Fish Sauce!?
One staple that every cook should have in their fridge is Fish Sauce. It is a special ingredient that takes good food to amazing food. Fish Sauce, mushrooms and aged cheeses have something called “UMAMI.” Umami is a pleasant savory taste produced by glutamate and ribonucleotides, chemicals which occur naturally in many foods.
Umami is subtle and not generally identified by people when they encounter it, but blends well with other flavors and makes food taste amazing.
BUSY PARTY TIP: These can be prepared up to 2 days ahead of time and ready to pop in the oven for an easy appetizer at your New Years Eve gathering.
Tenderloin Bites
Ingredients
- 2 pounds beef tenderloin filets or venison, cut into 2 inch squares
- 8 slices bacon
MARINADE:
- 1/2 cup tamari sauce or coconut aminos
- 3 tablespoons MCT oil
- 2 teaspoons Natural Sweetener or a few drops of stevia glycerite
- 3 teaspoons fresh ginger grated
- 2 cloves garlic minced
Instructions
- Cut tenderloin into 2 inch pieces. Place in a large bowl. Mix marinade ingredients together and put into the bowl with the tenderloin pieces to marinate for 2 hours or overnight.
- Preheat oven on Broil (500 degrees). Remove tenderloin from marinade. Cut bacon slices in 1/2. Wrap each piece of loin with 1/2 a bacon slice, secure with a toothpick. Place on a baking sheet.
- Once the oven is hot, place the baking sheet just under the broiler. Broil for 5 minutes or until done to liking (they will continue to cook once you remove from oven). Enjoy!

Movies and appies. This year they are keto appies. Cheesesticks with pork rind breading, natural sausage balls with an almond flour crust, jalepenos stuffed with cream cheese and tomato and wrapped in bacon, and almond flour battered onion rings. We like to be home with our three furbabies: Tegan, Pepper & Butters our bunnies and watch the ball drop.
Several years ago we started staying home and cooking a lobster for my husband and crab legs for your teenagers. It is fun easy and a great way to stay off the roads.
I almost always end up working my extra job on New Year’s which can be pretty decent money. However when I don’t it’s usually with a movie and in bed by 11pm. This year however, my best friend turns 50 and I am taking cauli-mashed potatoes to a pot luck.
I love the New year as much as i love Christmas… i love to start it fresh and clean… clean house of all holiday decorations.. and clean out the kitchen of all holiday goodies and start the year off with clean eating.. (the Maria way of course!!)..

We will be going to church New Year’s Eve, then my husband and I will have a quiet, enjoyable evening together. Some years we have had our grandchildren overnight, but this year they will be at home with their dad. I’m looking for something healthy and nutritious to eat for supper that night!!

Hi Maria. I started typing my first comment to you and ended up with a huge testimony. I will have to find another give away spot for it (I saved it). Anyway, thank you for all you do. You have helped me change my life. This year we will do same thing we always do… Stay home and avoid the crowds! We live in Tahoe where our population DOUBLES over the New Years holiday. My hubby will grill up something amazing for us and the kids, and then we’ll settle in to a movie. We don’t watch regular tv, so no ball drop for us. We’ll likely be in bed by 10:00. Ho hum, just the way we like it!

My best New Years celebrations have been spent with my family. We get out our newest board or card games and puzzles and just have fun.

Idon’t want my littles to stay up til midnight, so we celebrate at 7:00 p.m. EST, when it is 12:00 in London–(Greenwich Mean Time). We all hold hands to welcome in the New Year so no one gets left behind.
My fave way to bring in the New Year will be with my granddaughter Isla. Little 3 yo Isla is learning to really love more nutritious foods. Instead of her old faves mac-n-cheese and mashed potatoes, she eats cauliflower made like mac-n-cheese or mashed like potatoes. She has always loved meat and green beans so it has not been hard to get her to eat really well here at her Yaya’s (that’s me).
This New Year Isla and I will be enjoying egg nog made with pecan milk that she helps me make. 🙂
We don’t do much on New Years…hang out with kids, put away Christmas decorations, make something fun to eat – nothing too exciting.

It is better to have all grass fed, but this is better than a feed lot beef. 🙂
