Cheddar Vinaigrette
I LOVE sauces! So figuring out carnivore-friendly sauces was essential for me to make eating carnivore enjoyable for myself but also all of you! One thing that isn’t allowed on carnivore is vinegar. Yep! It’s from a grain, sometimes apples as well as other non-approved carnivore products. So, I wanted to use up some vinegar I had in my pantry. This is still a great low carb/Keto recipe if you are not a strict level one carnivore. This Cheddar Vinaigrette would be considered Level 4 carnivore. If you want to make this carnivore-approved, sub carnivore broth in place of vinegar (carnivore broth is homemade bone broth made without vegetables or herbs).

Cheddar Vinaigrette
Equipment
Ingredients
- 6 tablespoons salted butter
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup bone broth I used Kettle and Fire Beef Broth
- 2 tablespoons apple cider vinegar or more broth for level 3 carnivore
Instructions
- Place the butter in a saucepan over high heat while whisking often. Heat while whisking often until the butter froths up and brown flecks appear.
- Lower heat to low. Add the cheddar, broth and vinegar. Whisk until cheese is melted. Use a stick blender (or place into a blender) and puree until smooth. Taste and adjust seasoning to your liking.
- Use over a salad, hamburger or your favorite meat.
- Store extras in airtight container in the fridge for up to 5 days. To reheat, place in a saucepan over low heat for 2 minutes while whisking occasionally. Heat gently or it will separate.

So simple, but I bet the flavor is AMAZING!
We’re just keto, not carnivore, but we love sauces too. And it’s hard finding things to put on steak and chicken, and EVEN veggies to spruce things up. Even sugar free bbq sauce is a no-go. The artificial sweeteners don’t taste good enough to make it worth it. They’re not healthy anyway, so what’s the point? lol
I made a sauce last night for steak with butter, cream, worcestershire sauce, parm, salt and pepper. I DID add a teeny splash of rice vinegar because I had it. It gave it a little bite.
I know it’s not the CLEANEST sauce, but I figure a splash of something every once in a while isn’t so bad. We don’t have any allergies or intolerances so we don’t have to worry about feeling bad after having something S.A.D.
Anywho, thank you SO much for posting this! Sometimes folks need just a little hint to get their creative chef juices flowing LOL
Maria, do you still use coconut vinegar in recipes? Would that work in place of apple cider vinegar in this recipe?

I have a question when it comes to your recommendations on supplements in your Carnivore Cook Book. You suggest everyone should supplement with Collagen. Do you count that in your macros when doing keto? Thanks in advance for your information.
No, doesn’t count toward hitting your protein target because it isn’t a complete protein. But does count in calories. 🙂
