Low Carb Beef Stroganoff

Testimonies of the Day (Yes, they all came the same day!)

MOOD TESTIMONY: “Hi Maria, Thank you for your wonderful advice!  I started your plan a couple of months ago and I am so happy with how I am feeling.  Mentally and emotionally this is the healthiest I have felt in many, many years! I am off my depression medication and I am sleeping so much better.  I feel more motivated and have more energy than I can ever remember having before. I honestly can’t imagine feeling any better than I do right now!”- Carrie

WEIGHT LOSS AND GUT HEALTH: “It’s day 6 and I’ve lost 6! I feel good too! No bloating, sore intestines and great energy! Thanks Maria!” -Nan

AUTISM TESTIMONY: “Hi Maria! My family saw an immediate shift in behavior with a gluten, casein  soy, and sugar free diet. I honestly thought that we would have a grieving period over cake pops from Starbucks. In the past we had an upset little girl every time she saw that dang green mermaid. I honestly think yanking the processed sugar out COMPLETELY was way bigger for our child. She is 4 and has an autism diagnosis. It’s mostly speech and language we are dealing with so explaining the changes to her was not gonna help a thing. She’s on a whole new protocol, but this diet was the first step. Very impressed by the removal of sugar. She takes one simple no for an answer now. It’s crazy.”- Heather

CONSTIPATION TESTIMONY: “Maria, it’s amazing – after just one day on the supplements no bleeding or pain during and after #2 for the first time since August! Thank you :)” -April

WEIGHT LOSS AND MIGRAINE TESTIMONY: “I’ve been eating the Maria way for 19 days and feel great. The webinar you taught really helped too. I’ve lost 8lbs and I’m never hungry! Thank you! My husband has migraines 3-4 times a month and hasn’t had one yet this month!” -Stephanie

Butter, for frying
Half a small onion
LOTS OF MUSHROOMS:)

1 clove crushed garlic

Fry the meat and mushrooms in butter on medium/high heat. Remove from the skillet and sautee onions and garlic till onions are tender. Add tomato paste, then the meat. Pour enough beef broth to almost cover the meat. Simmer on low till meat is tender, about 1 1/2 hour… and about 30 minutes for ground beef. Most of the broth should have evaporated. Taste and add salt and pepper to taste. Add in the sour cream and heat through.

Plan Plan Plan is the key to success

Recipes like my beef stroganoff and cabbage “pasta” can be found in my cookbook The Art of Healthy Eating Slow Cooker. Cabbage is so cheap and lasts forever, I always keep one in my fridge. Cabbage pasta can be made days ahead of time and stored in an air tight container in the fridge for easy additions to dinner.

One trick that works for our family is that Craig helps clean up after dinner, while I prepare dinner for the next night. I often fill my slow cookers with a main dish, side dish and dessert (yes, I have 3 beloved slow cookers). Then in the morning, all I have to do is take the slow cooker shell out of the fridge and turn them on. That takes so much stress and anxiety out of my day!

Happy Eating! Thank you all for your love and support!

Hi, I am following Atkins and this beef stroganoff recipes looks good but do you have the carb count and servings per recipe figured out…doesn’t seem like it could be that much but with Atkins every carb slows me down so badly…thanks for your help and your wonderful site and blog.

  • Well, it depends on how many mushrooms you use, but in general this recipe is very low in carbs:)

  • Denise says:

    Hi Maria!

I love Mushrooms but was told I need to steer clear of mushrooms because of the candida…is this true?

This is the next recipe I want to try 🙂 I’m determined to make it through all of your recipes, and my friend and her friend just ordered your cook book!

  • Yes. With candida, no mushrooms:(

Thanks for your support and interest;)))

  • Just tried this tonight. It’s a hit!! My husband says this is his new favorite meal and I need to make it a regular in our house.

  • Thanks Teresa!

You sure have a healthy family! Keep it up;)

Maria, could this be made in the slow cooker? If yes, what would be the steps?(be specific please! 🙂 Maybe add this to the slow cooker cookbook which by the way needs to come out SOON!!!
(that does say 1 1/2 hours above – 90 minutes to simmer in the skillet, right?)

  • Diana says:

Maria, quick question – making this right now, the meat and the mushrooms are literally on the stove!!! Do I drain the liquid from the meat and the mushrooms, or does that get added with everything else?
    Thank you!!!

What is a serving size? Calorie count if you have one, this looks so good. Thank you, Sherry.

  • Jenny says:

I made this for dinner tonight and my whole family gobbled it up including my very picky husband who was terrified when I said we were eating the beef stroganoff over CABBAGE noodles! :0) Thank you so much for all your yummy, healthy recipes!

  • dpotocki5 says:

Thank you! We tried the Beef Stroganoff and it was excellent with such good flavours. My family actually liked it better with cabbage noodles!

  • Mac5 says:

I am thinking of making this for my family tonight and need a substitution for the sour cream. Would you use coconut cream?

  • Mac5 says:

Will heating my coconut kefir destroy it’s health benefits?

  • Blondee says:

I made this for dinner today, Maria. It was magnificent! Your ‘Nutritious and Delicious’ and ‘Savory’ books have become my cooking ‘bibles’! The entire family loved it, and my daughter with sensory and Asperger’s who is convinced she cannot eat cabbage or mushrooms asked for seconds!

  • Helene says:

Maria, I made this recipe three weeks ago and my husband loved it. This is now his favorite meal and one of my favorite recipes on your website. I am going to make this for him tonight and he will be singing your praises. I read The Wheat Belly Cookbook on Saturday and wish I had done this before buying gluten free processed products. I am now A Wheat Belly Believer!

You forgot the Parmesan. Stroganoff always has Parmesan

  • Valerie says:

No way on Parmesan IMHO, but whatever works. This recipe inspired me a while back, and I’m finally getting around to say THANK YOU. We’ve made it about 4 -5 times now. I just posted this link to a LCHF site (with credit to YOU of course). I am surprised at how delicious this is….and the cabbage gets so wonderfully sweet and flavorful. My whole family loves it.

  • Jamie says:

Is there any way to substitute or have no mushrooms in this recipe? I can’t have mushrooms at this time. Thank you – you are an inspiration to a better lifestyle!

  • Leslie P says:

Made this for dinner tonight. It was soo good! No one realized they were eating cabbage instead of noodles. Thanks for a great recipe!

  • Linda says:

Do you think you could substitute Greek yogurt for the sour cream?

  • Christie says:

Awesome!!!!….My husband said it’s his favorite dish! This was after last night when green bean casserole was his fave. Love it!

  • Jean Moran says:

Last weekend I made a casserole with cabbage instead of noodles. Hubby commented that he would like to try and make a stroganoff using cabbage for noodles. Maria you came through for me again! 😀 This was delicious – even a man who does not really like mushrooms had two servings. (I had reminded him prior to making this that stroganoff isn’t stroganoff without the mushrooms). The only thing I did differently was to add ‘rot gut wine’ while sautéing the mushrooms and while sautéing the onions. Somehow I managed to save a tiny bit for my lunch tomorrow.

  • anne says:

would these cabbage noodles work with a thai peanut sauce – like pad thai? or would that be better with miracle noodles? i miss thai noodles the most.

  • Sara says:

I tried the keto doodle soup and it was super good! My belly was very happy! I want to try the stroganoff this time but was wondering how to make it dairy free? Instead of using sour cream is there a substitute?
