroid meds reduced. My moods are better, my sleep is better. And that is just me. My son’s ADHD is so manageable – we do not use meds. His eczema is also much better.

    We also LOVE Jay Robb.

    I’ve been following a grain free/ sugar free diet during the last 2 months after being diagnosed as carb-intolerant. My husband was diagnosed as diabetic. We have been losing weight (3 and 10 kg) and my problems of bloating and even seborrhea are gone. We hope to get better results on our next A1C test this week!

    I am having a hard time right now due to the death of my husband. I am trying to get back on program now but funeral food is just the best. I know how bad it is though.     I’m a Miami transplant leaving in NZ and a loyal follower of Maria Mind Body Health. Jay Robb is found here but VERY expensive. A few times a year I buy it online, have it delivered to a family member who then ships to me. I’d love not be stingy with my use of the protein powder [smile] as I just make the bread and it was excellent. I don’t have a facebook account but hope I can still participate.

    This was my first week eating the Maria way and I have a lot more energy and have been thinking clearer in just one week! I also noticed my pants haven’t been as snug :) So far I haven’t made any recipes that call for egg white protein because Jay Robb is a little out of my price range at the moment and I’m saving up!     Three years ago I had Weight Loss Surgery but was only able to lose 50 of the 150 pounds goal. Last August I gave up sugar to jump start my weight lost and am down an additional 30 pounds!     The best thing about this lifestyle is how it has empowered me. For years I felt like I was at the mercy of doctors, I felt like something was wrong with me because I couldn’t lose weight, I lacked focus and energy, suffered from anxiety and ADD, had those dreaded afternoon slumps, felt insecure about my skin problems and couldn’t control my cravings for sweets. I went to doctor after doctor, spending more money that I care to remember trying to find the elusive cure to all my ails. I was so frustrated.
    Now I’m empowered. Through Maria’s blog and books I have gained a real understanding of how to control my weight, moods, health, and energy levels. I’m no longer at the mercy of prescription-happy doctors and people who haven’t seen me in a while always tell me how great I look. Best of all, in my opinion, is the fact that I can tackle my life without the hindrance of ADD, anxiety and afternoon slumps. I never really appreciated how badly those things compromised my quality of life. And of course, I’m much more confident in myself now that my weight and skin are under control :)
    I now feel like my health and wellbeing are within my control, and that is an invaluable feeling to have.

    I saw this posted tonight and went straight to work to make a loaf of protein bread (which I had been thinking to do for the last week but just hadn’t gotten around to it). Whelp….stuffed my bread pan so full of the white fluffy goodness that it spilled over and made these almost perfect white puffy breadsticks on the side of my bread pan in the oven as it baked. So after i pulled it out of the oven i got a tasty treat of warm protein breadsticks i slathered with butter. Cant wait for my french toast in the morning!

    I just started eating the Maria way. I have tried everything over the years. After being diagnosed with Rheumatoid Arthritis and Fibromyalgia 12 years ago, I followed a vegan diet. I felt less pain and put the diseases in remission but I never could get my weight under control unless I worked out twice a day and followed severe calorie restriction. I am a child of the fat free era, so it has taken a bit to throw off that way of thinking. I started on GAPS diet a few months back and really felt better, now I have transitioned into the Maria way. I have lost 6.5 pounds in the last 8 days and I feel better. It was a tough few days getting through the “Keto flu” but I am glad I fought through it. Now I feel great; I am not very hungry and I sleep through the night. I am excited to continue this lifestyle and see more benefits from it. Thank you.

I have been eating low carb for a few months now and I have not used Whey Protein Powder or any of the products in this giveaway, but I am willing to add them in and learn about them! I feel good for a 64 yo woman. I must admit that I do eat some sugar…I love my Ghiradelli 60% Cocoa Chocolate Chips. Other than that, I have been grain free, gluten free, low carb.

    I was eating WAY to much protein and sugar! I had, had enough! I bought Maria’s 30 day accelerated Package on Cyber Monday and have already dropped 11 pounds!     I was strict Primal for about 8 months. Lost around 45 lbs (for a total of 75). Felt great aboout myself and never got sick. I never really felt BAD even at my heaviest 210lbs. But now, that I’ve fallen off the wagon for a few months and started consuming grains and sugars again, all my joints hurt and I have a constant runny nose that won’t stop. And of course, I feel sluggish and FAT. Looking forward to getting back on track real quick!

    I have gone from a size 14 (transitioning to a 16) and now I am a comfy size 12 since July 27. My husband has lost 20 lbs and no longer huffs and puffs when he bends over to tie his shoes. His blood pressure was elevated but now he is 118/69. We both feel better. My daughter uses your recipe for egg pudding and our little granddaughter is the happiest and healthiest baby.     Maria–just had to tell you of a funny experience I had with your Amazing Maria bread: I made a loaf (almond meal version), cut it up into cubes and toasted it. I used half for stuffing, and ran the other half through the food processor to make bread crumbs for future use.

    Stuffing went over really well, but that’s not the funny part. I used some of those breadcrumbs with ground meat to make burgers, and THE BURGERS SWELLED UP JUST LIKE YOUR BREAD DOES! I have no idea if this was supposed to happen, or if the psyllium has a second life, or what. The burgers were tasty and juicy, but really fat compared to the usual shape.

    We will be making Maria breadcrumbs and “Maria” burgers again! I also used some eggs and crumbs (+ gelatin as per your trick) to coat chicken with just last night–no, the chicken didn’t swell up, but it was moist and flavorful just the same. My cat went NUTS over it!

    Going grain and sugar-free was something that has helped me immensely. Having come from a health background that was completely unwell (Grave’s Disease, hyperthyroidism caused me to have surgery which removed most of both thyroid lobes, which in turn, gave me hypothyroidism), I can tell you first-hand, that diet matters. 100% of what I put into my body affects how it can and cannot operate. Changing my diet has changed my life. I am fit, healthy and couldn’t be happier!

    Hi Maria! I just made the syrup with coconut oil, since we are not eating any dairy (yet). How long is it good for if I store it in the fridge? And I am guessing I’d have to warm up the syrup before using it since the oil would go back to a solid consistency? Keep up the great work! There is not a single recipe we have tried that we don’t like and we have tried out A LOT! :)
