Chicken Fries
When we were on safari at Xigera in Botswana, we had the most wonderful time! We have been at this safari lodge before and it was our favorite lodge. Four years ago, we met Chef Ziyaad Brown, who is not only super kind, he is also very creative! I only wish I had more time to be at Xigera so I could mash our brains together for some really crazy recipe ideas!
Chef Ziyaad asked us before each meal what our hearts desired, and for most lunches, we asked for burger patties. Well, Chef wasn’t ok with just serving us burger patties; he also made chicken fries, as well as a cottage cheese dipping sauce, which I will write up for you soon! They were both so delicious, I had to ask Chef for his recipes!
Even though I wasn’t feeling well (because of the poisonous spider bites), Chef made comfort food that was so yummy and made me smile!
NOTE ON MAKING CHICKEN FRIES
Chef used 2.2 pounds of chicken in his recipe, but when I was playing with the recipe, I used half the amount of chicken and I found the fries being a little more tender and less dry. So depending on your preference, you can play with the recipe too!

Chicken Fries
Equipment
Ingredients
- 2.2 pounds boneless skinless chicken breasts cut into cubes (*SEE NOTE ABOVE)
- 6 large eggs
- 2 tablespoons Dijon mustard OMIT for carnivore Level 3
- 1 tablespoon dried parsley (chef used fresh) OMIT for carnivore
- 3 teaspoons Redmond Real salt
- 1 teaspoon white pepper OMIT for carnivore Level 3
- tallow (or duck fat) or frying
Instructions
- Using a bowl cutter/blender, add all ingredients and blend till it resembles a smooth and light paste.
- Pre-heat an oven to 320*F and grease or line a bread tin with parchment paper.
- Pour chicken mix into the prepared bread tin.
- Bake in a water bath for 45 minutes until it resembles a chicken loaf.
- Allow to cool completely or overnight to settle. Cut into ‘fries’.
- Heat a cast iron skillet with a few tablespoons of tallow and fry the chicken fries until golden brown on all sides.
- Sprinkle with parmesan (and truffle oil if desired) and enjoy!
