A flaxmeal- or coconut flour-based Muffin in a Minute is my current favorite. I like the way it tastes ( I like other tastes more, but bear with me). The MIM is easy to vary in flavor (sweet or savory) and form (pancake, waffle, sandwich, muffin…) and so very versatile, and it is SO quick and easy to make, and to clean up after! That makes it a winner in my book! Also its high fiber keeps me feeling full and content most of the day. So, for these reasons, it is the break-fast I turn to most often.
For flavor alone, I’d have to say my low-carb version of what my mother called a German Pancake (it has crispy edges) topped with a generous drizzle of xylitol- or maltitol-based maple syrup, homemade (low-carb of course) cranberry sauce, and dolloped with whipped cream. It’s a real indulgence since it takes time to make.

    I just
Love Hollandaise Sauce.. So anything with an egg base topped with Hollandaise sauce would be my fav. Maria, in looking at Low Carb Yum (once again the sauce draw) had low carb bread with it. I’m assuming you are giving suggestions but for us to partake in the realm we are eating in ?

  • I have one that I’m very into right now and you just might be grossed out: browned butter with swerve!

Help!!!! I’m flying to 9000 ft above sea level and am being told I have to eat more starchy and sweet foods so I don’t get altitude sickness! Is this true?

  • Nanabella says:

Butter-cooked over-easy eggs, on a bed of spring mix that includes arugula and spinach, splashed with a little balsamic vinegar, sprinkled with salt & pepper, with chunks of avocado, tomato, and cucumber on the side, and some fresh blueberries…

I can’t wait to try some of these recipes! My favorite quick breakfast is egg salad made w/ avocado oil mayo over spring greens drizzled w/ evoo/balsamic and some himalayan pink salt sometimes 1/2 avocado mixed in.

I have flown numerous times while being on a Keto way of eating & there was not one single negative thing. The positive things are that I weighed 15 # less & had my swimming suit packed 😄. I also feel so much better over all. Don’t stop the Keto for a trip!

  • DonnaZ says:

Maria, I thought you said it was important what we ate at our “breaking of the fast” not that we had to eat right when we got up. I have been wondering if having a cup of coffee with cream & a bit of our kind of sweetener when I got up was considered my first food as I don’t eat “food” for another 3 hrs. Thx much for info & recipes Maria 🙂

  • DonnaZ says:

Oh really! 50 calories breaks the fast! I never heard that in my whole life. And I’m quite middle aged 🙂 THANKS so much Maria for all your help. You give many of us hope and encouragement that we can do this, feel better, look better….be better 🙂

  • DonnaZ says:

Fortunately when I looked up 1 Tbl whipped cream (which is sweetened with Xylitol) it is only about 10 cal. YEAHH

  • Becky says:

DonnaZ I think Maria was saying that as soon as you eat more than 50 calories you will no longer be in a fasted state, so essentially you will be breaking your fast. We need to be careful not to eat too many calories too soon. Then when we do break our fast, eat the proper balance of fat, protein and low carb. Breakfast will be lots more than 50 calories!
