Testimony of the Day
“Hi Maria- I wanted to share with you what I’m sure you’ve heard 1000000 times in similar versions. I’ve been on you (very) well-adapted ketogenic diet for about a month now. I stumbled across your site in a very roundabout fashion, but it plays into my “testimony“. I was suffering from severe constipation which required 2 daily doses of Miralax, and I had developed a chronic fissure from all the “not going”. I’m only 29 (28 at the time), and I’d had colonoscopies and scopes and work ups like you wouldn’t imagine. The answer always was “increase your fiber and whole grains”. You can imagine how that absolutely did not work. I was researching natural means of healing fissures when I began reading about coconut oil- which by the way, 100% healed me. After that, I started looking in to coconut oil and found you! Yay!
So, not only did I have constipation, but I would swing unpredictably between constipation and severe and painful diarrhea- all the time! In addition to the constipation/diarrhea debacle, it seemed like every time I went to the doctor, I was diagnosed with another autoimmune disease. I was 15 when I was diagnosed with Hashimoto’s, 21 when I was diagnosed with Lupus, 26 when I was diagnosed with Autoimmune Progesterone Dermatitis (an extremely rare autoimmune condition where your body reacts to your natural progesterone spikes. Basically, in the days right before my cycle, I essentially became almost anaphylactic, with severe and massive hives, and angioedema which mainly affected my eyes and lips… (Eddie Murphy Nutty Professor style- seriously) I have to carry an Epipen just for my own period! Doctors had no answers for why this condition suddenly appeared, and why it went into remission about a year later), 28 when I was diagnosed with Hydradenitis Suppurativa (chronic, tunneling, painful boils), and 28 again when I was diagnosed with Psoriasis, including scalp and inverse (28 = not my year). And I would have bet my life on a Celiac’s diagnosis. The only conclusive answer anyone could give me as to why I was plagued with autoimmune diseases was “Pregnancy is a game changer”, and basically blamed all my “conditions” on the birth of daughter when I was 20.
Over the past decade, I have literally ballooned- there is no other word for it. I was plagued with skin issues, abdominal pain and bloating, depression, anxiety, fatigue, chronic pain- you name it. I had near debilitating plantar fasciitis, and had recently just developed excruciating sciatica that was pretty much interfering with nearly every aspect of my life. I had pitting- I’m talking half an inch deep, pit for an hour- edema in my lower legs, that would occasionally move to my feet. Excema – everywhere, even inner ears! psoriasis, boils, joint pain, back pain- just complete pain and sadness and misery. I was nearing the end of my rope, and so tired of feeling like an old woman on her death bed. I was taking 3400mg plus of Motrin every day, Bentyl for stomach aches, prescriptions for my Lupus, thyroid, and depression, Ketoprofen, Tylenol, Excedrine- anything to combat the pain and swelling. And PMS, it would knock me on my butt and off my rocker! I would feel entirely exhausted on top of everything else PMS brings. And did I mention- I was constantly starving? All the time. ALL the time. Last year, I followed “Chose to Lose”, which is a version on carb cycling, and while I did rapidly lose around 40 pounds, I was literally ravenous, counting down my three hour intervals to eat, and I still suffered from all my ailments- and the constipation and diarrhea was sooooo much worse than it ever was!
So, after I found you, it took me a while to commit, But I finally decided, 29 was my year (January birthday!), and went for it.
On day one of keto, I had NO foot pain from my fasciitis and my sciatica vanished – both of which I suspected were inflammatory. My edema has nearly subsided, and I can see all the bones in my feet again! Almost instantly, it was like someone stuck a pin in my face and let the air out! The difference is stunning. My knees don’t ache, my back barely aches anymore, and I’ve yet to see a single boil. My psoriasis is nearly completely healed (it is winter…) and I haven’t dosed on Miralax a single time, and all is well in that realm! The only time I’ve had diarrhea was from magnesium … Too much too soon. I am never, ever, ever hungry or hangry- and it feels amazing to not be a slave to food any longer. After my first deliciously fattening meal, I literally felt warmth in my chest, like my heart was expressing it’s thankfulness for finally nourishing my body. I am quite positive I have lost weight, although I have no interest in the scale at this point, I just want to focus on how amazing I feel right now. I haven’t made an appointment to check my Lupus labs yet, but I expect great things. I plan on working with a naturopath for lowering my Armour Thyroid dose, which I also expect to see improvement in.
And the final part- I had my cholesterol checked prior to starting this journey. In not even one month’s time- I shaved 45 points off my total cholesterol, which wasn’t even high to begin with, and 22 points off my LDL, which again wasn’t high either. My HDL took a 20 point dive which was perplexing, but I assume it will all even out as my body stabilizes and adjusts.
I am so looking forward to what the future holds, and for the first time since high school graduation- I can honestly say that I feel like my life is beginning and I cannot thank you enough. You have truly and completely saved my life, in ways you could never possible know.

What a great way to spend Valentine’s Day! Chocolate, Strawberry “Champagne” (Tea) and Fondue!
To make Strawberry “Champagne”: Brew 2 strawberry tea bags in 1 cup boiling water. Steep for 4 minutes. Remove tea bags and add 1 cup fizzy mineral water from a soda streamer or LaCroix Mineral water (I suggest coconut flavored LaCroix). Add natural sweetener to taste. Chill before serving.
Use the Mousse to make mini chocolates. Place in chocolate molds and freeze. Once frozen, cover in a melted ChocoPerfection bar!

Believe it or not, my best Valentine treat ever was a handmade card, and then a peanut butter and jelly sandwich, with a glass of Pinot Grigio. The sandwich was made on good Italian bread. He had the fresh peanut butter and I had homemade jelly from a fair. We each spread our bread with our respective ingredients, and then facing one another we touched our half of the sandwich together. We shared the sandwich back and forth until the last bite was shared with a kiss. The wine topped it off. A peanut butter and jelly sandwich has never tasted the same again. I have been living a low carb lifestyle for just about a year, although I will indulge in the treat of the peanut butter and jelly sandwich with much pleasure.

My favorite Valentines treat are cherry cordials I love them, now if only I could figure out how to “healthify” them. Maybe using cherry tomatoes soaked in cherry tea and flavoring. Or maybe more of a cherry flavored truffle inside. Ideas are a brewing lol!

I love haystacks made with 85% chocolate, erythritol and stevia, and toasted unsweetened coconut. Yummm! My husband’s favorite as well so this is a double score.
I love the KETO fudge and I mix it in my decaf espresso/coffee or chocolate mint tea. We also love the cheesecakes (I always bake them in little ramekins for grab-n-go), the orange pushpops are one of my favorite things in life and the shakes with avocado is super versatile, quick and decadent! We always feel so spoiled eating all of these treats. I’ve never liked sweets but now I eat them all the time with Maria’s recipes. I never realized why I didn’t like traditionally made sweets was because of how awful they always made me feel! I would absolutely love to win a box of Chocoperfection bars! I have yet to try them and have always wanted to. Happy Tuesday, everyone!

I don’t usually do dessert, but I try to buy or make my (now) husband something sweet and we share some wine – sometimes. We don’t make a big deal with Valentine’s Day. We are both Keto now (for about a week), and he has off work, so it will probably be one of your recipes. 🙂
I made this mousse last night and I was looking at the bowl as I was making it. I kept thinking “12 servings? Yeah right. More like 4, maybe 6 if we push it.” It’s sooooo rich, and very yummy. There is no way you can eat too much so, I was wrong. Your serving sizes were accurate. I used 1/2 (goat) butter and 1/2 coconut oil. It came out really hard like a frosting (which I enjoyed). If I just use butter will it be less hard? I’m looking for something a little more fluffy.
I pretty much like anything Chocolate. But I usually go for a Chocolate cheese cake of some kind yum!!

My mom used to make my dad a giant “kiss” every year for St. Valentine’s day! She would melt chocolate and add rice crispies and put them in a well greased funnel, let it set, take it out and wrap aluminum foil around it (of course with a little love note on thin paper sticking out the top). I have continued the tradition, only my husband loves peanuts instead of rice crispies! I would love to have the chocoperfection bars to make a healthy “kiss”. Love your recipes and thanks for all you do! I did just find out last week I am very allergic to milk products. 🙁 still making your recipes..only dairy free. 🙂 Do you have a good Cream cheese substitute?
Cream cheese is tough. Coconut cream (skimmed off the top of a can of coconut milk) is close. 🙂

Question: Ive been following the Keto diet for the past week (loosing 2-3lbs per day) and last night I made the Lemon Bars from your Kids cookbook, Ate one serving, and woke up this morning and gained a pound. All other factors in my diet & water stayed the same. The only variable i can think of it the Swerve (first sugar alcohol I’ve introduced) Ive read that some people process these like sugar. Is this possible & have you seen this to be true?? And have I just thrown myself out of Ketosis and now have to start over in getting back into that state?? Any answers would be so appreciated!!
It is possible that you are sensitive to erythritol (just like being sensitive to dairy, etc). That would make you retain water. Try another sweetener like stevia. 🙂

My new favorite dessert is a spinoff of my mother’s chocolate pecan bars. I used the ChocoPerfection for the first time. I had to hide the pan everyone wanted them.
I used your very thick Cheese cake crust recipe added some chopped pecans and baked until golden brown. I chopped 3 bars into fine chocolate with food processor and sprinkled all over the HOT crust. it melted perfectly spreading all over. I chilled it for 30 minutes and sliced . The chocolate was so GOOD my family thought it had made my mom’s cookies. I would love to try other recipes with these . they are great.
I have a heart shaped spring form pan and have promised the family to make again for Valentines family dinner. ( I think they will like this better than the heart shaped meatloaf I made last year.)

Mine would be home made sugar free coconut chocolate ice-cream made with 1 can of coconut milk, 3-4 TBSP cocoa, 1/4 cup of erythritol, and 10 drops of stevia. Just blend, freeze, and enjoy.

Now I would say homemade treats (with almonds ground into almond butter, coconut oil & Himalayan Sea Salt topped with a mixture of pure cocoa powder and coconut oil) right out of the freezer. Yum!!!

Just to clarify on this recipe, I’m dropping whole raw eggs into a cooled chocolate mixture? I keep wanting to make this recipe but I can’t wrap my mind around this part of the instructions. Yummy Maria! I am curious, where do the carbs come from, the chocolate squares? Do you ever count the Swerve? I just think I might try to make it but that is too many carbs for me I think.
This is really good! I made it with a few tweaks as I live in Austrlia and don’t have access to the ingredients.
Used butter, ( unsalted! ) and used sugar free dark chocolate buttons ( 6T ) and as they were sweetened I used only 4T of xylitol. Also didn’t add the almond essence, just vanilla, the rest of the recipe I followed. It freezes well and defrosts no problem. It’s not Valentine’s Day here, but there never needs to be an excuse for a chocolate hit 😉
