SCALLOP “POTATOES”
1 (8 ounce) package cream cheese, softened
1/2 cup Sour Cream
1 cup organic
veggie/chicken broth
3 pounds (6 cups) Cauliflower stems, thinly sliced
1 (6 ounce) package sliced ham, chopped (optional)
1 (8 ounce) package shredded Cheddar cheese, divided
Heat oven to 350 degrees F. In a medium pot, boil water (or chicken broth) and add the sliced cauliflower. Boil for 5 minutes or until tender.
In another saucepan, mix cream cheese, sour cream, cheese and broth until well blended. Add 1-3/4 cups of the cheese; stir gently to mix all ingredients.
Spoon cauliflower, ham and top with melted cheese mixture into 13×9-inch baking dish sprayed with cooking spray. Sprinkle with remaining cheese. Bake 20 minutes or until casserole is heated through and cauliflower is tender. Makes 12 servings.
NUTRITIONAL COMPARISON (per serving):
Using Potatoes = 220 calories, 16g fat, 10g protein, 10g carbs, 1g fiber
“Healthified” Cauliflower = 195 calories, 16g fat, 10g protein, 4.3 carbs, 1.4g fiber
can these be frozen and reheated?

Just wondering, when you said cauliflower stems, does that include the flower/floret at the top (not sure what that is called 🙂 )? Or just the stems?
I just used the stems for this (so they looked like sliced potato) but you can use any part you like. 🙂
How many heads of cauliflower would it take to get 3 pounds (6 cups) of stems?
Depends on size of the heads but 2-3.
Thanks for the response about number of heads if using stems only. If one were to use florets only, how many heads would be needed?

Try radishes. When you back them – yes, you can bake radishes – they lose their harshness and they soften up like potatoes 🙂

Radishes have .2 carbs per 1 medium (3/4 to 1″ in diameter.) So a serving of, say, five (which is a lot, sliced with a sauce) have 1 total carbs. I have tested and they do not spike my blood glucose. They work well as a roasted potato substitute, too. Sliced, roasted with olive oil and salt. They take quite a while to cook – about an hour.
Just finished prepping mine with radicchio…excited for tomorrow night’s dinner. I used the bone broth from the Ketogenic Cookbook, sauce was so tasty I wanted to eat it with raw radicchio.
I just made for our family and everybody went crazy for it. My husband is in disbelief that this was Keto. He said it is one of the top meals I have made. Thank you for the recipe!
