I made a recipe for Key Lime Pie about 4 years ago when we were in the middle of adopting the boys that I totally forgot about!

If you want to make the pie you must start with a “healthified” Sweetened Condensed Milk! So here is a recipe for you to get started on. I will post the pie recipe soon!

I made this last night and put in on strawberries for my boys and they licked the bowl clean! That is saying something when they don’t have much of a sweet tooth!

Sweetened Condensed Milk

Maria Emmerich
Prep Time 5 minutes
Cook Time 1 hour
Total Time 1 hour 5 minutes
Servings 2 1/2 cups


  • 4 TBS butter or coconut oil if dairy sensitive
  • 2 14 oz cans coconut milk
  • 3/4 cup Natural Sweetener


  • If using butter, place the butter in a medium saucepan and heat on high whisking often until butter starts to froth and brown flecks appear. (NOTE if using coconut oil, add at the end).
  • Add coconut milk and sweetener to the saucepan. Mix well and heat on high heat until it comes to a boil.
  • Reduce heat to medium-low and boil, stirring very often and scraping the sides of the pan to keep from burning.
  • Boil for about 45 to 60 minutes or until mixture has reduced by about half. Add coconut oil, if using) and mix well. Cool and store in refrigerator.


Sweetened Condensed Milk = 120 calories, 3g fat, 3g protein, 21g carbs, 0g fiber
"Healthified" Sweetened Condensed Milk = 88 calories, 7.9g fat, 0.7g protein, 2.7g carbs, 0g fiber
Makes 20 servings.

    Looks wonderful! It is so useful for many recipes. Would ghee work in this as a no casein replacement for the butter? I love the butter flavor in foods, but do better without.

    Hey Maria- been all over your site and your blog and just finished reading Keto-adapted- I am fascinated!! I spent 6 months eating raw in an effort to heal my body, increase my cholesterol of 123 and my VitD from 19 under a natropath’s instruction .       This lifestyle can work for you! You will not regret it when you see how good you can feel. Both Keto-30 packages are great options.     Do I need to stir the whole time (30-40 minutes) while the coconut milk is reducing?

      The more you stir the better, but you can set a timer and give it a little stir every 5 minutes or so. 🙂

    at abt 40 min of boiling my coconut milk separated again….doesn’t look as creamy anymore….I added the coconut oil at the end and vanilla…do I blend it to make it creamy? I halved the recipe and it only made 1 cup, should have done the full recipe for the key lime pie I want to make…any thoughts?

      You can’t use too high of heat or go too long. It does thicken a quite a bit once cooled. If you blend in a high speed blender it may come back together. 🙂

    I made key lime pie yesterday and it tasted terrible! I think it was the condensed milk. I stirred it all the time for 45 minutes. I used granulated sweetener instead of confectioners (I didn’t have that). Could that have made a difference?

    Maria, you’re always sharing your recipes, so I thought I’d share one with you! This is a recipe for Avocado Popsicles using your sweetened condensed milk.

    Avocado Popsicles

    2 ripe avocados, chopped
    1/3 (+ 2 TBS) Maria’s sweetened condensed milk
    juice of 2 limes (40ml)
    about 1 cup water
    3 TBS confectioners Swerve
    pinch of salt

    Put avocado, sweetened condensed milk, lime juice, and salt in a blender or food processor and blend.
    Mix the Swerve with water and add to blender. Blend. Mixture should be thick but still pourable. Like a smoothie.
    Pour into popsicle molds and tap on counter to remove any air pockets. Freeze overnight. I was able to get 7 popsicles using my molds.

    I read about fermenting coconut milk in a glass jar with the oven light on. Do I need to drain the liquid before I put the probiotic in? And how long do I leave it in the oven?

    Oh man! I just made this recipe since I had a can of coconut milk sitting around that needed to be used up, and holy moly! This is PERFECT! The texture is amazing, and it tastes great, too! Instead of erythritol, I used a little bit of vanilla stevia and It’s super good! Can’t wait to see how it holds up in baking recipes.

    Thanks for the great recipe! When I made this everything was going well until I added the vanilla… Then it separated and was yucky mess 🙁 I’m wondering do I need the vanilla? Would it be better to use a bean? Put it in when it cools?

    Crazy question, but could you use this the same way regular sweetened condensed is used to create caramel by cooking slowly in jars in boiling water?

    Made this last night and it was amazing! I had to boil it for closer to an hour and 10-15 minutes to get it to reduce and thicken slowly. I put it in the fridge overnight to cool and it continued to thicken some–this morning it was perfect and ready to use in the key lime pie recipe, which is in the oven now 🙂
