Protein Crepe Cake
Crepes are such a lovely recipe. They can be a delicious meal or made into a crepe cake!
My son Kai LOVED this recipe so much but I think it was because of the delicious crepe filling.
I made 2 options for all of you for the filling, option 1 is more traditional for a crepe cake and option 2 is for a psmf crepe cake and is dairy free.

Protein Crepe Cake
Equipment
Ingredients
- 8 large eggs
- 4 tablespoons unsweetened macadamia nut milk (or unsweetened coconut milk)
- 4 tablespoons Further Food gelatin
- 2 scoops Vanilla Equip Protein Powder (or other flavor like strawberry Equip)
- 1 teaspoon stevia glycerite
FILLING OPTION 1:
- 1 1/2 cup heavy cream
- 3/4 cup powdered allulose
- 8 ounces cream cheese softened
- 1/2 teaspoon stevia glycerite
- 1/2 teaspoon vanilla extract (or almond extract)
- 1/8 teaspoon Redmond Real salt
- Primal Kitchen Avocado Oil Spray
FILLING OPTION 2:
- 10 large egg whites scrambled and chilled
- 3/4 cup unsweetened macadamia nut milk (or unsweetened low fat coconut milk)
- 3 tablespoons powdered allulose (and 1/2 teaspoon stevia glycerite)
- 3 scoops Chocolate Equip Protein Powder (or vanilla Equip)
OPTIONAL GARNISH:
- Fresh raspberries or strawberries
Instructions
- To make the protein crepes, place all of the ingredients for the crepes in a blender and combine until very smooth.
- Spray a crepe pan (click HERE to find) with avocado oil spray and heat over medium high heat. (note, the batter may get very thick, but once you put it on the hot skillet, the gelatin will melt).Once hot, pour 3 tablespoons of the batter into the skillet. Cook until golden brown, about 2 minutes, then flip and cook until done, another 1 to 2 minutes. Remove from the skillet and repeat with additional cooking spray and batter.
FILLING OPTION 1:
- Place the heavy cream and powdered allulose in a large mixing bowl or stand mixer. Beat to stiff, fluffy peaks. Mix in the softened cream cheese, extract, stevia glycerite and salt. Taste and adjust sweetness to your liking.Â
FILLING OPTION 2:
- Place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking. TIP: tastes best if left in the fridge overnight and it will thicken a lot. If desired, purée it after it thickens to loosen the pudding.
ASSEMBLY:
- Note that you only need 15 crepes to assemble your crepe cake. Place one crepe on a serving platter then portion a large spoonful (about 3 tablespoons) of filling over the crepe. Use a spatula to spread evenly over the crepe. Top with another crepe and repeat with filling until you have used all the crepes and all the filling.
- Garnish with fresh raspberries or strawberries, if desired.

“102.5 pounds down before the March challenge I lost another 20 pounds. When I decided to join the March challenge I went all in! No dairy, nuts, no coffee (yes was a huge coffee drinker) no diet soda except for Zevia (game changer)!
I started out simple a lot of times I would tweak and do meat and a low carb veggie especially during the crazy busy workweek. Months later I tried making some of Maria’s simple recipes, like the Hard Boiled Egg Pudding, the breakfast chili, the bread, the blender cake, the blender brownies, I just did the lemon loaf cake. Trust me I see some other recipes I would love to make, and I will but it has to be on my terms with working a full time job I try to keep it simple. Weekends are great for trying new recipes out!Â
I decided on this lifestyle change because frankly I wanted to feel better, look better, I have severe osteoarthritis and when I eat regular flour and sugar well I could barely move, was on a cane.Â
You just have to trust the process. Being one of the March challenge winners just put me in even a better mindset and I continued the journey.Â
I mean like Holy Moly, what a change has occurred you can see it right in my pictures! I will keep you all updated on my journey still not at my goal as of yet! But I’m certainly on my way!Â
