Lemon Protein Pudding

So many of you are in love with my protein pudding made from hard boiled eggs, but I have to tell you a trick! It is even better if you scramble the eggs instead of boiling them. Sometimes you can get a sulfer-like smell from hard boiled eggs (which  the famous chef, Jacques Pépin, says is a technical error made by the cook).  So to avoid that issue, scrambling the eggs is what I recommend.

I also used egg whites in this recipe to give the recipe a lower fat macro which is perfect for a protein sparing breakfast!

HOW TO MAKE LEMON PROTEIN PUDDING

Lemon Protein Pudding

Prep Time 6 minutes
Cook Time 6 minutes
Course Dairy Free, Dessert, Nut Free, PSMF Recipes
Servings 4 servings
Calories 111.9

Ingredients
  

  • 10 large egg whites scrambled and chilled
  • 3/4 cup unsweetened low fat coconut milk (or unsweetened macadamia nut milk)
  • 2 tablespoons Natural Sweetener (or 1/2 teaspoon stevia glycerite)
  • 3 scoops Further Food lemon collagen

Instructions
 

  • Place all the ingredients into a blender and puree until very very smooth. Taste and adjust sweetness to your liking. TIP: tastes best if left in the fridge overnight.
  • Place in the fridge in an airtight container for up to 4 days.
  • PROTEIN SPARING LEMON PUDDING POPS: Place the mixture into ice pop molds and place in the freezer until set, about 8 hours or overnight.

      Yes you can, but amounts depend on what brand and type of extract/flavoring you’re using and how tart you like it. So you’ll have to experiment 🙂

    Maria, what book on your list do you recommend I buy for weight loss? I travel to many countries and have problems maintaining my weight because I practice OMAD, but when I travel, I eat the three meals and return home with more than 7 pounds. What can I do to avoid this extra weight? And what style of diet do you recommend when I am travelling? Carnivore or any other? Waiting for your advice on buying the recommended book.
