Keto Instant Pot Cookbook

Life may seem easy and smooth sailing for me but believe me, we still have very difficult times. One of the reasons I really wanted to write Keto Instant Pot Recipes cookbook is because I know that we all have trials and tribulations throughout our life that can be extremely difficult to deal with and those are the times we are often thrown off course!

I was dealing with one of those difficult times as I wrote Keto Instant Pot Recipes. 4 years ago, my husband Craig started living In chronic pain. When I say chronic, it was severe pain that kept him from living life with us. We blamed it on a slipped disc from an old football injury. The pain started migrating and progressively got so bad there were days he didn’t want to get out of bed. His mood deteriorated and he seemed to give up on life. He walked with an extreme hunchback and he was down to only 133 pounds. The summer of 2017, I said, “Sweetie, you are only in your 40’s! You need to start figuring this out! You do not deserve to live like this.” I expressed this concern to someone very close in my life and he told me that Craig most likely has Lyme Disease. I told this friend that he was tested at the doctor 3 years ago and it came back negative. My friend explained that the traditional Lyme test has a 70-80% false negative and we both must get a very expensive IGENIX test. Sure enough, Craig came back positive and we began the intense journey of healing Lyme which causes you to get worse before you get better.

The very upsetting piece is that since the traditional medical test said he was negative for Lyme, insurance covers nothing. Everything is out of pocket. Including copious amounts of medications, doctor’s visits, cavitation surgery, … the list goes on. Not to mention the emotional hardships that are associated with Lyme. One of Craig’s friends from high school reached out to him to say he also suffers from Lyme and it has taken a toll on him so terribly and has caused depression so bad that he isn’t allow to be alone for fear that he may take his own life.

It was during this time of healing for Craig that this book, Keto Instant Pot Recipes, was written. I needed something to focus on, just as with my other books; there is a theme… I write during intense difficulties in my life. I often wonder if I am given these trials because it pushes me in the direction of helping others. I’m crying as I write this… I do not wish my worst enemy to go through Lyme. I once thought it was an overblown disease. I live in the woods, I run in the woods, I bow hunt in the woods, I often find 6 ticks on me a day and dismissed this detrimental disease. Lyme is REAL and can ruin your life!

This leads me back to why this book is so important. I started doing all the things that Craig did and could no longer do which meant my multitasking went into overdrive and I felt like I had one too many balls in the air while juggling and I was about to drop one at any time. Or one of my favorite movies, Lord of the Rings, Bilbo Baggins “I feel like butter scraped over too much bread” (keto bread that is!). Eating keto was the only thing that helped his inflammation go down so making healthy meals for him was a priority. While keeping up on the growing number of phone consults, creating a keto course to help educate others and creating a Keto College course to teach others to become a Keto Coach, I still made time to make healthy and delicious keto meals and it was my Instant Pot and slow cooker that helped me accomplish this.

Eating keto isn’t a diet for me. It is a lifestyle. I love food and I will always love food, but more so, I love the way I feel eating like this! That is why I spend so much time and money creating new recipes for all of you. I want you to be able to commit 100 percent.

And yes, I enjoy a piece of “healthified” dessert every day!

If you decide to also make this way of eating part of your lifestyle, you’ll notice you no longer want to nap in the afternoon, your belly fat will disappear, your skin will look amazing, joint pain will no longer an issue, and you will no longer be hungry all day or thinking about food. Sure, it takes time planning and preparing meals, but we all prioritize our time… When you feel and look amazing, you will not regret the time you put into it!

By following the ketogenic lifestyle, you too will understand how to eat to balance your hormones, sleep better, feel better and lose the weight! These tasty and exotic keto foods will keep you satisfied and enhance your physique. You will even get to enjoy desserts again; after all, we also need to enjoy the sweetness of life.

I get asked all the time how I do it?

How do I run a thriving nutrition business, home school, workout, enjoy nature and still find time to get a delicious Keto meal on the table?

I plan ahead! This way I can enjoy life! I am even paddle boarding as I write these tips! No lie! I am on a paddle board off of Maui watching for humpback whales and multi-tasking!

I often fill my slow cooker the night before while my kids help clean up dinner; before my kids were old enough to help, my husband helped while we chatted about the day. I put the shell of the slow cooker in my fridge. I prep any fixings the night before too. This helps with my stress for the next day because I don’t need to worry about what we are having for dinner!

So my suggestion is, before you nail down this healthy habit, make an alarm on your phone. Every evening to remind yourself to do a few simple prep steps.

I like the idea of filling my slow cooker the night before, place the shell in the fridge overnight and turning it on in the morning and allow the meal to cook while I am working or exploring nature all day. However, the Instant Pot was easy to fall in love with. It is also a slow cooker! And on days when I forget to plan ahead, I can make a delicious meal in minutes.     I am looking forward to this book, although my life has changed the last few years with my boys becoming adults and my life demands are different, I still appreciate being able to put food on the table quickly when it is warranted.     Hi Maria, Love your web site and books. I feel so bad that your husband has been suffering for so long. Your post raises so many questions. Im a nurse, and my husband is an Infectious Disease Physician, and was wondering if he saw an ID specialist, and if they tested him for other things as well. The insurance piece is interesting, & my hubby feels that the false negative rate of 90% is not accurate. Possibly 10%, but how would one know? And, if it was really that inaccurate, the test would never be used. Im thinking he had other lab tests (sed rate), and had steroids as well? I wish him well. Write if you have any questions.       Thank you!! If you ask Lyme experts they say about 80% of western blot tests come back false negative, and thus the need for a better test like igenex.

    God Bless you both! My husband and I BOTH suffer from Chronic Lyme. So I, unfortunately, know exactly what you mean. Dave suffers the pain like Craig has. He lives on various medicines but doesn’t qualify for any kind of disability because all of his tests say he is perfectly healthy. It’s very discouraging. But I am so in love with my hubby of 39 years that I know we will continue to work it all out together, one day at a time. Donna Paige – thank you for your beautiful scriptures listed above.     Just pre-ordered this cookbook off Amazon and while I was at it, ordered the Comfort Foods, also. After following you for 10 months, losing 40 pounds, and getting off my blood pressure meds, my husband has decided to do Keto!! You have won over another person, Maria!     I wanted to leave a suggestion with you and thought a blog about a cookbook was the place to do it. I was just looking for a Christmas gift for a 9 yr. old granddaughter and thought of a cookbook geared to her age. I couldn’t find a Keto cookbook and the others were the standard high carb, low fat type with ‘food pyramid’ guidelines. I’d rather not encourage my precious one’s culinary journey with that. So, any chance that by next Christmas you might add to your bibliography with a children’s cookbook? In the meantime, thank you for all you do to encourage those of us going through this profound life invigorating change of diet.

    So excited to have received my copy yesterday! I rarely pre-order a book, but this was one I didn’t want to wait any longer than necessary for. I’ve already tabbed a bunch of recipes I can’t wait to try!! I’m on the search for a 1 qt. casserole dish like you indicate in the book. Any suggestions on ones that fit the Instant Pot well?
