Kai’s Birthday
Today is my baby boy Kai’s 2nd birthday, which is a very special celebration because we were unable to be with him on his 1st birthday. As I watched this video of when we first met the boys while holding them tightly on my lap, I couldn’t help but cry with an overwhelming feeling of joy.
This video is of our first visit to meet the boys. It was a bittersweet meeting because we had to leave them in Ethiopia after falling in love with them. I am thankful we didn’t know it was going to take 6 months of waiting to be able to bring them into the U.S… the wait would have killed me. We took one week at a time, hoping that this was the day we were going to fly to bring them home. Finally on the day before Thanksgiving, we brought them into our home and the journey began!
This is a very special dish to my family! When we were in Ethiopia, one of the things we ate all the time was Doro Watt. It is a traditional dish that is made with lots of onions, chicken and hard boiled eggs. The trick is the spice they use. Craig found a mixture of the spice called Berebere (that way I didn’t have to buy a million spices for this dish). We just ordered another canister because, as you can see, the boys LOVE this dish! I asked Micah if he remembers eating it and he didn’t really answer… I think he was in food heaven!
“HEALTHIFIED” DORO WATT
2 large onions, chopped fine
1 clove garlic, minced
1/2 cup butter (or coconut oil/duck fat/leaf lard/beef tallow/bacon fat if dairy sensitive)
4 TBS Organic Ethiopian Berebere
2 tsp Redmond Real salt (use code MARIA15 for 15% off)
1 whole chicken, separated into legs, breasts, thighs
8 organic hard boiled eggs
Chop the onions and place into a crockpot with the garlic and butter/oil, Berebere and salt. Turn on low and let sit over night or
until the onions caramelize. In the morning (or after 8 hours), place the chicken into the crockpot (I love THIS crockpot as it has a delay timer so I can make sure it done when I get home:)) and let it cook for another 8 hours or until the chicken is done and very tender. Meanwhile, cook the hard boiled eggs. Place the chicken/onion mixture onto a beautiful dish and mix in the hard boiled eggs. SOOOOO good and easy! Makes 8 servings.

“Healthified” Doro Watt = 315 calories, 25g fat, 19g protein, 4g carbs, 0.8g fiber (71% fat, 24% protein, 5% carbs)

Maria, your children are beautiful! I understand your tears. Sometimes I still get teary-eyed, fifteen years after we brought our son home from an orphanage in Ukraine, to talk about his adoption without tearing up. We met him when he was almost six and ended up having to wait four long years while the Ukrainian government revamped its adoption process before we could bring him home. I never thought it would be possible to wait a long time without giving up or going crazy, but as you say, you do it a day at a time when you have no other choice. We had two other children (from Korea) at home to take care of during the wait, so that helped. I know you feel blessed to have your precious boys, but they are also blessed to find parents who will give them love and good health.

Thanks Norma! We are planning a book in the “The Art of Healthy Eating” series for Holidays and plan to put a lot of personal stories in it. I don’t think berebere (especially using the mix I link to) is too hot. It was a great flavor and isn’t really that spicy at all. 🙂

I am curious what you would serve this with? 1 chicken for 8 people is not very much food.
We it this by itself. With all the butter, chicken and eggs it is very filling. 🙂
Has anyone actually made this recipe? My onions were a blackened mess by the morning….did I miss a step? Is there water or chicken stock that should be added?
Most crock pots have different temperatures so cook them for less time next time. 🙂

Our son is from Ethiopia as well! We met him in Addis Ababa January of 2010, back when parents only needed one trip to Ethiopia. 🙂 Thank you SO MUCH for posting this recipe. Teshome, our son, has Sensory Processing Disorder and a history of seizures. We are gluten/dairy/soy free but we recently have been looking into the ketogenic diet to help. I greatly appreciate your attention to neurotransmitters/diet. This seems to be what we need a bit more help with for our son. Especially with spring allergies and the elevated histamine in his system. Are you familiar with the work of Dr. Karyn Purvis? The Connected Child has been our go to book!
