Sugar Free Marshmallows

Ingredients
  

  • 1 cup cold water divided
  • 2 tablespoons Further Food gelatin
  • 1 1/4 cup Wholesome Yum simple syrup
  • 2 teaspoon vanilla extract or other extract like chocolate or strawberry!
  • teaspoon almond extract omit if nut free
  • 1/8 teaspoon Redmond Real Salt

Instructions
 

  • Lightly grease an 8-inch square baking dish with coconut oil. Place ½ cup of the water in a stand mixer (or in a large bowl if using a hand mixer) and whisk in the gelatin. Let sit for 1 minute to allow the gelatin to soften. Then turn the mixer on medium high to whip until the mixture looks like whipped egg whites.
  • Heat the sweetener and remaining ½ cup of water in a sauce pot over high heat, whisking continuously, until the mixture reaches 235°F to 240°F (soft ball stage), 3 to 5 minutes. Remove
  • the pot from the heat and stir in the extracts.
  • With the mixer on low speed, slowly add the hot syrup to the gelatin mixture. After all the syrup has been added, increase the speed to high and mix for about 5 minutes, until the marshmallow mixture has medium peaks (it will look like whipped egg whites).
  • Working quickly to prevent the marshmallow mixture from setting up in the bowl, pour it into the prepared baking dish. Allow the marshmallow to set at room temperature, about 5 hours, then cut to the desired size. By the next day, the cut marshmallows will have dried out enough to resemble store-bought marshmallows. Store extras in an airtight container for up to a week.

    Hi Maria I’m so glad I subscribed to your utube channel. I must be honest and say I thought u where to strict keto to follow at first. Till I saw a utube video and seen your recipe on the protein bread.
    I now have ordered a couple of your books. Can’t wait to get them.
    I’m older now and am really doing keto better this time and I live it and alot of intermittent fasting..but my weight loss isn’t fast enough but I try to look at it like my body is healing on the inside.
    No medications either I’m so blessed..thank you for all you do.

    Hey! They look easy to make! I was trying to order the Wholesome Yum liquid allulose but I can only find the Wholesome Yum Sugar-Free Simple Syrup. Is that the one I need to purchase? I think I would need two if I have to use 1 1/4 cups. Thanks! 🙂

    Hi there! Just ordered the simple syrup (and a few other things) can’t wait to try this recipe! But reading again and it say “sugars” but only seeing the simple syrup and watching the video is looks like another sugar is in the pot. Would you mind clarifying for me please 😊 Thank you!!!

      Sorry, I will change the written instructions to specify. Only liquid allulose OR simple syrup is needed 🙂
