Protein Noodle Chicken Alfredo
OH MY GOODNESS! Move over Olive Garden! My Protein Noodle Chicken Alfredo is taking over!
Last week I had an interview with Good Morning America and one of the questions they asked me was, “How do you come up with these creative recipes?”
When I was a young teenager, I loved going to Olive Garden! I grew up in Medford Wisconsin which is a small town so Olive Garden was a special treat. It was usually when my mom would take me school shopping in Eau Claire Wisconsin, which was about 90 minutes from Medford. I would always get the Chicken Alfredo!
I still want to enjoy my favorite foods and I finally came up with a delicious Chicken Alfredo using my Protein Noodles!
So many of you LOVE my Protein Noodle Lasagna, I thought I must try my delicious Alfredo sauce over protein noodles!
I had Applegate Chicken in my fridge that I wanted to use up because I was suppose to make my Protein Noodle Lasagna for Halle Berry last Friday, but we ended up not doing the video, but we did make Bourbon Chicken together, which was super cool! I post the video of us cooking together on my YouTube channel in a few weeks!
This Protein Noodle Chicken Alfredo recipe is so good, you are going to want to make 8 servings to have plenty of leftovers! However, if you only want to make 4 servings, you can easily cut the recipe in half.
Protein Noodle Chicken Alfredo
Ingredients
ALFREDO SAUCE:
- 1 cup butter
- 1 head roasted garlic click HERE or 2 cloves raw garlic, minced
- 8 ounces cream cheese
- 2/3 cup beef broth I used Kettle and Fire brand
- 1 cup freshly grated Parmesan cheese
NOODLES:
- 8 packages deli chicken sliced into fettuccine shapes (1 6-ounce package of sliced deli chicken noodles per serving) OR use 8 servings of my recipe HERE
Instructions
- Make the sauce: Place the butter in a saucepan with the garlic and cook until light golden brown, stirring constantly so the butter doesn’t burn. Turn the heat to low and smash up the garlic in the butter. Stir in the cream cheese, broth, and Parmesan. Simmer for at least 15 minutes (the flavors open up if you simmer longer).
- While the sauce simmers, slice the deli meat into fettuccine shaped noodles.
- Once the sauce is finished, pour the sauce over the chicken noodles and enjoy!
- Store extras in an airtight container in the fridge for up to 4 days. To reheat, place the sauce with the noodles into a pot over medium heat for 3 minutes or until heated through.

😃 This sounds AMAZING!! It’s like the gorgeous love child of your Deep Dish Alfredo Pizza & your Protein Noodle Lasagne!! Mmmmm 😋🎉💕
Can’t wait to try this! I just made your Protein Noodle Lasagna and OMG, it was soo good! But, just to clarify…8 packages of the chicken? Should that be 8 ounces?
Yes, it is 8 packages (1 package per serving). 🙂
I just made this for dinner tonight and it was a HUGE hit. I’ve never made homemade Alfredo. Thank you, it was a real filling treat
Thank you!!
This sounds fabulous! My favorite dish is Fettuccine Alfredo tho I’m wondering how long it would take for me to cut chicken up into fettuccine shaped noodles. Is there a trick to doing it fast?
Infinite love and appreciation for all you do and share with us!
Thanks! I just lay them in a stack and cut long strips. 🙂
I use a pizza cutter. Super effecient!
Great idea!
can you please show us how you make the chicken noodles?
Just check the video. 🙂
Yum! I’m definitely going to make this. What’s the best way to heat up the protein noodles? Thanks!!
I would just heat the sauce and add to the noodles. 🙂
Do you have a recipe for the noodles?
This looks yummy
You just slice deli chicken breast into noodle shapes. 🙂
Dear Maria,
Warm greetings from the beautiful Klein Karoo, South Africa.
With the current world pandemic we cannot get any of your books in South Africa. I am desperate for your Carnivore Cook Book. I have placed your book on various wishlist’s. It will be my first book … and hopefully, with our not so favorable exchange rate I will be able to save up for all your other books in the near future.
Thanks!
Hello! This recipe looks amazing and I’m going to try it this evening. I’m curious though, do you heat the “faux noodles” or leave them cold. I see your reheat instructions but in the original recipe it didn’t call for the chicken
or “faux noodles” to be heated… I’m sure it’ll be great either way, I’m just curious.
Thank you!!
I just add the hot sauce to them and it warms them up. 🙂
I can’t wait to make this! Does saving leftovers and reheating the next day make the chicken slices taste weird at all? Just curious. Also, where did you get your plates/bowls? They are gorgeous!
I think it should be fine. Thanks! 🙂
The recipe says “8 packages” of Applewood chicken – could it mean 8 slices of chicken instead? I love your protein noodle lasagna – can’t wait to try this!
Nope, 8 packages. One package per serving. 🙂
How cool is that?!!!! I thought it was great for you to be interviewed by GMA, but then you mentioned Halle Berry. Wow! I’ll bet you do a lot of consulting for people with big names like that. So happy for you that you get these experiences because of all of your hard work. As the saying goes, “You’ve come a long way, baby!”
Thank you!!
Hi there, Are these recipes in your Keto Cookbook? When I try to print these from here there is writing on top of writing. I am not able to get a good copy printed. Thanks I have your “The Ketogenic Cookbook.” Thanks
Christiane Key Beckom
This recipe is not in that book, sorry. 🙂
This looks so delicious, I would love to try it. I wonder if I can simply cut a chicken breast into very thin slices? I don’t know what kind of chicken you are using, probably I won’t find it here in Germany….
That might work. 🙂
Oh, sorry for the question, I now discovered what it is 🙂 never mind the question! 😅
Tried this recipe today and it was outstanding! Definitely satisfied my craving for rich and creamy chicken fettucini. Thank you for sharing this easy and delicious recipe, it will be a new favorite for sure.
Thank you!
What am I’d doing wrong, I’ve made the Alfredo lasagna and now this and both times when I’m summering, my butter separates from the rest of the ingredients.
There are some tips here. 🙂
