This is my first Christmas being grain-free. I would LOVE to figure out how to make something close to a Polish cookie, kolacky. My mother’s recipe was simple: flour water, butter combined, rolled thin & cut into squares, topped with a fruit or nut filling, two sides folded toward the center. They were heavenly, but I just haven’t found anything that would work for the cookie dough. I will just have to make new traditions!

I just put together it is the sugar in my 86% dark chocolate that has been making my hair fall out. A life without CHOCOLATE?!?! Must win this!!

Well, I have to say my favorite holiday treat used to be the cornflake wreaths made with marshmellows, but today, they taste like chemicals, mainly because they are. I have not yet figured out a substitute for those little goodies, but there are so many more….I would have to say today, my favorite treat is non-sugar sugar cookies with cream cheese frosting (of course sugar free). 🙂

My favorite holiday treats are, toffee, Christmas cookies, and pumpkin pie mmmm I also like flan and chocoflan cake. Have you ever tried healthifying tamales or gorditas? I also have a question, ok so I was reading on a low carb site that black soy beans are very low carb is this true? But on other sites they were saying that edens soy beans brand didn’t include all the carbs on their label and I am very confused. Since we are Hispanic beans was always a food we had growing up and I tried the eggplant beans but something just tasted off.
What a great gift in time for some Christmas baking. Eating this way has given me more energy & I am sleeping much better!

I have a question about your program and my taste buds. I don’t like coconut at all. My husband is gluten intolerant so I have made up a “four” free mix that includes coconut flour and I don’t taste it but am very leary of trying coconut milk, oil, ect because am afaid eill taste like coconut. My husband is also dairy free-I see you use whole cream in recipies…any substitutions for that. I’m really interested in your program, just need these questions answered. I usually make an assortment of these and give them to my friends and neighbors on Christmas Eve. Sharing my homemade goodies is an important part of Christmas giving for me.

my favorite christmas treat is chocolate glazed donuts! but my favorite family treat is a nutroll my great grandma used to make, it’s a sweet bread with a walnut filling, I have to try to figure out how to make this without the flour. any ideas how to make a sweet dough that could be rolled out flat, then rolled like a jelly roll with that yummy walnut filling?

I started Keto about 2 years ago after meeting Gary Taubes, author of why we get fat at my university. It worked really well and I was in the best shape of my life. About 8 months ago I got a bit off track and started gaining weight and experiencing lots of problems with GERD and bloating. I discovered Maria’s site about 3 months ago through Pinterest. I have been eating like a king! Everything I have made has been delicious, the products are great, and best of all I feel amazing. I lost the weight I had gained back, I am no longer having cravings or feeling weak, and best of all, my stomach issues are gone and I no longer need yo take the super expensive Nexium! Thank you Maria— I am a fan! My dad is an leading Alzheimer’s researcher and advocate of ketosis as a method of treatment. My favorite Christmas treat is a recipe I converted to LC/SF called “Irish Bread”. It is a spice nut raisen bread. I am happy I can eat it now. Merry Christmas & Happy New Year to you and your family.

Holy Jumping – I am spending SO much time here, reading all of Maria’s fabulous recipes and tips, and all the treats people are saying are their ‘favs’. I have too many to list here, but am forbidden to get through a Christmas without making at least one batch of Almond Rocca!! LOL Considering it’s mostly toasted almonds, chocolate, butter – and the not-so-good ingredients like white sugar and a wee bit of corn syrup, I figure there must surely be a ‘healthified’ way with a sugar substitute…though not certain about what would substitute for the corn syrup? Whatever it is, has to reach the ‘hard ball’ candy stage as the rocca turns into hard candy.
It’s ten days to turkey time, folks!! 🙂

Favorite Christmas treat? My mom used to make a banana pudding for Christmas only. Never got it until then because she made the pudding on the stove and with those vanilla cookies, sliced bananas and whipped cream on top? YUM! The pudding would still be warm as she poured it onto the layer of cookies and bananas. It would soak into the cookies! Oh YUM!! Wish there was a low-carb, gluten free option of this!

My favorite Christmas treats are all the cookies, and the fudge my grandmother used to make. I have healthified some of the recipes but not all of them.

My fave Christmas treat (besides the sweetest kisses ever from g-babes) is Lindt white chocolate truffles. Unfortunately, they do not make a low carb truffle so .. that sweet treat is out. It would be great to find a nice alternative to have once per week. After all, eating cleaner and healthier is now the way I plan to eat .. for life. That means an occasional treat that will not harm me is something I would really love to find. 🙂
We love brie for Christmas… and cinnamon rolls! I am new to this keto world and excited to try your recipe for cinnamon rolls, Maria. I just made your tortillas last night so we could have REAL tacos (instead of in a bowl) and they turned out GREAT once I got the hang of transferring them to the pan! They held together so nicely too – awesome to have a taco again! Thanks so much for sharing knowledge with others – we wouldn’t know how to do this successfully without your help.
