Keto Key Lime Bars
Are you looking for a refreshing keto dessert to bring to your next summer BBQ? One thing that I always do is bring a keto dessert my family loves when we are invited to a BBQ. Being able to enjoy a dessert helped me stay on the keto diet for 20 years. I do not feel deprived when I get to enjoy delicious food like these Keto Key Lime Bars!

Keto Key Lime Bars
Ingredients
CRUST:
- 1 cup coconut oil or butter if not dairy free
- 3/4 cup Natural Sweetener or erythritol and 1 tsp stevia glycerite
- 1 1/2 cup blanched almond flour
- 1/2 cup coconut flour
- 1/2 teaspoon Redmond Real salt
FILLING:
- 8 large eggs
- 1 cup Natural Sweetener or erythritol and 1 tsp stevia glycerite
- 1 teaspoon baking powder
- 1/4 teaspoon Redmond Real salt
- 3/4 cup key lime juice
Instructions
- CRUST: Preheat oven to 325 degrees F. Grease an 8 by 8 square glass pan. In a medium bowl, mix the butter and natural until smooth. Add the almond flour, coconut flour and salt. Use a hand mixer to combine well. This will be a thick cookie crust; press onto bottom of pan using your hands. Place in oven to pre-bake the crust. Bake for 15 minutes or until light golden brown. Remove from oven and set aside to cool.
- Place all the ingredients in a blender and purée until smooth. Pour the mixture evenly over the pre-baked crust and bake for 30-40 minutes or until light golden and filling is set in the middle. Cover with foil if top is getting too dark and center is still not set.
- Place in fridge to cool. The filling will set up in the fridge.
- Store in airtight container in the fridge for up to 5 days.

You could make them crustless. 🙂

Absolutely love all your recipes I’ve tried. Your recipes are a feast for the eyes then the tummy. Thank you. I do get a little confused whether to use granulated Swerve or confectioners since I’m not familiar with its properties during baking and cooking process. Can you provide some insight on which one to use in different types of cooking techniques?
Thank you!! You can sub either Swerve as they are the same ingredients. Confectioners is just finer so good for when you want a smoother texture like frosting, etc. 🙂
These are so delicious! I made them with lemon juice since I was out of lime for my brother in laws birthday and added some whipped cream to the top to try and mimic the lemon cake the non Keto people were eating. My kids said it was the best thing I’ve made yet! Thank you!!

These are pretty good although too sweet for me and hubby who have been keto for about a year now. I will definitely make again but cut the sweetener by 1/2. Thank you Maria for all you do. Just bought two of your cookbooks and am excited to dig in to them!
