The BEST Protein Ice Cream
Equipment
Ingredients
- 1 cup heavy cream (or full fat coconut milk)
- 1 cup unsweetened macadamia nut milk (or low fat boxed coconut milk)
- 2 scoops Vanilla Equip Prime protein powder
- 1/4 cup powdered allulose
- 1 teaspoon stevia glycerite
- 1/4 teaspoon Redmond Real salt (helps keep ice cream soft)
- 1/4 teaspoon baking soda
Instructions
- Place the heavy cream into a blender and puree until light and fluffy. Add the rest of the ingredients and gently pulse to combine well. Taste and adjust sweetness to your liking.
- Place the protein ice cream into an ice cream maker and follow the directions of your ice cream maker. (click HERE to find the ice cream maker I LOVE)!
- Store in an airtight container in the freezer for up to a month.

I was depressed, unhappy, sick, and felt very ugly. I’ve struggled with my weight loss since I can remember. I remember being made fun of when I was 8 by the lake with my mom and sister. I remember being called thunder thighs at 14 right before I dove into a pool. I felt so big that sometimes when I walked I heard it like an elephant stomping. I was very insecure. I just hid it very well. I became somewhat of an expert putting on my masks as I was literally torturing myself in my mind. Not being very kind to myself at all. Those were dark times. There were many nights I would cry myself to sleep.
5 months ago I changed that with Emmerich Keto. Sure I had family and acquaintances tell me that the way I was eating would hurt me in the long run or it wasn’t sustainable, or depriving my body will only lead me back to massive weight gain. I chose to ignore those voices and kept going. I’ve tried many different styles of eating. And they all left me with cravings.
However, eating the Emmerich way has kept me very satisfied and I have no cravings!!!
I make my own foods to take with me when traveling. Here I am on the right weighing 148.2 lb. I’m actually very confidant, happy and I no longer hear the elephant stomping when I walk. I have no more knee pains, back aches, or migraines. I can climb up stairs without getting overly exhausted or stopping to catch my breath.

Yes, just use chocolate or strawberry flavored Equip. Or, you could add cocoa powder like you suggested 🙂
Does this have to be made in an ice cream maker or can it just be blended really well with a blender and frozen?

We made this ice cream for our Fourth of July celebration . It was quick and easy. My keto family ate it right up.
I chose to make vanilla. The flavor was an intense equip vanilla taste. I thought it was a bit sweet. I used an allulose/ monkfruit mix. The one it takes you to in the link. I did not use the stevia. Another time I will make chocolate or peanutbutter. Iced coffee with instant coffee added might be a good combo.
We made this in a conventional ice cream maker. It hardened rather quickly. It was definitely not soft serve. It was with much effort that my hubby scraped us off pieces. I will remove it from the cylinder before putting in the freezer to set up. I’m not sure if that is the answer to my problem .
I wonder if I used a counter top like the one in the video if the texture might be better.
Any thoughts on how to resolve the texture issue?
