Testimony of the Day

“My story begins with my three year old son and his journey through cancer. Our family had already discovered the “Maria Way” a few years ago but we had not fully put it into practice. A little over a year ago, tragedy hit when we discovered our little 3 year old boy had a five pound cancerous tumor attached to his kidney. After major surgery and a five day hospital stay, we knew we needed to change our nutrition. If there were ever a time for taking drastic measure it was then.

We consulted with Maria and cleaned out every ounce of sugar and grains from our house.

Our young family of four all adopted a new way of eating, a new way of life. Since I have such a loving committed wife who took care of most of the cooking, you could say I was more or less along for the ride. I was surprised to find that this journey had many unexpected benefits right from the start.

When we began eating the “Maria Way,” I weighed in at over 200 pounds. Just a few months later I had lost just over 40 pounds. I have had multiple knee surgeries and suffer from arthritis and joint pain, however since we kicked the grains and sugar I have little to no soreness ever. Stairs were and issue are no longer are. I sleep through night regularly now and my energy level is through the roof. You could say the kids also had this same benefit!

Though this way of eating (menu planning/prep work/etc) can be difficult at times it has brought our family together in love, and in the kitchen! Cancer Facts

Why are the rates of cancer going up? In 1840 the average American consumed 2 tsp of sugar a day…in 2011, a typical American consumes over 63 tsp of sugar PER DAY! Cancer LOVES glucose! This is why we test cancer patients by having them drink a “glucose” mix and watch what cells consume the glucose the quickest (cancer is the fastest). So you think, “Sure, just cut out the glucose from our diet.” BUT most people don’t understand where all the glucose is coming from. It isn’t just the sugar. “Complex carbohydrates” are structurally just glucose molecules hooked together in long chains. The digestive track breaks it down into glucose. So a sugary and a starchy diet are pretty much the same thing. So in essence a bowl of oatmeal, skim milk and a banana is just a huge bowl of sugar. For about 5 years now, German doctors have been testing cancer patients in a clinical study of a surprising prescription…fat. Their patients are on a ketogenic diet, which eliminates almost all carbohydrates and sugar, and provides energy only from high-quality fats.

A well-formulated ketogenic diet has an intense and fast effect on cancer. All of your body’s cells, including cancer cells are fueled by glucose. Conversely, cancer cells have one huge mortal flaw; they do not have the metabolic adaptability to be fueled off of ketones, but your healthy cells can thrive on ketones. Therefore, since cancer cells need glucose to thrive, and carbohydrates turn into glucose in your body, then cutting out carbs literally starves the cancer cells.

You are thinking…”this sounds completely opposite of the ‘raw food’ juicing cancer diets, I have been reading about!” BUT this scientific evidence dates back more than 80 years. In 1924, Nobel Prize winner Otto Warburg published his observations of a common feature he saw in fast-growing tumors: unlike healthy cells that can get energy by metabolizing sugar in the mitochondria, cancer cells appeared to fuel themselves only through glycolysis, a less-efficient means of creating energy through the fermentation of sugar in the cytoplasm. Warburg believed that this metabolic switch was the primary cause of cancer, a theory that he was unable to prove before his death.

If most aggressive cancers rely on the fermentation of sugar for growing and dividing, then take away the sugar and the cancer can stop spreading. Meanwhile, normal body and brain cells switch to generate energy from fatty molecules called ketones, the body’s main source of energy on a fat-rich diet.

One theory that mistakenly sticks with cancer patients is that diet can influence our pH balance. Tumor cells release lactic acid as a by-product, and this became known as the alkalinity-acidity theory. This created a number of books that wrongly encouraged alkaline diets for preventing and curing cancer. In reality, cancer cells are a bit more acidic just outside their boundaries than inside due to the expelling of lactic acid. Trying to control the pH in your body appears to not be helpful. Not only does the absence of acid in the gastric tract and bladder establish an environment that is favorable to tumor growth, the control of pH is automatically controlled in a neutral range of 7.2—7.4. Our diets have been proven to have little to no effect over the pH of the blood.

A ketogenic diet is helpful for cancer patients for many reasons. For one, it decreases the buildup of lactate, which helps control pH and respiratory function. A myth of low carb diets is that it puts you in a state of ketoacidosis. “This stems from the unfortunate fact that many doctors confuse nutritional ketosis (blood ketones at 1-3 millimolar) with keto-acidosis (blood ketones greater than 15 millimolar). In nutritional ketosis, blood pH at rest stays normal, plus sharp drops in pH due to CO2 and lactate buildup during exercise are restrained. By contrast, in keto-acidosis, blood pH is driven abnormally low by the 10-fold greater buildup of ketones. Suggesting these 2 states are similar is like equating a gentle rain with a flood because they both involve water.” (pg 35 of The Art and Science of Low Carb Living).cookie cut out

A ketogentic diet doesn’t damage our immune system and less free radical damage in our cells compared to a high carb diet. Free radicals are highly reactive molecules produced in the mitochondria that damage protein tissues and membranes of the cells. Free radicals happen as we exercise. But ketones are a ‘clean-burning fuel.’ When ketones are the fuel source, ROS (oxygen free radicals) is drastically reduced. Intense exercise on a high-carb diet overwhelms the antioxidant defenses and cell membranes which explains why extreme athletes have impaired immune systems and decreased gut (intestinal) health. A well-designed ketogenic diet, not only fights off these aging free radicals, it also reduces inflammation of the gut and immune systems are stronger than ever.

Ingredients
  

  • "HEALTHIFIED" CHRISTMAS COOKIES
  • 1/4 cup butter
  • 1/4 cup cream cheese
  • 1/2 cup Natural Sweetener or powdered erythritol and 1/2 tsp stevia glycerite
  • 1/4 tsp baking powder
  • 1 tsp extract orange/lemon/vanilla/almond
  • 1/2 tsp Redmond Real salt
  • 2 cups blanched almond flour
  • FROSTING:
  • 2 cups Natural Sweetener or powdered erythritol and 1 tsp stevia glycerite
  • 1/2 cup butter or coconut oil
  • 2-4 TBS unsweetened macadamia nut milk
  • 1 tsp extract orange/lemon/vanilla/almond/strawberry
  • Natural Food Coloring

Instructions
 

  • Preheat oven to 300 degrees F.
  • In a large bowl, cream the butter and the cream cheese for 1 minute.
  • Add the natural sweetener, baking powder, extract and salt and continue mixing until creamy.
  • Stir in the flour until well combined and chill.
  • Place the chilled dough out onto a greased piece of parchment and top with another piece of greased parchment Roll the dough out to 1 centimeter thick. Uncover the top parchment and use your favorite cookie cutters to cut out cookies.
  • Place cookies on a baking sheet about 1 inch apart and bake for 12-15 minutes.
  • To make the frosting, combine all the ingredients in a medium bowl (start with 2 TBS almond milk and add more to get desired thickness).
  • Add desired extract and color.
  • Place the frosting into Ziploc bags and cut a small corner out.
  • Squirt onto cookies.

Hi Maria! I have had troubles with constipation since I was 6 or even smaller. I was in the ER constantly for pain and constipation all throughout my childhood and even adulthood. I would have to take ExLax often! I tried adding fiber and drinking water but nothing would work!!

The pain is so severe from being constipated that I thought that I was constipated and ended up going to the ER but only to find out I had kidney stones. From that appt on they told me to use MiraLax. I used MiraLax for about 12 years and when I read your post I knew that I wanted to try the supplements and try and get off MiraLax. I tried not taking MiraLax for 3 days here and there and then would become constipated so I would always have to go back on it.

I have been taking the supplements you suggested for 3 weeks now and I am having bowel movements regularly. Just wanted to say thank you for your help!

    I love the Swerve. I recently tried it for the first time because of your blog and recommendations. I normally use the xylitol, but Swerve is awesome. I have noticed since giving up sugar (or I should say most sugar, I am finding some still in normal things that I use) that I crave it less. When I started trying to give up sugar there were certain things I knew I would need to get this accomplished, #1 I would have to allow myself to fill up on whatever else there was to eat (proteins and fats), #2 I had to have a sweet substitute because I have a bad sweet tooth, #3 I have to allow myself not to be perfect and screw up and it is okay. I was nervous about it the first few days, I felt sick, but was determined. I think I might have been detoxing. And today, I can say that I don’t have a bad sweet tooth! I am very thankful for the recipes that you share because it keeps me motivated to stick with it. I hope to be able to afford more cookbooks and some day get a nutritional consultation, but for now slow and steady. Doing good. 🙂

    I have lost 60 pounds since beginning my sugar free campaign. I began by using S & L, Splenda, etc. but I felt that I was slowly poisoning my body using these chemicals.     Love Swerve products. I have both the powdered and regular versions. Making Christmas cutout cookies is one dessert I have not tried to recreate in a low carb version.     My anxiety and SAD has pretty much disappeared. For years, that was a big problem for me. When I am foolish enough to throw care to the wind and not eat properly, ex: Thanksgiving, a day or two after I am so sore all over and I feel the SAD kicking in. The thing is that I enjoy the healthified way so much better…it’s a matter of convenience and often cost that throws me off. I am so happy that this lifestyle change has been so positive . Before I’d avoid social situations at all costs. It was a constant feeling of hopelessness and darkness that I hid with a smile. I’d cry in corners. I feel like I am free and finally in control of my emotions. For anyone who’s felt that, they know what I mean. I realize that I have a long way to go with other areas of my life, ie weight, but I can’t say enough about how much I’ve learned from you, and how much you’re work is appreciated.     As an early 20-something, finding out you have cancer is not surprisingly, incredibly surreal. Throughout the process of my treatment, the option of a ketogenic diet was brought up and I was instantly on board. Not only has this diet helped me physically (I’m currently in remission), but mentally in the ability to really hone into a new ‘craft’ and develop a hobby of healthy eating/cooking. This blog is an absolute godsend. While there are a handful of Keto/Atkins blogs out there, to see such a diverse range of food is so uplifting (No more bacon/eggs-only breakfasts). People frequently mention how hard it must be to maintain this diet, but I can only respond with saying how I essentially have no restrictions. I can create anything I want with just a tad more effort.

    Sugar-free and grain-free has helped tremendously with headaches and productivity. I used to study and work long hours and for several years of my graduate program I devoured (processed, yuck!) honey in my tea, accompanied by Twix. Another option was 1-2 Red Bulls a night. Not to mention pasta for cheap dinner options. I always did great in school, but benefited from that extra nudge from sugar, RB, or even guarana powder. None of that now! I get a buzz (and can focus!) from simple sencha green tea 🙂 and like I said, no more headaches!
    One of my favorite recipes to make with Swerve are your chocolate chip cookies , cinnamon coffee cake, granola, and lemon poppy seed muffins!

    I hardly know where to start.. It was almost exactly 2 years ago after having my 4th child and being on the couch for the entire pregnancy, because I simple could not stand without extreme shortness of breath and fatigue and my heart would pound out of my chest. I had had depression problems throughout the pregnancy and much more so after the birth and that’s when I decided it wasn’t fair to my kids for me to not be able to take care of them.. I went to see a ‘natural’ doctor as I had went through test after test and $ wasted for years looking for answers from regular doctors. Thyroid, adrenal, blood sugar problems were a few of the things we discovered I had to work on. He said my heart was very weak.. that of a 70 yr old! (I was 27) He told me to take the Atkins approach to balance my blood sugar.. and that anything that comes in a package, don’t eat. That was his advice to me as far as diet went.. I started doing my homework. Everything I came across kept leading me back to your blog, and that I am thankful for! Thank you for all the info you provide. It has been a blessing.     I was reading about the different sweeteners you approve of in your cookbooks. I was thrilled to see that xylitol is good for oral/teeth health. My DH has been struggling with gum disease this past year. The only thing the dentist recommended was an expensive deep cleaning and antibiotics. This didn’t appeal to DH at all.
    Well, today we went hunting for xylitol gum and mints to tackle the problem this way.
    in our search, we found Ice Chips candy made with xylitol. It’s very tasty with no funky aftertaste or anything.
    Have you tried this candy? They have a peppermint flavor too. We were wondering if you thought it was safe to consume.

    I just tried out the cookie recipe and my cookies fell apart! Then i added an egg into the dough and that made them hold together. I just wonder why it did not work with the exact recipe… Can i make the cookie icing with eggwhites , powdered swerve and some lemonjuice?     I’m making 11 (not a typo, E L E V E N) batches of pumpkin muffins for my two teens and college student and wonderful husband..they (hopefully) should last a month. They eat one every morning with eggs. This recipe calls for 5 and a 1/2 cups of swerve, so I could use a restock 🙂

    Everyday that I get out of bed without pain AND can exercise is a miracle in my book! I am so thankful for your blog and books. I have been eating the Maria way for about four months and just purchased and read your Keto book. I have lost over 15 pounds and am amazed that I no longer crave m&ms!!! I am struggling however with being hungry ALOT. I used to be an eat six times a day person and your said not to snack. I try to eat more when I eat, adding more fat…finally got to 80% but still want to eat in a couple hours. Should I ignore the hunger pains and keep on keeping on? Will this feeling pass? My husband is “picky” about the aftertaste that other sweetener substitutes have, but with Swerve, I can’t keep him away from too many muffins, etc..I have noticed less joint pains and less depression and anxiety when eating sugar and grain free.

    I am just starting onto the path of natural sweeteners. I bought into the misconception that sugar is natural and therefore good.
    I developed metabolic syndrome with high BP, diabetes, enlarged liver, and obesity. Add to that adrenal gland growths, migraines, and now cancer! I have a large young family that need me and my kids will also have my lovely genetic pool! So, I am on a path if correcting what I can, and most of it starts with “sugar”!     I worry sometimes people will get tired of my story, but it’s near the same as the first one. I had digestive problems, was on meds for high cholesterol, high blood pressure and docs were warning me that I was pre-diabetic. I also had an elimination problem. I lost 108 lbs over two years between 10 and 8 years ago, and all of the above went away, except the elimination problem. By 2010, I was finally diagnosed with anal squamous cell carcinoma (the same thing Farrah Faucett died from), and mine was stage 4. They didn’t expect me to live, and surgery didn’t look promising. I had to put off surgery for 4 months due to a lapse in insurance, and read everything I could in the meantime about what fuels cancer cells. I came up with the same information: Those fast growing cells are too weak to survive on anything but glucose, and that proteins and fats provide nutrition giving the body the slowest, smallest amounts of glucose. Had I been eating sugar and grains those years, I’d have already died, I’m sure, and at that time, I made an extra effort to go very low carb. That stage 4, medium growing cancer, simply did not grow in those 4 months! The surgery was successful, I’m cancer free, and I will never go back to a high glucose diet again. My life depends on it. I’m happier and healthier than I’ve been in many years.

    I have been sugar free for all most 10 years now. I went gluten free in January of this year. I no longer have to take medication for my arthritis and as long as I stay away from sugar, I have lots more energy. It’s difficult as I work with all men who bring in sugary treats all the time. I try to have something to munch on that is healthy. When I bring in snacks that are sugar free for them, I do get teased for bring healthy food, but it is all gone by the end of the day.     I have found that I have less chronic anxiety since I switched to stevia/erythritol (Swerve). I use a combination of the two in baking and I love the Sweetleaf brand of flavored liquid stevias (Vanilla Creme is my favorite) in my coffee and smoothies. I also feel confident about my children’s diet since sugar isn’t one of their main food groups as I’ve seen in some of their friends diets. I think my children can learn and focus better in school, not to mention seldomly getting sick due to their alternative sweetened lifestyle. I am so excited to discover your blog yesterday when I was searching for low carb fiber cracker recipes on google. I can’t wait to share your blog with my Ketogenic friends.     Still struggling to be completely sugar free, but since I had Gastric Sleeve surgery in June I have eaten less
    sugar than I have in years and feel light years better for it. My fingers are not swollen and puffy and neither is my face. My skin is clearer not to mention my mind. I had come to believe some time ago that sugar was indeed akin to cocaine on the addiction scale. I am looking for a sweetener that works in place of sugar but have not found it yet. Sucrolose really isn’t all that great and those based on stevia just don’t work for me. I would love to win the Swerve basket as I have read some really good reviews of the product and am hoping that it might be the one I’ve been looking for.

    ACTUAL COOKIE RECIPE QUESTION: I am in the middle of baking these right now. I didn’t have any trouble getting them to cut out and get on the cookie sheet since I actually pulled out a ruler to see how thick 1cm is! However, at 15 minutes baking, they are still soft to touch. Is that right or do I keep baking them til not soft to the touch?

      I actually increased the temp to 325 and baked the next batch for 15 minutes. Still a little soft, but, I noticed the first 2 batches harden up as they cooled. These seem like they should be the best batch of all of them though. Cooling to ice them now. Grandbabies loved the first ones though. So, that’s a good sign!

    I eliminated sugar from my diet when trying to become pregnant. I list 87 lbs and finally became pregnant! I now have a beautiful 4 month old boy. I still am not eating sugar (or wheat and dairy) and it is helping me lose baby weight, as well as ensure that my son is not getting tummy aches like he was when I was eating dairy and wheat.

    You know I love to cook and eating what I cook, but I never know the value of health in my family. we’re from the south and we love our fried foods, but things change and life was more important. I wanted a better life for me and I’ve done low carb diets before and failed at it because I just didn’t know what to eat. Then I found this site on pinterest and I felt a great lift of worrying on what to eat. Thank maria for making my life easier.

    I have had my tryglicerudes drop 70 points, my husband has quit having acid reflux problems and because of his 40 lb drop in weight, his snoring has almost completley subsided!

    When I used to eat sugar and wheat I have very strong sweet cravings and every two hours I was starving. I would see black spots, feel shaky, feeling like I was going to pass out or be sick. I NRVER feel like that anymore. Food no longer controls me!

    I love that I don’t feel deprived after eliminating sugar. Swerve has been a wonderful addition to my pantry. Due to the cost I limit mankind desserts that require a larger quantity. I’ve loved using it in savory dishes as well, at teaspoon here, a teaspoon there. I’m about to complete Maria’s 30 day accelerated program and I’ve lost 13 lbs and that was over the Thanksgiving holiday.

    I can’t even begin to tell you how my life has changed since giving up sugar and grains. Found out I’m allergic to all kindsof things and cut them along with sugar. What an amazing change! I’d love to try swerve! Use erythritol and stevia a lot already and am always reading amazing reviews on swerve!!

Things like this blog and healthy ingredients like Swerve are helping me, like so many others on here, reclaim my life I’m slowly loosing weight, and can’t wait till I’m one of the people posting that “I lost 50lbs). What the manufactured food industry is doing to us all is a crime! It’s just a relief that blogs like these exist to provide a guiding light in the dark!

    I have never tried swerve but would love to. I started a grain free/starch free diet a year ago this month after being diagnosed with ankliosing spondylitis. I haven’t had to take any medication because of the diet change and hope to reduce my sugar even more in 2014.

I’m mostly only able to access the internet on my phone now so I don’t get on to the blog much and Christmas time would be the perfect time to win some of these things, I have to cut back at lot due to the expense of getting things to Australia :/ I’ve been sharing my butt off with your page and I’m also voting for you everyday for the blog competition.     I thought with the ingredients this would make a great Almond Crescent Cookie replacement. I was right. Thanks Maria for bringing my childhood memories back to life. I didn’t roll or cut the dough, just dropped and squished down on the pan, scattered some sliced almonds on top and then when they were out of the over I dusted them with the Swerve. Thank you so much for all of the recipes and inspiration!!!

    I have dropped 12 pounds since dropping wheat and sugar out of my life. Gluten is next and I hope my order of Blanched almond flour and swerve arrives before Dec 24th. If not I’ll be improvising with Trader Joe plain almond flour and a mixture of Splenda and Stevia in the raw and will make something else where the lack of blanched almond won’t be as noticeble. Any suggestions?
    I was surprised today to see Truvia Baking sweeter at Gordon Food Service–it has erthyritol sugar and then Stevia. I have been using Stevia since it could only be purchased as a cosmetic (was not approved for human consumption yet.

  • My 8 yo son was diagnosed with Epilepsy in November. Through the guidance of our doctor, we immediately put him on a modified ketogenic diet to reduce the number of seizures he would get. As the holiday approached and the kids in his class were eating candy and decorating cookies, he would come home and cry in his room. Then I stumbled upon your website. With his doctors approval, I made this cookie for him, so that he could enjoy a decorating party with his brother and sister. As a new mother of a special needs child, it brings tears to my eyes that I found your site. With the help of people like you, I can start to give my child some of the things he felt like he was missing.     I am on the path to improving my families eating lifestyle.. It is 2:23 am christmas morning and I can’t stop reading your blog and looking on amazon at your books! My 3 year old has a GF lifestyle and its so hard to keep her happy at the kitchen table and everywhere else we go. As of course I’ve needed to learn how to pack lunches. Gluten intolerance runs in my family and reading up on how I should have eaten during the pregnancy and after makes me feel so bad. I am trying my hardest to keep her healthy and I think an added change will do us all some good. I just wish I my husband to be as passionate about keeping our kids as healthy as possible. I guess that is all I would like for christmas..

    I made these for the first time today. I used almond extract and made them into raspberry linzer cookies. I cut them into star shapes with half having a hole in the star. I brushed them with egg whites and sprinkled on a little almond flour mixed with ZSweet. When cooled, I spread a thin layer of SF raspberry jam on the bottom of one cookie then topped with a second cookie ( the ones with a hole that I had already dusted with powdered Swerve). My husband loved them.

    Hi Maria!

    I made these cookies the other day and they were ahuge hit with my 7 yr old daughter. I have a casien allergy and avoid it as much as possible with my children too. So we made this recipe with goat cream cheese. While I enjoy the goat cream cheese with savory foods I didn’t care for it in this recipe. I’m wondering what would be the best substitute for the cream cheese besidesthe goat option. Inoticed you subbed coconut cream for cream cheese in your boston cream cupcakes. Could I do that in this recipe… Sub coconut cream for the cream cheese? Or would you recommend something else?

      Yes, I would try coconut cream. You might have to adjust the moisture a little (as coconut cream might have more liquid than cream cheese). 🙂

    What have I gained since going low carb/sugar….I haven’t seen the scale move yet, however my BIG thing was anxiety and not feeling “plugged in” if that make sense. I’ve been doing this for about a month now and my anxiety is gone and I feel more alert and have way more energy! It’s a huge plus for me;)

    Does the icing on these get hard? I’m looking for something to replace the sugar & egg white decorator frosting that gets hard. I’m hoping the Swerve can be used with egg whites. What do you think?

    Well, I tried to make these cookies. I chilled the dough and thank goodness only brought about 1/3 of it out and on the parchment to roll out… It warms up FAST, the first cookie cut out nicely, after that it was too soft and would just fall apart. So I returned the dough to the fridge and began just to take out enough to roll out for one cookie
