Mikey’s English Muffins
I had a huge box delivered the other day while I was outside playing ball with Micah and Kai. As I opened it and saw it was a packaged food I wasn’t super thrilled and continued to play outside. Once I put the boys down for a nap I read the ingredients and was starting to get more excited!
Eggs, Almond Flour, Purified Water, Coconut Flour, Baking Soda and Kosher Salt!
I like the sound of those ingredients!
I try to never eat anything packaged or out of a box. But I thought in honor of you who are not interested in baking, I would try these. I was happily surprised at the taste! They reminded me of an English Muffin from my past days. Now, don’t hate me if they don’t taste like a real English Muffin… It has been over 10 years since I had a real one:)
These would be a welcomed treat for someone like my above client testimonial. She is 13 years old and is spending time at a summer camp where she wanted something to have but was unable to bake at the camp. These English muffins would be great for traveling. I always pack my zero carb Protein Bread (I packed a frozen loaf on the low carb cruise…I don’t eat almond flour products very often, I was never a fan of cake or muffins… I prefer more creamy desserts like my “healthified” creme brulee or ice cream which are also more ketogenic). But if you aren’t a baker and you are looking for something to bring with you on your next camping trip or summer vacation, try these so you aren’t tempted by other high-carb, gluten-filled breads!

I am confused. Why are you not eating almond flour products? Many of your recipes use almond flour.
I personally just don’t have a taste for cakes, pancakes, breads. If I have a treat it is cheesecake or ice cream. I enjoy my protein bread but that is about it (and that doesn’t have any nut flours in it).
In general, I try to have clients avoid almond flours until closer to their goals. They typically have more carbs than needed to lose weight (and are somewhat of an anti-nutrient). Those recipes are more for maintenance for most people.
What do you mean by anti-nutrient?
The Phytic acid grabs onto minerals (especially iron and zinc) making them unavailable for the body. Using blanched almond flour greatly reduces this as you remove the outer dark skin which contains most of the phitic acid. 🙂

list” on Amazon so far. You are taken to the Gluten Free Mall website when you click “visit site”. I did and had my order all ready, but cancelled when I found that I’d have to pay 22 bucks to have them ship frozen. Yipes! I hope they arrive in stores someday soon.

I used the site Maria suggested. It’s not a friendly website but can be navigated. I ordered the muffins and it showed no shipping and no taxes.
I was able to purchase these muffins in a supermarket. They are expensive, smelly, tiny and taste like old egg. The packaging is as deceptive as the name: double to triple the size of the thin, 3″ wide, 3/4″ high muffins. English muffins? In your dreams!
You are much better off making your own using Maria’s or many of the other simple recipes available. Even just using a cake pan, then slicing the bread to sandwich size and then in half will give you a much tastier product than Mikeys.
In my opinion, you have to be rich and desperate to use this product.
Helene you are so right. These were awful. They tasted foul and I thought the cooler cold pack had leaked into them, I threw them all out and the company sent me a refund. They were soggy and just downright nasty. Too pricey and if this guy graduated from Culinary School he should go back for a refresher course. Shame on you Mikey ! I would just make Maria’s biscuits as I did today and had a BLT! Her’s are more bread like and taste wonderful.
Is there a formula to figure out what to eat ? I bought keto adapted …

I have to say that I’m pretty disappointed in them. They are expensive, especially for what you get. Shipping is outrageous – $13.50, and they don’t tell you what it is until after you’ve made your purchase. It’s a second charge.
Since they’ve thawed during shipping, despite tons of packaging, they all stick together when re-frozen so that you have to completely thaw them, then place waxed paper between them and re-freeze again.
They taste nothing like English Muffins nor do they have the texture. They don’t really toast either. They remind of the yucky paleo bread I got from the healthfood store when I first went keto although not as disgusting. I won’t be ordering them again.
Homemade bread is the best of course, but it’s nice to not have to make EVERYTHING.
For purchased products, I love The Great Low Carb Bread Company. Their products are the closest to real bread that I’ve found. They grill and toast just the same, and while not quite as tasty, I think they’re great. A slice of bread is 1g net carb, a bagel is 2, they are also high in fiber and protein. They also have onion rolls, which I sub out for Arby’s, dinner rolls, and hamburger/hot dog buns. I don’t like their crackers, way too dry. I can also purchase them from Netrition.com for a flat $5 shipping. I usually make one purchase a month, get one of each flavor, and freeze. When I use them, I just microwave for 50 sec at 50% power, then pop them in the toaster. I’ve made grilled cheese and french toast with them as well.
Some will note that they contain some wheat gluten and soy bean oil. Since I don’t have celiac disease, and I figure the products are a small part of my overall diet, that doesn’t bother me.
I found them at a local market so a couple of weeks ago I bought a package and stuck it in the freezer. Today I came home after 5 hours of errands and swimming after an earlier than usual breakfast of only three boiled eggs. I was starving. I thawed a muffin, fried three slices of bacon and had a bacon sandwich using hemp mayo. I thought it was delicious.

Would you say you feel the same way about using coconut flour as you said about the almond flour above, especially for people still trying to lose weight, regarding the anti- nutrient & carb part of almond flour?

Not for the anti-nutrient part, but the carbs do add up. I have seen too many people with damaged metabolisms or metabolic syndrome get kicked out of ketosis with too much fiber. 🙂

Maria….do seeds have antinutrients as well…..I use a little bit of sunflower seed butter here and there. I’m allergic to almonds
Some do yes. But typically not as much as nuts.

Uten free for a few months now, and am transitioning to grain free. If we order your 30 day plan, can it be played with to include some of your treats for her snacks etc? Or is it quite rigid? Cheers!
Yes, I would keep the plan as is for regular meals and then add some of my kids treats. Otherwise you could do the maintenance meal plans which include more options like pizza, etc (but do include dairy). Either of the plans you can sub any meal in the plan for another. 🙂
