Please note that my pure protein flourless cookies are like a meringue cookie and meringues and humidity do not mix. If your kitchen is very humid, you will not end up with a crispy pure protein cookie outside.

Pure Protein Flourless Cookies
Ingredients
- 3 large egg whites
- ¼ teaspoon cream of tartar
- 1/4 cup Natural Sweetener or allulose
- 2 tablespoons Further Food Chocolate Collagen
- Primal Kitchen Avocado oil spray
Instructions
- Preheat oven to 225 degrees F. Line a baking pan with parchment and spray with Primal Kitchen Avocado oil spray.
- In a small bowl, use a hand mixer to beat the egg whites and cream of tartar with a hand mixer until soft peaks form. With the mixer on low, slowly sprinkle in the sweetener until completely incorporated. Continue to beat until stiff peaks form. Gently fold in the collagen.
- Spoon the mixture into a piping bag and form 1 inch meringue cookies on the parchment that are about 1/4 inch apart from each other.
- Place in oven and cook for 1 hour, then turn off the oven and let the cookies stand in the oven for another 20 minutes.

The collagen is needed, but you could use a different flavor, or they sell an unflavored collagen too 🙂
How do you store these? In wonderful year round humid Florida and would like to take these to a party, but not sure how well they would store and then travel.
The humidity will be a challenge. Meringues are finicky. But I would store them in a sealed container in the fridge until it is time to travel 🙂
I have unflavoured collagen, and cacao powder, how much of each would I use?
I haven’t tested it, so I don’t have exact measurements to offer you.
Could another protein powder be used instead of the collagen?
I’m thinking of Equip Strawberry flavor for a delightful spring meringue cookie.

Maria, wow! Thank you for these scrumptious recipes! You give people hope to maintain this incredible lifestyle and not feel the need to return to high carb foods again. Gamechanger! However, for someone who is in their very early twenties, is on a carnivore diet, and has always maintained a healthy lifestyle, has no autoimmune issues, has high muscle mass, but is looking to lose around 10 pounds of fat, how would you go about psmf? (How many days on/off it?) Can I still cook my chicken/beef mince/steaks in butter/tallow? As the meat will already be ‘lean’, will you still reach your desired results by cooking it in butter/tallow? I’ve watched your inspirational youtube videos, but for someone who already has ample muscle mass and is only looking to lean out, how many days could I do psmf for it to ‘work’? Also, is psmf like regular carnivore in terms of you can eat ‘as much protein as you desire’ or is there a limit, as I find if I’m not eating enough fat, I’m still hungry; is psmf meant to leave you hungry? Thank you for your kind words and support! With only 10lbs to lose, PSMF is not for you. PSMFF are VERY low calorie days for people who need to lose a lot of weight. So for you, at 10lbs left to lose I would focus on your regular weight loss keto macros and weight training for better body composition.
