Carnivore Rice Pudding

HOW TO MAKE CARNIVORE RICE PUDDING
In the past, I would make rice with egg whites and a whisk, but it wasn’t quite perfect. So a few years ago, I messed around with adding gelatin to the egg whites for a better texture and BOOM! It worked perfectly!
To make my carnivore fried rice, I didn’t just use any gelatin; I used Further Food gelatin!

Carnivore Rice Pudding
Ingredients
Carnivore Rice
- 20 large egg whites about 2 cups carton egg whites
- 2 tablespoons Further Food gelatin
- 1/2 teaspoon Redmond Real Salt
- 1/2 teaspoon coconut extract
Rice Pudding
- 10 large egg whites cooked and cooled
- 3/4 cup unsweetened coconut milk
- 2 tablespoons allulose (or equivalent natural sweetener)
- 3 scoops Further Food Vanilla Collagen
- 1 teaspoon coconut extract
- Pinch Redmond Real salt
Topping
- ground cinnamon
Instructions
- To make theĀ CarnivoreĀ Rice, place the eggs into a large greased skillet and whisk in the gelatin and the salt and extract. Allow the gelatin to dissolve for 3 minutes before turning on the heat.Ā
- Heat the eggsĀ overĀ medium- high heat and scramble until completely cooked through. Remove from heat and cool completely.
- Once cool, place in a food processor to pulse into small pieces ofĀ riceĀ (or use a ricer and place the cooked egg whites through a ricer to form pieces ofĀ rice).
- To make the pudding, place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking.
- To make the rice pudding, divide the "rice" into 5 dessert bowls. Divide the pudding over the rice and stir to combine the rice and pudding. Top with cinnamon and serve warm or chilled.
