So, let’s keep everyone in the family healthy with these treats instead!

EASY ALMOND JOYS

2 TBS coconut oil (melted)
2 TBS unsweetened cocoa powder
1 TBS almond butter
1 TBS unsweetened coconut flakes (optional)
Coconut stevia (optional to taste…I didn’t use any)

Pinch of Redmond Real Salt (use code Maria15 for 15% off)

Mix cocoa into the coconut oil. Then add in the almond butter, mix until smooth. Then add the coconut flakes (and sweetener if desired), taste and adjust sweetness to your liking. Pour into mini ice cube trays. Freeze for at least 5-6 minutes and either store in the fridge or freezer. Makes 4 servings.

Traditional Almond Joys = 235 calories, 29.2 carbs, 2.5g fiber
“Healthified” Almond Joys = 88.5 calories, 3.6 carbs, 1.7 fiber

    I think you are right on with your thoughts on this. I only wish I had known about this when my kids were young! I have been low carbing for quite a few years now, and I have definitely noticed that I don’t get near as many colds etc. as I used to and if I do get one, it doesn’t last near as long or make me feel near as bad. I think it helps greatly!!!

    These look wonderful. Bought my coconut flour and plan to make them today.

    I always find that when I indulge in too much sugar, I end up with sore glands in my throat and feeling like I’m about to get a cold. I am low-energy and congested. I try to remind myself that I will feel terrible if I have too much sugar!

    Maria! Those are amazing (I made them with crunchy natural peanut butter)!!! Dangerously good!
    I made some where I pushed a macadamia nut in the middle before putting in the freezer! So good for a quick fix!

    Maria … i was wondering….. is it possible to make almond joys with fresh shredded coconut ? i have a whole coconut i have been trying to decide what to do with.

    i was wondering if you can make candy with it…. like
    chocolate coconut haystacks … or mounds bars. … or maybe even cutting the fresh coconut into small
    pieces and coating them with chocolate.

    i dont know anything about cooking or how fresh coconut would behave when making any candy with it.
    what do you think ?

    thanks Maria …. i’m gonna try it. I only have what i call a day off… once a week and thats when i try things like this. normally during the week i would never do it but one day weekly i allow myself anything i want. of course no grains and no sugar but i do indulge in more carbs than usual. then…. the next day after the day off… i fast for 24 hours. that gets me right back on track. lol

    i do enjoy overfeeding myself on protein and carbs but i dont do it to real excess. i have to say that on those overfeeding days….. i feel even better than i do on my usual days of limited protein and carb and very heavy veg meals. not sure why that is but i really love it. lol

    i have lost alot of weight doing this and the fasting really makes me feel good as well.
    so… i’ll give the fresh coconut a try and make sure i dont get carried away with eating too many treats
    if it comes out well. but…. who knows. lol
    there is always the 24 hour fast that starts the following morning to set things right again.

    These are the bomb! I’ve really been getting into making my own version of Larabars lately but had been missing the chocolate Gu (I used blended bananas on Saturday – did the trick but not as satisfying!) I happened upon Pumpkin-Shaped Mini Ice Cube Trays yesterday! So pumpkin Almond Joys they will be! Thanks for a great and easy recipe.

    I made these and they are super easy. A bit too chocolatey for me tho. Next batch I used 2 teaspoons of cocoa, and to me they tasted better and less bitter. Wonderful candy. Thanks!
