No Bake Strawberry Cheesecake Bars

My son LOVES cheesecake but I don’t always love going through the trouble of baking a cheesecake which is why I am in LOVE with my new no-bake Strawberry Cheesecake Bars!

Not only are these cheesecake bars simple, they are also super delicious!

HOW TO MAKE NO-BAKE STRAWBERRY CHEESECAKE BARS

To make my no-bake Strawberry Cheesecake Bars, instead of strawberries, I used strawberry Equip prime protein.

No Bake Strawberry Cheesecake Bars

Equipment

Ingredients
  

  • 8 ounces cream cheese softened (or Kite Hill cream cheese if dairy free)
  • 3 tablespoons powdered sweetener (I used allulose and 1 teaspoon stevia glycerite)
  • 3 scoops Strawberry Equip Protein Powder

CHOCOLATE TOPPING

  • 1 ounce unsweetened baking chocolate chopped fine
  • 5 tablespoons butter (or butter flavored coconut oil)
  • 3 tablespoons powdered natural sweetener (I used allulose and 1/2 teaspoon stevia glycerite)
  • 1 scoop Chocolate Equip Protein Powder

Instructions
 

  • Place the softened cream cheese, sweetener, and protein powder in a large bowl and use a hand mixer to combine until smooth. Taste and adjust sweetness to your liking. Place the mixture into the bottom of a parchment lined 8x8 inch baking dish. Place in the fridge while you make the chocolate topping. 
  • To make the topping, place the chopped chocolate and butter into a medium bowl. Heat in the microwave at 20 second increments and stirring in between until the chocolate is completely melted. Add the sweetener and prime protein. Use a hand mixer to combine until smooth. Taste and adjust sweetness to your liking. Pour over the cheesecake layer. Place in fridge for 4 hours to set. Cut into 12 squares.

    Just made these with my 2.5 yr old😉”mmmm nummy!” he says as he tried them. These were easy, scrumptious and no guilt having a little treat so thank you for that. That protein powder is so amazing for a mom that sometimes just needs a quick nutritious protein packed snack or smoothie for her little one.
