“HEALTHIFIED” POPS
1 cup strawberries, sliced (or strawberry extract)
4 oz cream cheese or coconut cream, softened
1/4 cup unsweetened vanilla almond milk
4 TBS Swerve (or erythritol and 1 tsp stevia glycerite)
Place all the ingredients in a blender and puree until smooth. Pour mixture into Popsicle molds. Place in freezer for at least 2 hours and serve. Makes 4 servings.

Ben and Jerry’s = 230 calories, 13g Fat, 3g protein, 27 carbs, 0g fiber
“Healthified” Pops = 112 calories, 10g fat, 2.4g protein, 3.5 carbs, 1g fiber

I tried using only three level tablespoons of Swerve. It was still too sweet, but otherwise good and easy.
I made these with plain goat cheese & xylitol in place of cream cheese and truvia ..YUM!! So good I really don’t want to share with the kiddies, but I GUESS I will anyway…..

The boys shared one last night (I made them in paper cups with popsicle sticks and the paper cups were a little too large) and they LOVED them! Since I made them with xylitol, I ground it into powder and could use even less than the specified amounts because its so sweet. Can’t wait to try them with truvia next time 🙂
YUMM! I love all these kid friendly recipes. I am trying so hard to work with my 2 year old and these really help me out. She is the worst eater she won’t touch meat or most vegetables.

Maria – I made these last night and we just had one. The flavor was so good, but I’m still getting the crystallization, even with the Swerve, that I don’t find all that appealing. I got it in the lemon bars from your site too. I’m thinking that anything other than a cakey-baked good-type texture, I should probably grind the erythritol/swerve to avoid that. One question, do you think if I grind it-powdered, I should use less? How much less would you guess? I noticed another reader up above used less when it was powdered but they didn’t say how much. I know I can do it to taste, but what’s your opinion on how much less to use if it’s in powdered form?

I made this recipe again with just 1 level tablespoon of powdered Swerve. That’s really all it needs if the berries are sweet. It was perfect.

Hmm, I don’t think that would work. I just get a can of coconut milk (usually in ethnic section of grocery store) and then skim the cream off the top. 🙂
What would you suggest for those that cannot have anything canned?
I would use boxed milk.
Hi Maria, I feel so dumb asking this…but I bought Coconut Manna the other day. Is this the same as coconut cream? My daughter is not to crazy about cream cheese, so I’m hoping this will be a great substitute. Thanks so much!
It is not the same as coconut cream, more of a coconut butter or cream cheese substitute. 🙂
can you sub regular milk or coconut milk for the almond milk?
