Protein Sparing CHERRY DANISH
I am blessed to live very close to a special river. If you know where I live you probably know which one I am talking about, but in order to keep my sanctuary quiet, I’m not going to say which one (please don’t be mad, I was the ONLY kayak on the river the day I took these photos!) A few years back on July 19th, it was Micah’s 2nd birthday. I had the opportunity to meet him in Ethiopia that May but the US Embassy wouldn’t let us bring him home. They told us it would only be 4 weeks until we could go back to Ethiopia to bring him and Kai back to the US, but it ended up being 6 months. During this waiting period, I grieved and worried about them daily. Missing Micah’s birthday was extremely hard to I decided to kayak the quiet river by myself and take a “personal day.”
Well, Mother Nature was not my friend that day and I should have listened to her when she spoke to me as I started my trek. As I put my boat in the water, her clouds “thundered” at me, but I’m German… yep, stubborn. I had a plan and I was sticking to it! Besides, I already had my bike at the end of the river so I could paddle to the end, leave my boat at the end of my trip, bike back to my car, put my bike on my car, drive to get the boat, then drive home… yes, it is a hard process to paddle by yourself! But I LOVE IT!
About 2 miles down the river I had some massive lightning strike and a downpour came. I tipped my kayak over which I have never done and lost my paddle down stream. What really was a hardship is my phone was soaked and no longer worked. So I decided to do what I had to do. I got on shore with my boat and walked through the woods in my bathing suit (I lost my cooler with my food and clothes). I didn’t really know anyone in the town I was close to except Lori, who owns a beautiful day spa. That meant a long trek through town in my bathing suit and a heavy kayak in the pouring rain!
I finally made it to Lori’s Spa… where everyone looked beautiful with their hair and makeup done while I walked in soaking wet covered in mosquito bites and cut up by buck-thorn. I didn’t really care at that point, I just wanted to get home:) Lori helped me out by getting her husband’s truck so she could help me get my kayak home too. But the fiasco didn’t stop there. The rain was fiercely coming down and as Lori turned on the windshield wipers, they DIDN’T WORK! Oh boy! I live way out in the country so we drove slow and used our hands to help her see. When we pulled into the driveway I was filled with relief! I will never forget Micah’s 2nd birthday adventure. The craziness sure helped me keep my mind off of my sadness! What a “personal day!”
Once I got home, I made a hot cup of tea and created a Protein Sparing Cherry Danish. Nothing cheers me up like cooking and baking!
I added a little cherry extract to the custard!
Cherry Danish
Ingredients
- PASTRY:
- 3 extra large eggs separated (reserving 1/2 of the yolks for filling)
- 1/4 tsp cream of tartar
- 1/4 cup Natural Sweetener or 1 tsp stevia glycerite
- 1 tsp cherry extract or other extract like lemon/strawberry/blueberry/almond
- 3 TBS sour cream or coconut cream if dairy free
- 1/4 cup strawberry egg white protein powder OR Vanilla Egg White Protein
- FILLING:
- 4 oz cream cheese softened (or coconut cream if dairy allergy)
- 1/2 of the egg yolks from above
- 1/4 cup Natural Sweetener or 1/2 tsp stevia glycerite
- 1 tsp cherry extract or other like lemon/strawberry/blueberry/almond/raspberry
- DRIZZLE:
- 1 oz cream cheese softened
- 1 TBS Natural Sweetener or a drop of stevia glycerite
- 1/4 tsp cherry extract or <g class="gr_ gr_181 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar multiReplace" id="181" data-gr-id="181">other extract</g>
Instructions
- Pastry directions: Separate eggs, putting the whites in a large bowl and the yolks in a medium bowl. Take 1/2 yolk out and put it in a little dish to reserve for filling. With your electric beater, whip whites and cream of tartar until very stiff, then add the protein powder.
- Add sour cream, extract, natural sweetener to the yolks and beat well until smooth. Gently fold yolk mixture into the whites, using a big spatula<g class="gr_ gr_146 gr-alert gr_gramm gr_inline_cards gr_run_anim Style replaceWithoutSep" id="146" data-gr-id="146">,being</g> careful to get it all blended well. Grease a cookie sheet and plop 6 equal mounds of batter to make 6 Danish.
- Make an indent on each mound and fill with filling.
- Filling: Soften cream cheese and add the 1/2 egg yolks, sweetener, extract, and flavoring.
- Fill pastries.
- Bake about 20-25 minutes at 300 until golden brown. Remove and allow to cool.
- To make the Drizzle: warm the cream cheese and stir in the natural sweetener and extract.
- Place the mixture into a piping bag (or a small ziplock after it has cooled a bit and cut a tiny hole cut into the corner) and drizzle over cooled Danish.

Starbuck’s Danish = 420 calories, 25g fat, 7g protein, 39 carbs, 1g fiber
“Healthified” Danish = 145 calories, 11.7g fat, 9g protein, 1.2 carbs, 0 fiber 72.3% fat, 24.5% protein, 3.2% carbs

My favorite summer activity is kayaking, but with small children, my most frequent summer activity (that I also love) is hiking. Now that my youngest is five we can go on hikes up to five miles…that’s pretty good with five children of various ages. I like to make trail art with the kids…we take items we find on the hike and arrange them artistically, leaving them for the next hikers to enjoy. Last fall we collected all colors of leaves and arranged them in color order all along a fallen log at the edge of the trail. If it didn’t blow away, I’m sure it brought pleasure to some other hiker! But kayaking remains my favorite…even though I have a fear of looking in the water…yes, it’s irrational, but I can’t seem to shake it. I just keep my eyes straight ahead and pray I don’t have to get our of my boat!!

Maria, I have to update you. Since I started the diet in March, I went from the 150’s and only have 2 lbs till I hit the 120’s. I have just been on the maintenance plan and still losing. My BP went from 125/80 to 103/65. Feel great and have more energy now. So excited!

Thank you so much!! I ended up making the first batch into ‘bars’ .. poured the mixture onto a parchment lined bar pan, baked for about 10 mins, then spread the filling on top and finished baking it. It turned out pretty good and is delish, but sooo can’t wait to make the actual danish! 😀

My favorite summer activity has to be Swimming. I have bad knees so it’s really hard to do anything else. Occasionally I will go on an easy bike ride but it depends on my knees. Although, I have to say… since starting your way, maria :)…the swelling in my knees have gone down. I’m so happy about that. I can walk a little more, a little faster and at time I “feel” like I can run. I look forward to the day when I can :).

My favorite summer activity is gardening. First year of trying to grow enough to take to market, it is so rewarding but surely a lot of work. My fiance and I are basically weekend warriors(both of us have full time jobs), so an acre is a whole lot of work. Here is to early mornings as in the Southwest, its just too darn hot to be out in the afternoons.
Hmmm… I love the results of having a garden, but gardening can sometimes be a lot of work! I guess I would have to say camping is one of my favorite summer activities — especially sitting around a campfire. I also have a question. In this recipe you list using either whey protein powder or egg white protein powder. Are they interchangeable in all of your recipes?

How long before the cravings subside:(
It takes 2-4 weeks to fully keto adapt. After that if you have leptin resistance, you have to heal from that. Everyone is different but that can take a couple months in some cases.
I have acid reflux issues and wonder if keto is for me…I also have osteoporosis and hopefully there is a protocol I can follow to avoid the dreaded fosomax, prolia etc.

It turns out that my favorite summer activity is walking in Norway. Everything seems to have an incline, some gentle, some not. I absolutely loved Norway (I was there for 10 days) and was able to continue to eat “keto adapted” almost all of the time, which made it easy to get back to it when I got home, where it was time to get REALLY serious and start on your 30 day accelerated healing/weight loss plan (I’m on day two of that and am loving it – I even convinced my husband to do it with me and he’s finding the meals very tasty). Now that I am home, I am challenging myself to find inclines to go up and down, because I found that I really like how I FEEL when I am taking these kinds of walks!

My favorite summer thing to do is go to a water park, ride the rides with my son, and play in the water! I love being in the sun, too. I know people always say it’s unhealthy, but it feels so amazing to get some sun on the skin! Summer feels like a vacation every weekend. 🙂 My hubby and I also take the dogs for a hike through the battlefields and other historical sites (we live in VA). We are a lot more active in the warmer months than we are in the winter.

Thanks for the wonderful recipe. I made these for my family this morning, and they tasted great! Unfortunately they did not look AT ALL like yours! How did you get yours to have edges that puffed up? Mine came out circular with thin edges. I also noticed that when you add the whey powder to the whipped egg whites, they deflated quite a bit. Did you use whey powder in yours or egg white protein?

I couldn’t figure out where to ask this, so I hope commenting is OK. I have a couple of your books and can’t remember in which one – maybe it’s both of them – you discuss adequate protein based on lean body mass. I know my protein needs to be about .5 grams/day of lean body mass but I’m at a loss when it comes to accurately measuring LBM. I get ridiculously different numbers depending on the formula I use:
The Boer Formula: 143.3 lbs LBM
The James Formula: 68.3 lbs LBM – this one also told me my ideal body weight was 90 lbs! 😮 (I’m 5’3″)
The Hume Formula: 149.3 lbs LBM
With such different totals I’m finding it difficult to determine how much protein I need, which throws my entire ratios out of whack. There is nowhere nearby to get water tank testing or body scans and I don’t think I could afford it anyway. And I’m not convinced that calipers are a good way for me to measure since I have zero experience doing it. Plus, I carry most of my weight in the belly and hips where the measurement is done so I’m afraid that will skew the results.
What is your advice on obtaining an accurate LBM measurement?

My guess is you are in the 110-120 pound range at that height. So try getting about 60g of protein a day. 🙂

I love shopping at the Farmer’s Markets in my area. There are a lot of organic farms here and a lot of them bake there own goods to sell at the markets.
I love the idea of gardening, but gardening doesn’t love me. We do a lot of grilling at our house and sitting together outside and eating together is always a nice family event. 🙂
