“After years of not watching what I ate, I finally found myself at my highest weight ever at age 49. I was also going through some tough times in my life; going through a divorce, not by my choice. I was at a crossroads in my life; being single now after 15 years of marriage and a father to 2 wonderful boys and trying to juggle work amongst all of that. I started talking with a friend who encouraged me to get back on my feet again, telling me that it’s easy to lose the weight and which in turn will make you feel good about yourself and give you energy.

I figured, “Why not. What do I have to lose, besides the weight.” It took a very short time to get used to eating differently, it much was easier than I expected. When I started eating low carb and high fats and took out the grains, I saw results immediately. I saw the weight come off very quickly and it wasn’t hard at all. As a single dad, I am able to eat my eggs for breakfast and take a lunch that I pack each day and still have a homemade meal at night. I really enjoy the foods I eat and it’s not hard at all to take the time to make sure what goes in the mouth is made at home and not from a box and to pack a lunch is so easy. I sometimes use a crock pot to cook meats or soups that are ready to go when I walk in the door after a long day of work. I have lost approximately 40 pounds and am eating better than ever. I have a more satisfied digestive system as well, not dealing with gas and diarrhea like I used to. I am slowly learning as I go, taking baby steps to eliminate one thing at a time. I really don’t miss the way I used to eat, especially after hearing so many people comment on how “skinny” I look. It makes me feel good about myself and I am once again getting some self confidence back. Thank you Maria for all you do.”

Bearnaise sauce

I am a sauce lover. That is almost an understatement. In my former life, I would dredge my steaks in ketchup or steak sauce. There is obviously a ton of sugar in those common staples. I still need my sauces so I just always make my own. For my bearnaise sauce, I wanted to get that amazing brown butter flavor. Browning the butter is not a prerequisite for this tasty sauce, but my friend Julie says that anything with “browned butter” is a game changer!

Ingredients
  • 1 stick organic butter
  • 12 egg yolks
  • ¼ cup chopped fresh tarragon leaves
  • 2 shallots, minced
  • ¼ cup coconut vinegar or white wine vinegar
  • Celtic sea salt to taste
Instructions
  1. Place the butter in a medium sized saucepan over high heat.
  2. Heat until the butter starts to sizzle (it will puff up and then fall down). Watch for small brown flecks. Once you see brown flecks, remove from heat and whisk fast. You don't want black butter (which is a common thing in French cuisine, but it just tastes burnt to me).
  3. Add the the tarragon, shallots, and vinegar into the butter and cook on medium heat.
  4. Bring to a simmer and cook for 15 minutes.
  5. Remove from heat and set aside to cool.
  6. Blend yolks and brown butter reduction together.
  7. With the blender running, add ⅓ of the butter in a slow steady stream. Once it emulsifies, turn the blender speed up to high and add the remaining butter. Season with salt and set aside in a warm spot to hold the sauce.

    I am recovering from a stroke & terminal disease (CNS Vasculitis – beat it) where I was put on steroids which put me up over 320 pounds in my early 40’s. I am down 90 pounds even without exercise due to disability & left diabetic from the steroids and I’m just starting physical therapy so this is only from eating right, going off the wheat 6/3/12 and staying as low sugar as possible (normally 10 grams or less per serving). Actually just found you recently and am so happy to add you to my collection!

    I went Wheat free and low carb last November and feel so good! The 30 # weight loss, especially in my stomach has been awesome and No antacids and no more Lipitor! Will never go back! Low carb has been harder than no gluten. I love sugars but I continue to work on it

    I found yoir blog in early July when hubby wanted me to go on Atkins type low carb. At my doctor’s recommendation for me to lose weight she wanted me to be strict soy free vegan which I did for a year. I lost only 7 lbs whole year.     The sugar & grain free lifestyle has really turned my life around. I have Rheumatoid Arthritis and even though Enbrel helped me so much, I still had a lot of pain. I was a low carber through the week and then ate whatever I wanted on the weekened….usually takeout pizza and brownies or other processed cookies. When I read Maria’s blog and book I realized how harmful eating 80/20 is….and I didn’t realize how long gluten or trans fat stayed in the system, what they did to the body (I was just worried about weight gain), and how much I needed to supplement. With Maria’s insight I now sleep through the night for the first time in my life. And the pain of my RA is almost non existent. I saw just how much when we went on vacation on Oct 19th. We took a cruise to the Bahamas and I was so good all week but when we got off the boat I decided to have pumpkin pancakes at iHop. Within an hour of eating them my ankles swelled up like baseballs and my stomach was a mess. After going without for about three months (other than the vegegreens I didn’t realize that had gluten in them!) I could see just how bad it affects you, because I had that severe of a reaction to half of a two stack order!! I cheated a bit more those last two days at Universal….onion rings and stuff. I felt awful. We have been home since Wednesday and I’m back on my keto diet and feel great now, except for some lingering joint pain. But that was enough to make me give up gluten forever! I love the Jay Robb powder in your protein bread! That stuff is amazing! I made some into your caramel popcorn to take on the road with us. Even though I’m in Canada I can have the American stuff shipped to my sister’s or to New York, only a couple hours drive across the border 🙂

    One of my favorite things to cool with whey protein are Maria’s nutella waffles. MIne are not really Nutella…I leave out the chocolate, but they are so amazing nonetheless. My son has been GF and DF (and so have I b/c I was nursing) since he was about 4 months. I previously was buying GF waffles b/c he loves waffles in the morning. I have switched to making a double batch of Maria’s instead! They freeze great and are awesome in the toaster. My son doesn’t know the difference and I LOVE THEM because they keep me full all morning!! Kudos to ME for creating an amazing recipe!!!!

    I have almost finished the Secrets to a Healthy Metabolism book and I’m looking to purchase the cookbooks because your recipes are so amazing! Even my family of picky eaters is liking the food! I’ve been on my LC journey for 3 yrs but only since I started eliminating grains and certain additives and such have I had vast improvements in my health. My chronic allergies are almost gone and barely give me symptoms anymore which is huge because I would regularly end up with bronchitis, pneumonia, ear infections, sinus infections, and laryngitis all year round. Now I only get tired when I don’t pay enough attention to my sleep habits. I used to be a chronic insomniac too but no more! I have no trouble getting to sleep. I am picking back up with my running which I’d nearly stopped due to joint pain (another thing clearing up) and walking is much more enjoyable. Even my asthma has improved! I couldn’t be happier. My moods are more stable, my energy more consistent and I’m less depressed and irritable. Thank you! My family thanks you!

    Maria, I am so thankful to have found your sight. I have been eating the “Healthified Way” for about 6 weeks now. My diabeties was out of control, my triglicerides were at 512! and I was having all sorts of issues with bloating, hair loss, infections, headaces, lack of energy etc… I have SO much more energy now… I am loosing the weight and I just feel much better about myself. Yesterday, for the first time in 15 years, I was able to RUN 2 miles WITHOUT stopping or walking!!!!! I am so thankful for that. Ontop of that, for the first time in over 5 years, ( ok this is gonna sound wierd), but, my body actually ovulated!     I do feel better when I don’t eat the high carb way. I am trying to figure out a way that i can sign up for one of Maria’s online classes. I do good for a while, losing 35-40 lbs, then I let emotional eating get the best of me and then I backslide, to gain most of my weight back. Have done this numerous times…I want off this merry-go round. HELP

    I just used jrobb protein pwder for the dutch pancake recipe this morning, I love that recipe, so easy and it sustains me forvever. I went on a 10 mile run and didnt even feel hungry until 5 hours later and even then just a snack was fine. I am running my first marathon nov 9 in santa Barbara and eating low carb no sugar has made a huge difference in my workouts.     In July I decided to stop taking by diabetic medicine and start eating the Maria way. I feel great most of the time and sugars stay pretty low. Maria I was wondering if there is a trick to getting my sugars lower in the mornings. I have read about your fasting but not sure if that good for me?     I stated the low carb journy in march of this year. I had put on 50 lbs after a back injury in 2003. I tried dieting without any success. Then in 2010 I had a lot of health issues one of which required me to go on steriod. That made me gain even more weight. I finally made the decision, after alot of research, to change my way of eating to low carb and high healthy fats. I am down 50 lbs and feel so much better. The holidays have been hard especially with all the sweets in the house from Halloween but thanks to the great recipes you have hear I have been able to stay the course. Thanks

    I stared the low carb lifestyle in march of this year. I have been plagued with health issues the last two years causing me to.gain weight and lose energy. I have an autoimmune disease sarcoidosis and thyroid cancer with a total thyroidectomy. I decided after a lot of research with the help of your blog to go low carb high good fats. I am down 50lbs and finally have good day where I actually have energy. I forgot what that was. I will say that Halloween was tough with all the candy in the house ( candy is my weekness) but with the help of your blog I have stayed the course and found some low carb desert that keep me from all that candy. All I have to do is think about how I felt before going low carb and how I never want to go back there. Thanks for all you do here!

    What a giveaway! I really have to say my favorite recipe using Jay Robb ist using the powder, almond milk, and some add in using whatever is around(which is usually some kind of nut butter) and making a shake. Yes, a tiny bit cheesy, I know, but you can’t taste the cheese. The reason: a quick, safe, filling meal that I don’t need to fret about and I know will keep me full. It is just the ticket when I am up all night with the littles, need a fast lunch at work between patients, or just can’t seem to wedge in dinner with a night full of activites with the family. Jay Robb has saved the day many times, Thank You!

    Since mid July 2013 my husband and I have lost (hubby 50 pounds, me 35 pounds) . We tested our blood sugars and he turns out being pre-diabetic, his A1C was 6.6 It was time to take control and keep him from turning diabetic. We stopped eating flour and sugar. We feel so much better and are now setting a good example for our family. It is great creating new meals and finding our new favorites. Being healthy doesn’t have to be boring, it’s anything but.

    I have been diagnosed with fibromyalgia about 5 years ago now. The paid was severe enough that I didn’t quite make it through grad school and took my masters and quit. Too bad I found this lifestyle too late for my PhD but my pain level has gone down and the frequency has decreased from 80% to only 20%. I couldn’t be happier or more productive. Furthermore, for the first time in years I don’t have binging issues or ridiculous cravings.
