Low Carb Graham Crackers
Testimony of the Day
“A lot of people may not be aware of this, but it is pretty much a given that at some point in your eating disorder healing you will realize that you don’t know HOW TO EAT!!! It truly sounds ridiculous I know! I struggled with Bulimia & Anorexia for 35yrs before I told anyone…when I began to walk-out my healing journey, I said to myself “I don’t even know how to freakin eat”!!!!!
When I wasn’t bingeing and purging, I severely restricted from food and water. It was a cycle of pure madness, and I never felt good…and yes! I do mean NEVER! Oh, of course I was a bible of calorie and fat scriptures! But, I did not know how to eat. I did not know how food had such a HUGE impact on not only ones body, but ones brain and spiritual health as well!
As I began to follow Maria Mind Body Health I began to purchase her books, and when I began reading her books I began to incorporate some of her healing techniques into the repair of my 35yr struggle of Bulimia and Anorexia. Along, with my clinically diagnosed Bulimia and Anorexia, I was also diagnosed with PTSD. During my 8yr recovery journey, in and out of therapist and treatment centers, I was left with the results of being on six different medications, and a 50lb weight gain. With Maria Mind Body Health I have been off all medication for almost 2yrs. However I am still working on the 50lbs. Because of all the changes I feel Maria has helped and inspired me with, I make sure I refer all my girls in ANAD Healing 4 Women’s Group (Online & Offline Group), and all my gals at Women’s Empowerment Alliance check her out. Love you Maria Wojcik Emmerich and all you & Craig do. Thank you.♥” -Tamy

Yeast Overgrowth
I just read a funny yet disturbing article on NPR called, Auto-Brewery Syndrome: Apparently, You Can Make Beer In Your Gut. A 61-year-old man was getting drunk in the middle of the church, but there is one major catch, he didn’t drink a drop of alcohol that day! Sure, this Texas mad did have a history of brewing his own beer, so was he still drunk from the previous evening? Nope, his gut was fermenting the carbohydrates he ate into alcohol!
One day he went to the emergency room because his symptoms, such as dizziness, were so bad. The nurses ran a Breathalyzer test and his blood alcohol concentration was a massive 0.37 percent! That is about 5 times the legal limit for driving in Texas. They basically blamed him for being a “closet drinker” at first, but a gastroenterologist and Cordell wanted to really see what was going on. They researched the man in an isolated hospital room for 24 hours and gave him high carbohydrate foods and would check his blood-alcohol. At one point in this 24 hour period, it rose to 0.12%! Yep, he had his own Sam Adam’s Brewery in his gut!
What was happening is he basically had an extreme case of yeast overgrowth, also known as candida. The strain this man had was called Saccharomyces Cerevisiae. Eating a diet filled with starch, yeast, and sugar causes your gut to over-produce these organisms which causes a bunch of issues, besides getting drunk!
Everybody has a sea of microorganisms, (bacteria, viruses, fungi) that reside in our intestines, throat, mouth, nose, you name it. Most of the time, these microorganisms do not cause illness, unless our resistance becomes lower. Candida albicans is a yeast that lives in the intestines, mouth, throat and genitourinary tract of most humans and is usually considered to be a normal part of the bowel flora. Candida enters infants shortly after birth. In a healthy baby, the growth of the yeast is kept under control by the baby’s immune system. But, if the immune system is compromised and weakened, problems such as thrush can happen. Candida coexists in our bodies with many types of bacteria in a specific balance. Healthy bacteria work to keep candida growth in check in our body ecology.
In a healthy body, the immune system keeps candida growth under control; but when an immune response is weakened, candida growth can happen too fast. It is an “opportunistic organism,” and will try to colonize all bodily tissues. The uncontrolled growth of candida is known as candida overgrowth.
The first signs of candida overgrowth are nasal congestion, sore throat, abdominal pain, belching, bloating, heartburn, constipation, diarrhea, rectal burning or itching, vaginal itching and discharge, PMS, prostatitis, impotence, frequent urination, burning on urination, and bladder infections. But, if the immune system remains weak long enough, candida can cause fatigue, lack of concentration, mood swings, dizziness, headaches, bad breath, coughing, wheezing, joint swelling, arthritis, failing vision, ear pain, deafness, tearing eyes, muscle aches, depression, irritability, sweet cravings, numbness and tingling, cold hands and feet, asthma, hay fever, allergies, hives and rashes, eczema, psoriasis, chronic fungal infections.
Causes of Candida:
1. Antibiotics
2. Steroids
3. Over-the-counter anti-inflammatory drugs
4. Oral contraceptives
5. Mercury dental fillings
6. Drugs or alcohol
7. Chlorinated drinking water
8. Meat, poultry or dairy products from animals fed antibiotics
9. Sugar, starch, wheat, and yeast consumption
If candida overgrowth is present certain foods should be eliminated and specific supplements, such as probiotics (NOT more anti-biotics) need to be incorporated. Even things like most vinegar must be eliminated. Coconut Vinegar is the only vinegar I use in my recipes because it would not increase the candida overgrowth.

Another Testimony on Candida
Maria, I wanted to tell you that I have had an unexpected benefit to starting eating your way. I haven’t seen you address this before, and maybe it is a bit “gross”, but for the first time in YEARS, my tongue is pink! I can’t remember the last time I didn’t have a thick white coating on my tongue. I still have a long way to go, but I’ve started eating the Maria way about 4 weeks ago. I think I may have some additional allergies that I need to address, but I am working on it. Thank you so much for what you do! -Argia (a white tongue is a sign of yeast overgrowth)

3/4 cup coconut flour
1/2 cup vanilla whey or egg white protein
1/2 tsp Celtic sea salt
1 tsp baking powder
1 tsp cinnamon
6 TBS coconut oil OR butter softened
1/2 cup Swerve
1 tsp stevia glycerite (optional, I think blending sweeteners gives a better taste)
1 TBS vanilla
2 eggs
Preheat oven to 300 degrees F. In a medium bowl, mix together the first six ingredients. In a separate bowl cream together the coconut oil, sweetener, vanilla, and eggs. Slowly add in the coconut flour mixture until you have a thick dough.
Grease 2 pieces of parchment paper with coconut oil spray (click HERE to find the one I like). Place dough in between the greased parchment and roll the dough to about 1/8 inch thick (try to make it even throughout or the thinner areas will burn). Remove top parchment and use a pizza cutter to score the dough into Graham cracker shapes. Use a fork to poke holes in down the cracker (see photo). Place the parchment onto a cookie sheet and bake for 15 minutes or until light golden brown. Serve with unsweetened coconut milk or almond milk.
CHOCOLATE VARIATION:
-Replace:
1. Chocolate whey for vanilla whey
2. Chocolate extract for vanilla extract
3. Chocolate stevia in place of stevia glycerite
-Add in 1/4 cup unsweetened cocoa powder

Is the 101 Calories for one cracker or how many?
Yep, it is for one large graham cracker.
Happy Eating!
Should these be crispy like regular graham crackers?
Nope… The crispy one is the first version made out of almond flour and whey protein.
But these are tasty;)
They are tasty! I need graham crackers crumbs for a recipe. I was just going to grind these grham crackers up, but do you have a different/better suggestion?
Yes! Use the one listed under Graham Crackers.
It is also found in the Kids Chapter of my Nutricious and Delicious cookbook.
Happy baking;)))
Also, how many graham crackers did you get out of this recipe?
It makes 6 large crackers:)
The gramham cracker crumbs and my recipe turned out great. Thanks!
Yahoo! I appreciate you taking the time to write;)
Hello. I would like to try this yummy recipe. However, I do not have whey or egg white protein on hand. Is it ok to substitute with real egg whites? Thankyou. 🙂
No, real egg whites won’t work…sorry!
I am DEFINITELY going to give these a try!
Thank you so much for posting recipes on Facebook! I loved graham crackers but can no longer eat them for several reasons and today is the day that…..I’m sending you a cyber kiss. No, really but don’t take it personal, you’re helpfulness is extremely appreciated now I’ll be able to enjoy something different on special occasions. I loved graham crackers but they don’t love me, shoot they don’t even like me anymore. I’ll change that my GI tract loathes them now! Thanks, I’ll be giving these a try for sure.
Awe, thank you! 🙂
I’d love to make these! I have a quick question about the whey, however. I just received (free) about 7 large bags of low-carb vanilla protein, but it is not whey. It is caseinate. Would it work the same? What are your thoughts on caseinate? Thanks so much!
Not sure. Haven’t seen caseinate protein powder before.
Hi Maria!
I recently purchased your kids, sweet and savory ebooks and I love them….thanks for sharing all your great ideas!
I’m looking for a recipe to use for teething biscuits for my 6 1/2 month old using coconut flour. Would these work or are they too crumbly….is there a way I could make them less crumbly?
Thanks! You could try added some protein powder and a little liquid to make them bind better if they are too crumbly. 😉
I was wondering if you could put some strawberry sugar free jam on the inside of these, put another one on top and call it a “healthified” poptart??!!??
I don’t understand how each cracker only has 0.7g carb. Coconut flour has 3 grams net carb per 2 Tbsp (8g carb minus 5g fiber). That makes 3/4 c equal 18g of net carb. So if the recipe makes 6 big crackers then that is at least 3g of carb per cracker plus the carbs in the cinnamon, eggs and baking powder.
It does look like a really yummy recipe but I don’t think the carbs were calculated correctly.
To make the servings size match the traditional cracker (31 grams) I have to make it 11 servings. I corrected it above. 🙂
Can I use regular stevia in place of the glycerite? I don’t have the glycerite but I’d like to make these.
Yes, that will work. 🙂
I just made these last night. The dough was so crumbly dry and hard to roll out I was skeptical, but then…
What the YUM ?!
These are delicious!
Thanks! 😉
Hi Maria! I don’t have Swerve…what are some substitution options?
I have several options here:

Hi Maria,
Do you have the recipe for the marshmallow-looking things in the background posted on your website?
If not, in which of your books can I find it?
Thanks!
That is coming soon! 🙂
I can’t wait to make these! I made your cheese crackers and they were to die for. I’m so excited, they started carrying Swerve at Meijer! Now, I can give these a try too. I didn’t realize Swerve had so many carbs, 5 grams for 1 tsp. Do I need to be concerned about this when trying to lose weight? I know you said don’t subtract fiber, but what about erythritol?
They are sugar alcohols that aren’t digestible (that is why still 0 calories) so they can be subtracted. 😉
These are awesome! I used coconut sugar because it was what i had on hand. I cut them into little shapes. I liked them, my toddler liked them, the chihuahua liked them…lol. Now I am thinking of making a peanut butter bacon one for the dogs. Thanks for the recipe! I actually enjoy that they arent crispy.
Is there a way to replace Whey protein…I am allergic to Whey….aaargh…
Yep! I use jay Robb egg white protein.
Or any of these: http://astore.amazon.com/marisnutran05-20?_encoding=UTF8&node=56
Can we replace swerve with ethrytol ? And do we have to use egg/vanilla whey protein? Thanks!
Yes you can use swerve.
Yes you need the protein powder.
I just made these today and they were crumbly and didn’t look anything like the photo 🙁 any suggestions? They are delicious, just hard to eat as a cracker. Thanks!
So sorry:(
Maybe yours would be a tasty cereal! Lol
