Keto Shrimp Po Boy
I miss New Orleans so much! I was scheduled to visit that amazing city this year to film cooking videos for Swerve but with Covid-19, that has been postponed. This New Orleans–inspired Keto Shrimp Po Boy Chaffle is deliciously filling and will take you back to New Orleans!

I understand that life gets busy and sometimes we need to find shortcuts.
This is why I worked with my favorite keto companies to get coupon codes for all of you!

TESTIMONY OF THE DAY
“This was last NYE, 65lbs. gone, following Maria and Craig. Throughout the whole pandemic I gained 5 lbs and already have that gone. This year is about continuing the journey and getting those last few vanity pounds off. If I can do it, you can do it! Maria Wojcik Emmerich is a life saver!” – Jennifer
Hello Maria, once again I’m in touble getting some of the ingredients since your trusted sponsor companies don’t ship to my door: instead of 2TBS of butter flavoured coconut oil/ bacon fat, can I use ghee? (If so, 2TBS as well?)
For the chaffle:any substitution but also keeping the recipe dairy-free, instead of pork rinds?
Sorry about that! Yes, you can substitute the butter flavored coconut oil with bacon fat or ghee (ghee has a lower smoke point so beware or you will burn it). Sorry, I don’t have an alternate suggestion for a dairy free chaffle unless you are okay with using nut flours (which I don’t recommend for weight loss or healing). But, if that’s not a concern for you then this one is good: https://mariamindbodyhealth.com/keto-waffles/
How many GRAMS is one cup pork rinds?
Thanks so much.
I’m not 100% sure (I’m not home to measure) but according to cooksinfo.com 1 cup of pork rinds is 1/2 oz or 15g.
