Migraines and Headaches
When clients come to me pleading for help eliminating migraines, I grin because to me it is an easy fix and I know they are going to feel wonderful soon. I have clients wanting me to help eliminate their chronic headaches and migraines all the time. I have lots of tips and tricks up my sleeve so when I started having headaches, I was puzzled. It all started when I decided to see if I were a candidate for LASIK eye surgery (which I am not). The clinic requires you to wear your glasses for a few days which my glasses are a bit weak, but I still wore them for the required time.
Once I heard the bad news that I was not a candidate since my eyes are just too bad (I’m a -11 prescription), I put my contacts back in. That day, my 3-year-old was being a typical 3 year old and I blamed my headache on his behavior. But when the headaches continued for the next 3 days, I knew something was wrong. I went to the eye doctor and yep! I was over-prescribed. I was SO ecstatic to go down a 0.5 because that meant I could wear “night and day” contacts (the kind that you can wear for a month without taking out). They don’t make “night and day” in a -11 but they do in a -10.5!!!
Anyway, my point is, there are numerous nutrition reasons for headaches and migraines but one thing that is often overlooked is our eye sight. So when nothing else is working, get your eyes checked! First off, you must drink half your body weight in ounces. Dehydration and not enough quality salt are main causes of headaches. There are a few other major causes of severe headaches and migraines, and they all can be healed by a well-formulated keto-adapted diet as well as therapeutic doses of vitamins and minerals which you may be deficient in. Oh my, these are a favorite!
SHELL:
2 egg white
2 TBS butter (melted)
2 ounce cream cheese (softened)
1/2 cup almond flour
1/2 cup vanilla egg white
Heat a pizzelle skillet on high. Whip the white until frothy, not stiff. Add the almond flour, vanilla whey, and other ingredients. Mix until smooth.
Place 1 TBS dough onto greased skillet, close tightly. Let sit for 1-3 minutes depending on skillet directions. While you are removing, before it cools, roll into a cylinder shape. Set aside to cool.
FILLING:
3/4 cup whole milk ricotta cheese (drained overnight w/ cheesecloth & squeezed dry)
3/4 cup mascarpone cheese (or cream cheese)
1/4 cup Swerve (or stevia glycerite to taste)
1/2 tsp vanilla
1/2 tsp ground cinnamon
A pinch of salt
Mix filling ingredients together. Cover and refrigerate until ready to use (at least a couple of hours). Use a Ziploc ( cut the corner ) and pipe into the shells. Let the filling smoosh out of each end of the shells, just a tad. Keep the cannoli refrigerated until dessert time or whenever you are ready to serve. Makes 12 servings.
NUTRITIONAL COMPARISON: (per cannoli)
Traditional Cannoli = 250 calories, 7g fat, 4g protein, 44 carbs, trace fiber
“Healthified” Cannoli = 118 calories, 8g fat, 8.4g protein, 1.6 carbs, trace fiber

I’ve been looking for a skillet and can’t find anything in the UK – I’d buy from overseas but the customs charges are murder.
Do you think this would work if I put a roughly round bit of dough on a flat sandwich/pannini press? It wouldn’t come out perfectly round or as pretty as yours but I was thinking it might work. What do you think?

Yes, they would probably not be crisp anymore after a day or two. You can keep the filling separate and pipe it in right before serving to help keep them crisper. 😉
