Carnivore Muffins
I almost didn’t post my carnivore bagel recipe because I thought it might be too weird for my readers but everyone LOVES them!
On my private facebook group (which you can join for FREE support by clicking HERE), one of the members (Cathy), has been experimenting with the carnivore bagel recipe and created a few different carnivore muffin recipes!
She said that the ½ ground chicken with the ½ boiled chicken breast seems to give the best neutral flavor for all three varieties but isn’t required. Her next experiment is to make a banana & chocolate muffin using banana extract. (Oh, she also prefers to cook all of her chicken in a pot of water.)
HOW TO MAKE CARNIVORE MUFFINS
To make my Carnivore Muffins, I used Further Food Gelatin!

Carnivore Muffins
Ingredients
- 8 ounces 95% lean ground beef (or lean ground chicken)
- 8 ounces boneless skinless chicken breasts cut into small cubes
- 1 tablespoon Further Food gelatin
- 9 large eggs
- 2 tablespoons baking powder
- 1 teaspoon Redmond Real salt
Vanilla, Almond, Poppy Seed Muffins: NOTE use ground chicken instead of ground beef
- 1/4 cup allulose
- 2 teaspoons Poppy Seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Pumpkin Pie Spice & Cinnamon Muffins
- 1/4 cup allulose
- 1 1/2 teaspoons cinnamon (or Pumpkin Pie Spice)
- 1 teaspoon vanilla extract
Chocolate Muffins
- 1/4 cup allulose
- 2 tablespoons Further Food Chocolate Collagen
- 1 bar The Good Chocolate chopped
- 1 teaspoon vanilla extract or chocolate extract
Cornbread Muffins
- 1/4 cup allulose
- 1 teaspoon sweet corn flavoring
Instructions
- Preheat oven to 350 degrees F. Grease a 12 hole standard muffin pan and set aside.
- Place the beef and the cubes of chicken into a large skillet. Sauté over medium high heat while stirring often until the chicken is cooked through and no longer pink.
- Place the cooked beef mixture into a blender. Add the rest of the ingredients and puree until smooth.
- Divide the mixture into the prepared muffin pan and bake in the oven for 16-22 minutes or until the muffins are cooked through. Remove from the oven and allow the muffins to cool in the pan before removing. NOTE: if you underbake them, they will shrink.
- Store extras in an airtight container in the fridge for up to 4 days. Can be frozen for up to a month.

What could I use instead of Allulose please? Also, what would the amount be? I want to make these but unfortunately Allulose tears my tummy up. Thank you.
These turned out really good. I used all chicken for the meat and used banana flavoring in the muffins. After I made them I noticed the written recipe calls for 2 Tablespoons of baking powder, but the video says 2 teaspoons baking powder. Just wondering which one is correct. Thank you for another great recipe!

All of the variation options are still considered Carnivore?
Depending on your goals, they may work or not work for you. Level 4 Carnivore allows for some spices and zero glycemic sweetener 🙂
