Lemon Collagen Protein Balls

Ingredients
- 8 ounces low fat cottage cheese strained well (or softened cream cheese)
- 1/4 cup powdered allulose
- 2 scoops Further Food Lemon Collagen
- 1 scoop Further Food Vanilla Collagen
- 1 teaspoon stevia glycerite
- 1/4 teaspoon Redmond Real salt
COCONUT COATING:
- 1/2 cup unsweetened shredded coconut
- 1/4 cup powdered allulose
OPTIONAL :
- 2 scoops Further Food creatine
- 1 tablespoon lemon zest
Instructions
- In a medium bowl, place the strained cottage cheese (or cream cheese), sweeteners, Further Food collagens and salt. Add the creatine and lemon zest if using. Use a hand mixer to combine until smooth. Taste and adjust sweetness to your liking. Place in the freezer for 10-15 minutes.
- Meanwhile place the coconut flakes and allulose into a small bowl and stir to combine.
- Remove the cream cheese mixture from the freezer and form into one inch balls; you will get 16 balls. Roll in the coconut mixture. Place in the fridge for at least 6 hours to set and enjoy!
