Collagen Oreos
This recipe is based on the classic Oreo cookie. Oreos come in various flavors throughout the year, and I love doing the same for my boys!
In the fall, I add pumpkin pie spice to the filling. In the winter, I add nutmeg or peppermint extract. I serve these cookies with a glass of unsweetened macadamia nut milk for dipping—just like I had when I was a little girl!

TIPS ON MAKING COLLAGEN OREOS
One of my many recipe testers pointed out that all of the ingredients for the homemade Oreo filling needs to be room temperature. Otherwise you will end up with clumpy filling.
This is what my recipe tester emailed me about the Collagen Oreos: “They turned out perfect! My picky eater ate 3! My teenage daughters hid theirs so no one would eat them! My oldest enthusiastically said a couple of profanities and could not believe it was keto!!!!! My husband enjoyed them & said they weren’t too sweet, which he appreciated. I think they saved me 1! Great recipe! Thanks for letting us taste test!”
Collagen Oreos
Ingredients
- 2 cups blanched almond flour
- 1/2 cups Further Food Chocolate Collagen (plus 2 tablespoons)
- 1/3 cup allulose
- 1 teaspoon baking powder
- 1/8 teaspoon Redmond Real salt
- 3 tablespoons unsalted butter softened (or butter flavored coconut oil if dairy free)
- 1 large egg room temperature
- 1 teaspoon vanilla extract (or mint extract or other flavor)
OREO FILLING:
- 6 tablespoons unsalted butter softened (or butter flavored coconut oil)
- 2 ounces cream cheese softened (or Kite Hill brand if dairy free)
- 1/3 cup powdered allulose
- 1/8 teaspoon Redmond Real salt
- 1/2 teaspoon vanilla extract (or other extract like peppermint
- Pinch of nutmeg or pumpkin pie spice for seasonal Oreos optional
Instructions
Preheat the oven to 300°F. Line a cookie sheet with parchment paper. Make the cookies: In a large bowl, whisk together the almond flour, chocolate collagen, sweetener, baking powder, and salt. Add the melted butter, egg, and vanilla and stir well to combine into a thick dough. Roll out the dough on a large piece of parchment until it is ¼ inch thick. Use a round cookie cutter that is 1½ inches in diameter to cut out the cookie shapes. You will get about 50 cookies. Place the cookies on the prepared cookie sheet. Bake for 18 to 20 minutes, until the edges are lightly browned. Turn off the oven and leave the cookies in the oven for 15 more minutes to crisp up. Remove and allow to cool completely. While the cookies are cooling, make the filling: Put the butter and cream cheese, in a medium bowl and use a hand mixer to mix well. Stir in the sweetener, salt, and extract or spice, if using. Taste and adjust the sweetness to your liking. Once the cookies are cool, pipe or spread a tablespoon of the filling on a cookie. Top the filling with another cookie to make a sandwich. Repeat with the remaining cookies and filling. Store extras in an airtight container in the refrigerator for up to 5 days.Nutrition

TESTIMONY OF THE DAY
“In September 2020 my father passed away from Covid unexpectedly. He was a diabetic, through my depression of losing him I wanted to get healthy. My weight had skyrocketed to 290. I came back at 3 months took blood test and the three days later I went to the doctor. He walked in the room and said WOW!! What in the World you just reversed everything but I still want to monitor you. I came in at 290 three months prior and got on the scale at 210. 80 lbs down in ONLY 3 months I actually amazed myself and I was off every single prescription.
My determination was higher than ever it said ok get under 200 you can do it. I stopped snacking and stuck to 2-3 meals a day.
As I was excited on this journey I was fascinated with MariaMindBodyHealth.com website then I heard someone only talking about intermittent fasting. When I incorporated that with a regular home improvement projects, and walking before I knew it I literally had to clean out my size 22 and was sliding into a size 8, a week later a size 6 until I got into a size 4. I actually started to lose energy and adjust everything in my macros and went back to a size 6 where I have stayed since 2020.
I’m now a healthy 130lbs. The doctor when he weighed me at my 160lb loss he literally bowed down and said you are an inspiration a success story I am going to tell everyone about if I can? I said go for it.

What is P:E Ratio?
Protein to energy ratio. The higher the number, the better the recipe is for weight loss 🙂
Can I substitute coconut flour instead of almond flour? & if so, how much coconut flour should I use?.

I miss cookies but have a problem with oxylates. Do you think this recipe would work with your coconut flour conversion??
I haven’t tried. Plus, cocoa has a high oxalate content so if that is a concern, I would suggest a different recipe 🙂
