Deconstructed Waffle Cone
There’s not a lot of things that I am tempted by anymore. There was a time I would have to excuse myself at dinner if someone ordered a decadent dessert, but I now do not feel deprived with all the tasty desserts I can make at home. But walking by an ice cream shoppe that makes their own waffle cones must bring back special memories or something because I love that smell! And when we were in Hawaii Craig said the same thing as we walked by this cute ice cream shoppe.
We ended up finding So Delicious No-Sugar Ice cream (buyer beware that some of the no-sugar has other things like Agave, read the labels) for the boys to enjoy while we are staying at the Keto Condo in Maui.
The smells did inspire me to come home and create this delicious decadent creation of ice cream over waffles!
As I started to think about creating a recipe (which took about a hundred tries to get the recipe perfect…. lots of wasted eggs and ingredients!) I realized I needed to borrow a waffle maker because mine broke about a year ago. I decided to reach out to see if Warning would be willing to donate one for my blog and they graciously donated TWO of them! One for me to test and one for me to give away! I know this recipe may sound weird, but I really wanted to create a waffle that was basically zero carbs. I don’t eat nut flours unless for a special occasion. You can read why I avoid nuts and nut flours in my book The 30 Day Ketogenic Cleanse.
Creating this recipe was NOT easy! I hope you enjoy it!
Deconstructed Waffle Cones
Ingredients
WAFFLES:
- 2 large eggs
- 2 large hard boiled eggs
- 2 tablespoons Natural Sweetener
- 1 tablespoon unflavored egg white protein powder
- 2 tablespoons unsweetened cocoa powder
- ½ teaspoon baking powder
- 1/8 teaspoon Redmond Real salt
- 2 tablespoons coconut oil
- 1-2 teaspoons vanilla extract option sub 1 teaspoon for almond extract if not allergic to almonds
ICE CREAM:
- 14 tablespoons coconut oil organic butter if not dairy sensitive
- 4 tbs MCT oil *needed to create a smooth ice cream
- ½ cup unsweetened almond milk or water
- 4 large whole eggs
- 4 large egg yolks
- 1 whole vanilla bean scraped clean or 2 tsp vanilla
- 1/4 cup Natural Sweetener or 1 tsp stevia glycerite: to desired sweetness
- ½ tsp Redmond Real salt *helps keep ice cream soft
- ¼ cup unsweetened cocoa powder
PEANUT BUTTER SAUCE:
- ½ cup natural peanut butter softened
- ¼ cup coconut oil melted (or butter if not dairy sensitive)
- ¼ cup Natural Sweetener or 1 tsp stevia: to desired sweetness
Instructions
- Heat waffle iron to high heat. Place the raw eggs, hard boiled eggs, natural sweetener, protein powder, cocoa powder, baking powder and salt in a blender or food processor and combine until smooth and thick. Add the coconut oil and extract to combine well.
- Grease the hot waffle iron. Place 3 tablespoons mixture into the center of the iron and close. Cook for 3-4 minutes or until golden brown and crisp.
- Remove from waffle iron and serve with ice cream and sauce.
- To make the ice cream, In a blender (I used my blendtec), place the coconut oil, MCT oil, eggs, yolks, almond milk/water, vanilla bean seeds (discard the pod), natural sweetener, salt and cocoa powder. Blend until very smooth. Place into ice cream maker and watch the magic happen! Turn off ice cream maker. Store in airtight container in the freezer.
- Meanwhile, make the peanut butter sauce by combining the peanut butter, coconut oil/butter and natural sweetener in a small bowl. Combine until smooth.

Wow! I can’t wait to try this. Almond Flour seems to be a trigger for me to either overeat or just retain water. I’m starting to be suspicious of Coconut Flour, too. Who would have thought to mix hard boiled eggs into a batter like this! You really impress me every time with your recipes.
You asked us to comment with a favorite breakfast recipe… well, since eating Keto I don’t tend to worry about whether my food is ‘time of day appropriate’ – so I’d have to say Doro Wat for every meal! That was the first recipe of yours that we tried and it’s still my absolute favorite recipe, hands down. So easy, fills the house with amazing smells for the entire cooking time, and what a complex amazing flavor. We made it for my in-laws over the holidays and they were just as thrilled with it – even the picky eaters loved it!

Looks great, Maria! Can you add nutrition info & macros? Maybe for waffles, ice cream & topping separately? Also, the company that makes the waffle iron is Waring, not Warning! That gave me a giggle and I double checked the photo of the label on the waffle iron to make sure I was correct. I guess if we make waffles with SUGAR they should have a WARNING label on them!!

Delicious!!! Waffles have been a lingering craving since I got pregnant with our oldest 7 yrs ago. It’s awful. You think I would have bought a dang waffle iron by now?! We go snowboarding every week and there’s a waffle shack on the base of the resort, the smell wafts into the lift line… It’s the most tempting smell in the world. I have, and will continue to resist, but now I REALLY need to buy a waffle iron. I’m drooling on myself.

My breakfast is 1/2 cup bone broth with 1-2 TBS of MCT oil at about 6:30AM. I usually then don’t eat a full meal until noon. Unbelievable that I’m not HANGRY, but I’m not!
If I try this recipe again…will I get the coconut oil lumps in it as it cools in the ice cream maker? Or was I supposed to melt the coconut oil first? The MCT Oil is not enough to prevent the lumps. Anyone else have these issues? I am off dairy at the moment.

I love waffles, but started eating KETO diet not long ago so figured waffles were a thing of the past for me. My daughter-in-law has a waffle maker similar to this and it is awesome! My favorite breakfast recipe… where do we start? The thin mint doughnuts are awesome, and so are the Nutella waffles. (Can you tell I like chocolate?) But I think the best might be Zero Carb Eggs Benedict. I never knew that protein powder could be so versatile.

I have farm fresh eggs and you will be amazed..have eggs at room temp place in a pot cover and boil for about 11 min drain and fill pot with col water cover and shakes the pot a lot…shells fall right off don’t even have to peel them…

My favorite recipe has to be your cereal recipes from your “Kids” book! Cereal brings back those memories of childhood and sometimes you just need a crunch! Thank you for all that you do!
I would LOVE to have a waffle maker. I can make pancakes with a regular flat griddle, but without a waffle maker, I have no waffles. 🙁
I forgot to mention that I don’t particularly have a favorite breakfast recipe, BUT the Starbucks lemon loaf recipe was amazing. I also love the KFC biscuits recipe.
After thumbing through your breakfast recipes the Dutch Baby Pancakes, Low Carb Cinnamon Rolls and Chocolate Cake Donuts caught my eye!
My favorite is the tapioca pudding recipe.
The protein popovers, I just got a nice popover pan, so no more muffin pan popovers. 🙂

Waffles! I love waffles! ALL waffles! Grandma served me my first waffles when I was eleven. Guess what I wanted for Christmas that year? My folks didn’t believe a child could possibly want a cooking appliance, so I didn’t get one. But I was still asking for a waffle iron on my birthday and the next Christmas…. Guess what Santa finally brought me! Minus a handle and a knob, that waffle iron is still sitting on my kitchen counter 50 YEARS later, still being loved and used!

I’d have to say so far your crepes are my favorite, but this sounds too good not to try! I really love that it doesn’t have nut flour. I am the first to admit that I always over do it with them on accident.

It’s not surprising to me you avoid overdoing nut flours intuitively. Nuts are some of the highest alkaloid foods available and a diet too high in alkaloids, which I experienced as a former raw vegan, is very dangerous. Most vegans find out the hard way. Best wishes to you and keep cooking!

I just made these & they’re delicious! I didn’t make the ice cream though. My cocoa powder has 3 carbs per Tablespoon so I only used 1 & doubled the protein powder (half vanilla half chocolate) & I poured a little yacon syrup on top with whipped cream too! My picky hubby loved them too! Thanks!!
These waffles are awesome! I think they just became my favorite! Biscuits, sausage and gravy are good as well, if I want something different than my usual eggs. I hesitated after reading the recipe, but you seldom disappoint. How much is a serving, do you use a 1/2 c. of batter and then only 1 is a serving? Thank you again, Maria!
