Churro Carnivore Waffles

My husband Craig always loved waffles! He would pick that over French Toast or pancakes when we were first dating (over 25 years ago!). Now that he is a carnivore to manage his pain for Ankylosing Spondylitis, I wanted to make a special carnivore waffle recipe for him.

Since churros are also SUPER delicious, I married waffles with churro flavors and made a churro carnivore waffle!

HOW TO MAKE CHURRO CARNIVORE WAFFLES

To make my carnivore waffles, I used Equip Prime Protein powder which is made from beef! I used vanilla Equip but you can use their unflavored protein powder if you are strict carnivore. Either way, they are SUPER delicious!

I have been addicted to Equip protein powder for the past year and I have it every day! No lie! It is a great way to increase your protein without adding fat. I have noticed my skin and hair have gotten more luminous over the past year and I believe it has a lot to do with my protein intake!

So if you are craving waffles without the carbs, you must try my recipe!

CHURRO COATING:

  • 2 tablespoons butter melted (or butter flavored coconut oil for dairy free)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons Natural Sweetener granulated erythritol

Instructions

  • Heat waffle iron to medium high heat.
  • Place the eggs into a medium bowl (or a blender) and beat with a hand mixer (or with the blender on high) until well combined.
  • In another bowl, stir together the collagen or equip, gelatin, and salt.
  • With the hand mixer (or blender) on low, pour in your dry ingredients into the egg mixture. Keep mixing for about one minute until batter thickens. Add the stevia glycerite if using.
  • Spray the waffle iron with tallow spray and place ¼ cup of batter into the center of your waffle iron. Cook for about 4 to 5 minutes until golden brown and crispy. Repeat with remaining batter. NOTE: If you underbake them, they will shrink.
  • In a shallow bowl, combine the cinnamon and natural sweetener. Use a pastry brush to brush melted butter over each warm waffle. Dip the buttery waffles in the cinnamon mixture. Repeat with the remaining waffles.
  • Enjoy while they are still warm!

TESTIMONY OF THE DAY

“Thank you Maria Emmerich!

I was 335 at my highest 2 years ago, and now 190. My husband thinks I’m a genius in the kitchen and I owe it all to you! I only use your recipes but he thinks it is all me!

You changed my life! I went from taking 3 blood pressure and one cholesterol pill a day to NONE!

I’m in my first size medium shirt today. In the first picture, I was a size 5xl! I lost 145 pounds!

Thank you for sharing because I owe this all to you! I did dirty keto (didn’t know better) but “Emmerich Keto” for the past year and it is truly a lifestyle now. Not a diet!” Ashlie

If using the unflavored Prime Protein Powder, what recommendations would you make to then add flavor?…vanilla?? And how much would you add? (I’m looking for ways to use my unflavored Prime Protein Powder) Thanks, Maria!😊

    • Maria Emmerich says:

You can add any flavors or extracts of your choosing. How much depends on what you use and how concentrated is. I suggest starting with a teaspoon, and adjust from there.

  • Lisa Garza says:

Would it mess up the texture of the churro waffle if I added the cinnamon/allulose in the mix instead of adding it afterwards?

  • Shannon says:

Can these be made ahead and frozen?
