Beef-a-Roni
Beef-a-Roni is a grain-free recipe for a classic. You’d never miss the noodles in this easy recipe:)
1 1/2 lbs. ground hamburger
1 med. onion, diced
1/2 green pepper, diced
Salt & pepper
2 cups No-Sugar Marinara sauce
3 cups eggplant, cut into cubes
1 clove of garlic, minced (optional)
1 tbsp. parsley
Peel and cube the eggplant into 1/2 inch squares. Place in a skillet with marinara and garlic. Simmer for 10 minutes or until the eggplant is soft. Brown the hamburger, onion and green pepper in skillet. Drain off any excess fat. Add remaining ingredients. Cook over medium-low heat, covered, for 20 minutes. Stir occasionally.
NUTRITIONAL COMPARISON:
1 cup noodles = 246 calories, 46 carbs, 5g fiber
1 cup eggplant = 20 calories, 5 carbs, 3g fiber

When I think of beef-a-roni, I think of tube pasta. This sounds wonderful. I wish there was a kitchen gadget that would cut eggplant & other firm vegetables in a round pencil shape. It doesn’t need to be hollow like macaroni or ziti. A round pencil shape veggie would give you the idea you were eating something similar to the pasta.
That would be cool. 🙂
Could you please tell me how much hamburger you used? Hamburger is listed in the directions, but not the ingredients.

I wonder if Chayote squash would work in place of the eggplant? I have some in my fridge that I have been trying to figure out what to do with.
There IS a kitchen gadget that makes noodles out of veggies. It’s called a spiralizer. I have 3 settings on mine, spaghetti, larger spaghetti that can be cut into macaroni (without the holes), and slices. Bought it on Amazon and it works great.
