Chicken Wings with the BEST Blue Cheese Dressing

CHICKEN WINGS
3 TBS coconut oil or butter
3 cloves garlic, pressed
2 tsp chili powder
1 tsp garlic powder
Celtic sea salt and ground black pepper to taste

Preheat the oven to 375 degrees F (190 degrees C). Combine the butter/oil, garlic, chili powder, garlic powder, salt, and pepper in a large bowl. Rub onto the wings with your hands until well coated. Arrange the chicken wings on a baking sheet. Cook the wings in the preheated oven 1 hour, or until crisp and cooked through. Meanwhile, make the dressing.
THE BEST BLUE CHEESE DRESSING:
2 1/2 oz blue cheese
3 TBS organic beef broth
3 TBS organic sour cream
2 TBS Organic Mayo
2 tsp coconut vinegar
1/8 tsp garlic powder
Celtic sea salt and freshly ground black pepper
In a small bowl, mash blue cheese and broth together with a fork until mixture resembles a broth large-curd cottage cheese. Stir in sour cream, mayonnaise, vinegar, and garlic powder until well blended. Season to taste with salt and pepper. The dressing makes 4 servings.

Traditional Blue Cheese Dressing = 241 calories, 1.2 carbs

Maria do you have a homemade version of Mayonaise? I seem to remember a recipe from a nutritionist years ago and only remember it used egg whites and something else. The organic Spectrum Mayo is a bit pricey!
Hi, I don’t have my own, but all you would have to do is take a recipe like this:

and substitute sugar for Swerve, coconut vinegar for vine vinegar and use 1 cup of a good oil like olive oil or macadamia oil. 🙂

maria…ive made blue cheese dressing but with buttermilk which has more carbs. ill have to try yours. i use the wonderful maytag blue from newton iowa. wonderful stuff! a trick: freeze your extra dressing in ice cube trays andd keep the cubes in a resealable plastic zip lock bag. then you can thaw just what you need. maytag blue cheese is expensive and this reduces waste. i made your shortcake recipe by the way and it was sensational. im a sixty something guy with little baking experience so its exciting for me to make something that tastes great! you are helping me control my glucose as a type 2 diabetic i have to watch it.

I liked having some chunks of garlic in there bot not too many. You can just use more garlic cloves if you like. 🙂

Are you using chicken wings or cauliflower?
The recipe is for chicken wings but the photo is an option you can do for buffalo cauliflower. 🙂
These were great and my toddler loved them. It was a challenge applying the mix to the chicken. I think the chicken was lowering the temperature of the coconut oil and then it was hardening. Would I have this same challenge with butter? Probably not with olive oil. I might just toss them in this mix on a frying pan next time after the wings have cooked. Thanks!
Just make sure oil or butter is warm enough;)
