Place the eggs into a medium bowl (or a blender) and beat with a hand mixer (or with the blender on high) until well combined.
In another bowl, stir together the collagen or equip, gelatin, and salt.
With the hand mixer (or blender) on low, pour in your dry ingredients into the egg mixture. Keep mixing for about one minute until batter thickens. Add the stevia glycerite if using.
Spray the waffle iron with tallow spray and place ¼ cup of batter into the center of your waffle iron. Cook for about 4 to 5 minutes until golden brown and crispy. Repeat with remaining batter. NOTE: If you underbake them, they will shrink.
In a shallow bowl, combine the cinnamon and natural sweetener. Use a pastry brush to brush melted butter over each warm waffle. Dip the buttery waffles in the cinnamon mixture. Repeat with the remaining waffles.
