Protein Mint Chip Ice Cream

Ingredients
- 1 cup water (or unsweetened coconut milk)
- 1 scoop Vanilla Equip Protein Powder
- 1 scoop Equip vanilla collagen
- 1 large egg
- 1/2 teaspoon mint extract
- 1 teaspoon stevia glycerite (optional)
- 1/8 teaspoon Redmond Real salt
CHOCOLATE MINT CHIPS:
- 2 tablespoons coconut oil (or butter) softened
- 1 scoop Chocolate Equip Protein Powder
- 1/4 teaspoon mint extract
- 1/4 teaspoon stevia glycerite
Instructions
- Place 1 cup water or unsweetened low fat coconut milk into the ninja creami container. Add the protein powder, collagen, egg, salt and sweetener if using.Ā
- Use an immersionĀ blender to combine the ingredients. Add more water until you reach the fill line. Stir with a spoon. Taste and if desired, add more stevia glycerite or mint extract.Ā
- Freeze for at least 6 hours or overnight.Ā
- While the ice cream freezes, make the chocolate mint chips. Place the softened coconut oil or butter into a food processor. Add the protein powder and pulse until well combined. Add the extract and stevia. Pulse to combine. Taste and adjust as needed, adding more sweetener or mint if desired. Place the mixture onto a piece of parchment paper and spread with a spatula into a thin layer. Place in the fridge to set. Once hardened, break into small chips. Store in the fridge until you are ready to make the ice cream.
- When ready to consume, allow to sit on the counter for 10 minutes (or sit in hot water for 2 minutes). Making sure it doesn't get too liquidy yet soft.
- Place in the Ninja Creami on the āliteā setting. This will spin for about 3 minutes. Check consistency and if you desire a creamier texture, run the mixture on the āgelatoā setting. Depending on your desired texture, will determine your settings.Ā Add the chocolate mint chips and press the "mix in" setting. Enjoy!

Is there a way to get the āchipsā to look darker? Can you add some type of dark chocolate to the Prime mixture? I donāt know if something like bakerās unsweetened chocolate or something else?
I notice that you donāt try any of the food you make. Is that for health reasons? Your son is absolutely adorable and I love when his eyes go big when he loves something but I think it would be a sweet moment between the two of you to each taste it and give us both of your perspectives. When you donāt try your food it makes me wonder if you donāt like it.
You can add some unsweetened cocoa powder for a darker color and deeper flavor. Kai always does my taste tests for my videos and I almost always film myself trying it too for my shorter clips on Reels and Tiktok š
