TESTIMONY OF THE DAY

MY TESTIMONY

When my dog, Teva, started losing her hair in patches, the first thing my veterinarian asked me was, “What are you feeding her?” Yes! What a good question! But you know what? I have never been asked that question at the doctor. Not once. Not even when I was a teenager suffering from IBS and acid reflux. I was just given a prescription. Nothing frustrates me more than getting a Band-Aid for the symptoms and not addressing the underlying cause of my issues which is why this job is so important to me. I want people to start feeling amazing, eliminate migraines, get off cholesterol-lowering drugs, increase serotonin naturally, balance hormones to alleviate PMS; and do it with food and natural supplements. That is how I become a happy and healthy person I finally became after years of IBS, estrogen dominance, and low moods.

In my “before” photo, I was 15 years old on a camping trip in Colorado. I already lost 12 pounds in this photo due to giardia (a parasite in the water), but you get the idea that at age 15 I was going down the wrong path. I decided enough was enough and I was like everyone and thought I needed a caloric deficit in order to lose weight. So I took up running. My love for movement and exercise did not come easily for me. Sure, I liked to play as a kid, but when it came to phys-ed, let’s just say I wasn’t the first kid picked to be on any team. I still remember when I was in middle school, pacing back and forth in my parents’ yard and contemplating how to get out of the dreaded “mile run” that I had to do in phys-ed the next day. My anxiety about this was getting the best of me. I remember thinking how I could break my leg so I didn’t have to run because if I were just to say that I was sick that day, the teacher would just make me run it the next week. I had to think of something more long term. Not wanting to actually break my leg, how could I fake a broken leg? All of these ridiculous ideas went through my head!

Eventually, I started to like running and I ran at least 11 miles daily and was still 150 pounds (at 5’2). I often ran in the morning and then another run in the afternoon. I also started training for marathons. What gives? I ate Special K with skim milk for breakfast and dinner, dried fruit for lunch and still was too heavy for my frame. Sure, once the weekend hit, I was so hungry, I ate junk. It was impossible to balance my neurotransmitters and control my cravings on a diet like that!

As I learned more about nutrition, neurotransmitters like serotonin, and the ketogenic lifestyle, I started to switch my running to lifting weights and yoga. I do run a bit in the morning, but the neighbors all laugh at me because I am usually looking down at my phone answering emails! It is a relaxing run. 

I’m telling you about my exercise regime because I want you to realize that it is NOT about calories in and calories out. Albert Einstein’s definition of insanity = doing the same thing over and over again and expecting different results, yet we all seem to be succumb to this lie. Our bodies are more complex than that. It isn’t a simple answer. Our hormones and mitochondria determine our fat loss and fat gain. I want you to know that you do not have to kill yourself at the gym in order to lose weight. I certainly was sick of running all the time and living off of diet food like fat-free pretzels; which, are higher on the glycemic index than jelly beans!

Anyway, my testimony is to help you feel encouraged and empowered to take control and understand that you deserve this and you do not have to live off of salads or live at the gym. If you are willing to take the time to prepare meals, even if they are slow cooker meals, you CAN do this! You deserve to feel amazing too!

CHOCOPERFECTION CHOCOLATE

ChocoPerfection bars use the sweeteners oligofructose, which is derived from ground-up chicory root, and erythritol, which comes from fermented natural foods. These ingredients don’t affect insulin levels (zero on the glycemic index) or have a laxative effect like maltitol. Most “low carb” chocolates use maltitol which does increase blood sugar and often causes intestinal discomfort. So, here’s to chocolate on a “diet!”

I often get questions about the cost of the ingredients I recommend. I calculated the price for my ice cream recipe with all the top-notch ingredients like organic coconut oil and farm-raised free-range eggs. The results:

My recipe = $2.59 per pint.
Ben and Jerry’s = about $4.00 per pint
A Medium shake from Dairy Queen (which is about a pint) = $2.99.

You can also buy most of the ingredients I use in bulk and store in a chest freezer to lower the cost even more! Eating healthy costs you a lot less in the long run due to medical bills but it can cost less now versus buying pre-packaged at the grocery store!

“HEALTHIFIED” MINT CHIP ICE CREAM:

5 egg yolks
1 cup Allulose
1 cup heavy whipping cream
1 cup unsweetened almond milk
1 tsp spirulina (for health benefits and green color)
1 tsp Celtic sea salt
1 tsp mint extract or 1/4 cup pureed fresh mint leaves
OPTIONAL: 1 Mint Chocolate ChocoPerfection bar, chopped fine

In a medium saucepan place the egg yolks and sweetener into the mix on high with a hand mixer. Whip yolks until light in color and double in size. Stir in the whipping cream. Place the saucepan onto a medium heat on the stove and cook, stirring constantly (I used my hand mixer). Stir until thickened into a custard. Remove from heat and stir in almond milk, salt, and mint. Let cool completely (I cooled overnight…it was hard to wait!). Place into your ice cream machine (click HERE to find the one I love AND it is 1/2 off the original price!!!) and watch the magic happen within 45 or according to your ice cream maker’s directions.  Stir in chunks of ChocoPerfection bar. Freeze until set. Makes 5 servings.

NUTRITIONAL COMPARISON (per 1/2 cup serving)
Baskin Robbins Mint Chip = 270 calories, 16g fat, 5g protein, 28g carbs, 1g fiber
“Healthified” Mint Chip = 145 calories, 14g fat, 3.6g protein, 5.7g carbs, 4g fiber (1.7 effective carbs)

    I like most of the recipes we try. I especially love the cream de mint brownies, spinach artichoke tart and protein donuts. I’ve altered your donut recipe and instead of the cocoa powder, vanilla, and cinnamon, I added 3 tbls of powdered pomegranate and 1/2 tsp of pomegranate flavoring (from my candy making supplies). They are super delicious with a fruity flavor my family loves. Of course not quite as low carb but still way healthier than store donuts!

    I do have a question – how do you get your cookies so flat and perfect looking? Mine always seem think and bulky. Taste good but don’t look as good as cookies made with sugar and flour.

    I want those chocoperfection bars so bad!!! I’ve been scouring my local health food stores and grocery stores and they are nowhere to be found. I thought about buying them online, but I just can’t justify paying that much for chocolate since I just spent a ton healthifying my entire fridge and kitchen!!! I hope to try them soon! It’s a shame stores such as Trader Joes and Whole Foods doesn’t carry them.
    Your recipes are awesome!! I’ve made the spinach artichoke quiche/tarte several times and I’m making it for Easter… So good!!! I also love your bagels (especially toasted with cream cheese)… What a treat!     I would love to win!!! I never knew such a yummy chocolate existed without all the junk in it!!!! My husband is now obsessed with your protein pancakes (they’re amazing!) and I am a huge fan of the protein bread and figuring out new ways to use it! I have celiac and have always hated the sugar crash I felt after having a gluten free hamburger bun or bread loaded with rice flours or other starchy ingredients. P.S. my husband has been used to choking down my various GF pancake recipes (and I’ve tried some really good ones which he usually doesn’t mind eating) but he didn’t believe me when I said that the protein pancakes were gluten free and he was even more shocked when I told him the ingredients!     Hi Marie, would love to win the choco bars! Let’s see, I bought the psyllium husk (stayed in my pantry for a bit – was afraid to try it!)and just last weekend made the tortilla (for a quesadilla)…YUMMO!! I’m Mexican and just knew I’d hate them but was desperate 🙂 Glad I took the plunge. I used broth instead of plain water and cooked on the stove top. A reader of mine tried (bcs of my review) and said she liked the oven version better. I may try that today.

    Please enter me for the Choco-Perfection Bars. Would use in your chocolate raspberry cheesecake. We enjoy lots of your recipes but probably use the protein waffles recipe the most. Love the chili and snickers dessert in the summer.

    Went grain-free, low carb tentatively last May. Now we “mostly” eat your way. Husband’s glucose went down just enough not to be pre-diabetic any more. I lost 23 lbs and have kept it off! I cringe whenever I see the media and talk shows tout low-fat and whole-grain products as healthy for us.

    Since diagnosed with Type 2 4 years ago, and committing to low carb, no recipes this non-cook, and non-baker tried worked…except yours!
    You have literally changed, and probably extended, my life. Now I can enjoy pizza, bread, pies, cookies, cakes for the first time in 4 years!
    The bread has made a huge difference for me, but the French Silk Pie was the best thing I’ve ever managed to produce. Definitely commercial grade, in the nicest way that is.

  • I would love to win! My favorite “healthified” recipe is eggplant Parmesan. We use Parmesan cheese to “bread” the eggplant after dipping in egg, then bake them in the oven. A little sugar free spaghetti sauce, some shiritaki tofu spaghetti noodles, and a chicken breast round it out. Its delicious!

    I am wanting to make your cream of “whey” cereal. The ingredients call for 4 TBS vanilla egg protein/whey protein. I’m wondering if this means I can use either egg protein or whey protein? I’m obviously new to this 🙂

    What are the differences between Swerve and Just Like Sugar? Would you use the same proportions in a recipe? By the way, I listened to the Dr. Getoff podcast. His explanation of Truvia was an eye-opener. But that doesn’t mean all erythritol is bad, is it? I take it the problem is the erythritol Truvia is using in its product?

    I can only find the small mint coco perfection bars for sale. They are only 10 grams. The regular size chocolate bars are 50 grams. The recipe calls for 1 bar. I assume you mean 50 grams? ??
