Protein Sparing Snickerdoodle Pudding
This protein sparing Snickerdoodle pudding will BLOW YOUR MIND!
Everyone is going wild for my hard boiled egg pudding! People around the World are tagging me on Instagram of their photos of my hard boiled egg pudding. It warms my heart to see everyone loving the protein pudding!
To make this protein sparing pudding even easier, I used scrambled egg whites instead of hard boiled egg whites. This way, you don’t have a bunch of hard boiled yolks wasted.
I decided to make my Egg pudding even healthier for my family by adding a few scoops of Further Foods collagen!

NOTE: If you want to make this delicious Snickerdoodle protein pudding without protein sparing macros, you can use canned coconut milk or heavy cream in place of the almond milk and use 5 whole eggs instead of 10 egg whites.
Protein Sparing Snickerdoodle Pudding
Equipment
Ingredients
- 10 large hard boiled egg whites peeled (or scrambled egg whites, chilled) (see NOTE)
- 1 cup unsweetened almond milk only 3/4 cup if using scrambled eggs (* see NOTE)
- 2 tablespoons Natural Sweetener or equivalent amount of liquid or powdered sweetener
- 3 scoops Further Food Vanilla Collagen
- 1/2 teaspoon ground cinnamon
- 1 1/2 teaspoons maple extract or vanilla
- Pinch Redmond Real Salt
Instructions
- Place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking.
- Place in the fridge in an airtight container for up to 4 days.
- COLLAGEN PUDDING POPS: Place the mixture into ice pop molds and place in the freezer until set, about 8 hours or overnight.

Really wanted to try this snickedoodle pudding, but struggling to find collagen, or I have found a few companies that make them but are toowoomba expensive! Like no point making price! Lol.
So can I use a substitute like beef gelatine or psyllium husk, not even sure if they are a correct substitute. Please help?

You can skip the collagen and maybe add a little vanilla extract. 🙂

My liquid egg whites, in a carton, show 10 servings per container ( 3 Tbsp), so I would scramble the whole container, chill it then add the remainder of the ingredients? I love your recipes, and can’t wait to try it… I am sick of eggs, as is my 21-year-old son! Thanks, Nancy

Can you tell me the measurement formula for using just liquid egg whites and almond milk instead of whole or boiled eggs and cream? I bought the egg whites just for this but now can’t figure it out :0
I would just half the almond milk if doing scrambled eggs. 🙂
8-10 liquid egg whites is about 1 cup. I had to look this up so I could also try this recipe.

It is the protein to energy ratio. The higher the number the better for weight loss. Anything above 1.0 is good, above 3.0 is good for PSMF days. 🙂

This is a “protein sparing” or “pure protein day” recipe so lower in fat to improve weight loss results. 🙂
You can use the whole eggs if you like, it would just be higher in fat.
How much, in tablespoons, is three scoops of collagen?
I think it’s about 2 Tablespoons per scoop. 🙂
I love this recipe, but I went to the doctor and my Vitamin D levels are below 19. Would using the whole egg in this recipe make that big of a difference in the taste?

If you used the whole hard boiled eggs – instead of just the white – would you use less of them in the recipe in order to account for the dryness they would create?
I would increase the moisture (a bit more almond milk). 🙂
Loved it!!! I used half the amount of almond milk as recommended on FB and unflavored Vital Protein Collagen. I increased the vanilla to 1 tsp to make up for the missing flavor in the collagen. I added a little extra cinnamon and swapped out the swerve for dark brown sugar swerve. I liked it better than the original chocolate one. So good!!! Thanks Maria!

But with this recipe you could use any sweetener you prefer to taste 🙂
