COCONUT OIL AND THYROID HEALTH
Many dietary oils can negatively affect thyroid health. We cook with them almost every day and they are plentiful in commercially prepared foods. It is possible they are among the worst offenders when it comes to the thyroid. They are known as vegetable oils or polyunsaturated oils. The most common source of these oils used in commercially prepared foods is the soybean.
Unsaturated oils block thyroid hormone secretion, its movement in the circulatory system, and the response of tissues to the hormone. When the thyroid hormone is deficient, the body is generally exposed to increased levels of estrogen. The thyroid hormone is essential for making the ‘protective hormones’ progesterone and pregnenolone, so these hormones are lowered when anything interferes with the function of the thyroid. The thyroid hormone is required for using and eliminating cholesterol, so cholesterol is likely to be raised by anything which blocks the thyroid function.
Coconut oil, on the other hand, is a saturated fat made up primarily of medium chain fatty acids. Also known as medium chain triglycerides (MCTs), medium chain fatty acids are known to increase metabolism and promote weight loss. Coconut oil can also raise basal body temperatures while increasing metabolism. This is good news for people who suffer with low thyroid function.

“My pantry looks a LOT different today than it used to… and I like it.”
I say the exact same thing to everyone! It’s FUN! I feel like I’ve turned into a little chemist, with Maria’s teaching. I’m spreading the word, far and wide, on twitter and facebook. I’m teaching my 3 sons, too. My husband is always asking me funny things like, “What is xanthan gum?” as he searches the cabinets & pantry. If he’d have asked me that a year ago, I wouldn’t have known.
I forgot to say what I’d make! I’d make all the things!! I’d make every kind of fat bomb out there!
I put it in my daily coffee. No recipe needed. 🙂
Fudge ~
would love to use it to make a coconut oil-butter saute blend for cooking
Merry Christmas to you and your family, Maria. You are a blessing to me and so many. Winning would be a wonderful Christmas miracle 🙂 If I do, I’m looking forward making fudge! And lots of other chocolate goodies 🙂

I use coconut oil in all the ways you mentioned above, but my favorite use is in my daily cooking, in place of vegetable oil, because it is heat stable, unlike most other oils, including olive oil. My favorite recipe would be making a curry. First saute the onions garlic and vegetables in the coconut oil, use coconut milk for the sauce and add curry powder and/or turmeric. Now that is a winning anti-inflammatory combo!! And delicious!!
I use this for FAT BOMBS… we love the flavor of this product.
My daughter asked for a low carb gluten free chocolate cake for her birthday and we also have a little every day for a supplement. And then in smoothies and multiple other applications 🙂
Fat bombs…..
peppermint patties of course! mmm!!!

I use coconut oil in my bulletproof coffee every day, but I’d love to try peppermint patties! Hubby and I used to bowl in leagues, up until about 6 years ago. Before we went bowling, we’d have one peppermint patty each (although sometimes we’d split one). We used to say that it helped us bowl better! Thanks for the opportunity, Maria!
I use coconut oil every day for so many recipes. It makes great bulletproof coffee, but I also use it for making chocolate. I’ve never tried making peppermint patties, but that sounds delicious!

I would love to have this!! I am always running out and to get good quality cooking items around here is difficult at best. It seems purchasing good quality cooking items will all have to be done on the internet, limiting my ability to throw things together after a quick trip to the local store.

I love coconut oil so much! I bake with it, cook with it, use it on my body and my hair… but one of the biggest reasons that I love coconut oil is changed my rescue dogs life. Because of something as simple as this beautiful healthy fat, my beautiful fur-faced baby started eating again and regained her strength after being used as a bait dog and left to die in a tiny cage. Coconut oil is a little miracle in a jar and a tiny bit a day keeps Shelby living the good life. Keep being awesome Maria, you are also changing peoples lives!
