Easy Tiramisu Panna Cotta
I love making panna cotta for dinner parties because it looks fancy and the taste is divine, yet it is very easy to make and can be made up to two days ahead of time. This dessert also gives me a chance to bring out my martini glasses, which are usually tucked away since I haven’t had alcohol in 18 years.

TESTIMONY OF THE DAY
“Yesterday was my 1 year ketoversary. In 1 year I have gone from 383 to 223, losing 160 pounds, reversed Type 2 insulin dependent diabetes, tackled a binge eating disorder, removed 13 medications, learned to cook, am practicing yoga, walking, biking and LIVING MY LIFE in a much healthier way!14 months ago I made the decision to get weight loss surgery, having tried EVERYTHING else. I enlisted the help of a therapist to get me through surgery and she happened to also be an Emmerich trained coach. My therapist Carla asked me to consider giving her 6 months to try the Emmerich way of keto and I balked for 2 months until one day I ate a few hard boiled eggs and started the journey. This way of eating has SAVED MY LIFE!Slaying the dragon that has kept me chained to the tv and my sofa has saved my life! Learning to cook and not feeling deprived of the things I thought I couldn’t live without have saved my life!My tips and tricks:Don’t lie to yourself. Track everything that goes in.
You’re not hurting anyone but YOU when you cheat. You deserve better!Eat a hard boiled egg when you’re hungry. If you’re really “hungry”, that will be the best tasting egg you ever had!
Eliminate hand to mouth eating. Can’t cut it with a knife and fork? Don’t eat it!
Plan! ALWAYS have food on hand! Grilled chicken or pork, hard boiled eggs, Maria’s pudding, Maria’s Hawaiian rolls or her angel food cake slices. Fail to plan, plan to fail!
Forgive yourself and celebrate the small non scale victories. You deserve all the love
Bless you Maria Emmerich and Craig Emmerich for furthering this keto way of life and for giving me my life back!” -Andrea
